LEMON-GINGER ICE IN LEMON CUPS

8 medium to large lemons
1 1/2 cups sugar
2 cups water
2-inch piece fresh ginger, peeled and sliced
Crushed ice
1 lemon, zest finely grated
Fresh mint leaves, for garnish

Steps:

  • To make the lemon cups: Trim a very thin slice off of the lemon bottoms so they'll sit sturdy when standing up. Cut off the top 1/3 of the lemon and reserve to cap the cups. Carefully hollow out each lemon with a teaspoon, turning and digging into the pith so the entire inside of the fruit comes out, take care to leave the lemon shell in tact. Chop and mash the lemon pulp and strain into a blender. (You should have about 1 cup of fresh lemon juice, reserve it for the filling.) Freeze the lemon cups in egg cartons, with their lids, at least 1 hour or up to overnight. The frozen shell will prevent the lemon ice from melting too quickly when you serve it.
  • To make the ginger syrup: Combine the sugar, water, and ginger in a pot over medium heat. Gently simmer and stir for 2 minutes until the sugar is dissolved and the ginger fragrant ¿ do not allow the syrup to boil or get dark. Remove from heat, cover, and steep until cool.
  • Fill a blender with crushed ice, pour in the reserved cup of fresh lemon juice, add the ginger syrup (remove the big pieces of ginger), and process until slushy. Add the lemon zest and blend again. Freeze for 1 hour to firm it up a bit. Scoop the lemon ginger ice into the prepared lemon cups, garnish with mint leaves, top with the lemon cap, and serve. Serve in egg cups for a great presentation.

This lightly sweetened detox water not only quenches your thirst, it's also loaded with ginger's many health benefits. Adjust the honey and ginger to your tastes. I like to sip this throughout the day, especially during cold and flu season. I sometimes like to add turmeric or a couple pinches of cayenne pepper to the mix.

½ cup lemon juice
½ cup filtered water
1 (2 inch) piece fresh ginger, peeled
4 teaspoons honey
15 cups filtered water
4 quart-size mason jars (optional)

Steps:

  • Combine lemon juice, filtered water, ginger, and honey in a blender; blend for 20 to 30 seconds.
  • Strain the mixture evenly into 4 quart-sized mason jars or a 1-gallon pitcher. Top off with remaining water and stir. Place lids on jar or cover pitcher and store in the refrigerator.

GINGER LEMON DESSERT CUPS

1 box instant lemon pudding
Cold milk, amount depends on brand of pudding, check package directions
20 to 24 gingersnap cookies
3 tablespoons melted butter
1/2 pint strawberries, sliced
2 pieces crystallized ginger, finely chopped, for garnish
Store bought real whipped cream in canister
1 lemon, zested

Steps:

  • Mix pudding to package directions and let stand 5 minutes. Grind gingersnaps in food processor into crumbs. Remove bowl from processor and take out blade. Add butter to the food processor and stir to moisten the crumbs. Pour crumbs into 4 small glass bowls and press the crumbs up the sides of the bowls, lining each dish with a ginger snap "crust". Add a few slices of strawberries to each bowl. Fill each dish with lemon pudding and top with a few more sliced berries and chopped crystallized ginger. Add a whip cream rosette to each dessert and garnish with lemon zest.
