2 pounds green beans, ends trimmed
1 tablespoon extra-virgin olive oil
3 tablespoons butter
2 large garlic cloves, minced
1 teaspoon red pepper flakes
1 tablespoon lemon zest
Salt and freshly ground black pepper

Steps:

  • Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain and shock in a bowl of ice water to stop from cooking.
  • Heat a large heavy skillet over medium heat. Add the oil and the butter. Add the garlic and red pepper flakes and saute until fragrant, about 30 seconds. Add the beans and continue to saute until coated in the butter and heated through, about 5 minutes. Add lemon zest and season with salt and pepper.

Steps:

  • DIRECTIONS.
  • Preheat oven to 400°F Coat a large baking dish or cast-iron skillet with 1 tablespoon of the olive oil. Arrange the lemon slices in a single layer in the bottom of the dish or skillet.
  • In a large bowl, combine the remaining oil, lemon juice, garlic, salt, and pepper; add the green beans and toss to coat. Using a slotted spoon or tongs, remove the green beans and arrange them on top of the lemon slices. Add the potatoes to the same olive-oil mixture and toss to coat. Using a slotted spoon or tongs, arrange the potatoes along the inside edge of the dish or skillet on top of the green beans. This is one of my adopted recipes. Made these last week and all I can say is EXCELLENT. Easy to make and is just busting with flavor. I highly recommend making the bread crumbs as written. They are wonderful. My cooking time was a little different, but we like our beans a little more done than most. Thanks to the Original Author of this great recipe.

2 slices high quality white bread, torn into quarters
3 tablespoons unsalted butter
salt and pepper
2 tablespoons grated parmesan cheese, the good stuff
6 medium garlic cloves, minced, never press
2 teaspoons flour
1/8 teaspoon red pepper flakes
1 1/2 lbs green beans, ends trimmed
1 cup chicken broth
1 tablespoon lemon juice
1 teaspoon minced fresh thyme

Steps:

  • Process bread in a food processor to produce even, fine crumbs.
  • Heat 1 tablespoon butter in large non stick skillet over medium high heat, when melted, add bread crumbs and cook, stirring frequently until golden, about 3-5 minutes.
  • Transfer to a medium bowl and stir in 1/4 teaspoon salt, 1/8 teaspoon pepper and cheese. Set aside.
  • Wipe out skillet and add remaining 2 tablespoons butter, garlic and 1/4 teaspoon salt. Cook over medium heat, stirring until garlic is golden, 3 to 5 minutes.
  • Stir in flour, red pepper flakes and thyme, then toss in green beans.
  • Add chicken broth and increase heat to medium high, cover and cook until the beans are partly tender, about 4 minutes.
  • Uncover and cook stirring occasionally until beans are tender and sauce has thicken slightly, about 4 minutes.
  • Off heat, stir in lemon juice and adjust seasonings with salt and pepper to taste.
  • Transfer to serving dish and sprinkle with bread crumbs.

  • In a large covered pot (with steaming basket in place) boil 2 inches of water.
  • Place green beans into steamer and steam for about 10 minutes. -Keep the beans that beautiful, fresh green color- with a bit of a bite.

Another recipe from the South Beach Diet Parties & Recipes Cookbook. The book says that any good quality fresh green beans will do, but suggests that you look for haricots verts. the recipe looks marvelously fast and easy, especially if you use the pre-trimmed green beans from the supermarket. The book also suggests that the beans can be blanched one day in advance if you like. Another make-it-easier tip is to use minced garlic in a jar commonly found in supermarket produce sections (at least in California!).

With the Milanese sauce, these beans shine at room temperature and could be done a day in advance. They will hold at room temperature about 2 hours; after that, chill them. This recipe is from "The Splendid Table's How to Eat Supper", by Lynne Rosetto Kasper & Sally Swift. Cook to Cook: You'll need 2 large, shallow pans for the beans. Ideally they should be straight-sided sauté pans, but big slope-sided skillets work, too. Improvise lids with cookie sheets or foil. Serves 10 to 14 as part of a large meal.

good tasting extra virgin olive oil
3 lbs green beans, stem ends trimmed
salt and fresh-ground black pepper
1 cup water
5 large garlic cloves, crushed
1/3 cup water
2 shredded large lemons, zest of (organic preferred, after all, you are eating the entire rind)
1 cup Italian parsley, leaves tightly packed
salt and fresh ground black pepper
1 1/2 cups coarsely-grated parmigiano-reggiano cheese

Steps:

  • 1. Lightly film the bottom of 2 straight-sided 12-inch sauté pans with oil. Heat them over medium-high heat. Add the beans and generous sprinklings of salt and pepper, and sauté for 2 minutes, or until the beans begin to brown. Add 1/2 cup of water to each pan and immediately cover it. Turn the heat to medium-low. Cook the beans for 15 to 20 minutes, checking them often for burning and adding a little water if necessary. You want the beans very tender.
  • As the beans cook, make the gremolata. Put the garlic and 1/3 cup water in a coffee mug and microwave 1 minute, or simmer in a small saucepan to 1 to 2 minutes (this mellows the garlic just a little). Then, in a food processor, mince together the garlic (with its liquid), lemon zest, and parsley. Salt and pepper the mixture to taste.
  • When the beans are tender, uncover them, cook off any liquid in the pan, and turn them into a serving bowl. Toss the beans with the gremolata and the grated cheese.

4 cloves garlic (I used 1 heaping tsp from jarred garlic, it was all I had and we are not huge garlic fans)

1/2 teaspoon ground pepper
3/4 lb green beans (I used frozen string French kind, but you can use canned or regular ones also)
8 small red potatoes, quartered
4 chicken breasts

Steps:

  • Preheat oven to 450. Coat a large baking dish with 1 tablespoon olive oil. Arrange lemon slices from 1 lemon in a single layer on the bottom of the dish. In large bowl combine remaining olive oil, lemon juice of 2nd lemon (I cut this to half the 2nd time around as the kids didn't like it as lemony as Dan and I had,) garlic, salt and pepper. Add green beans and toss to coat. Using tongs, remove green beans and arrange them on top of lemon slices. Add potatoes to same olive oil mixture and coat. Arrange on inside edge of dish on top of the beans. Place chicken in olive oil mixture and coat. Place chicken in dish. Roast for 50 minutes. 1 pound green beans, trimmed

3 tablespoons fresh lemon juice
1/8 teaspoon salt

Steps:

  • Bring water to a boil in a large nonstick skillet; add beans. Cook 3 minutes; drain and set aside. Heat oil in skillet over medium-high heat. Add garlic and beans, and sauté 1 minute. Add juice, salt, and pepper; sauté 1 minute.

2 lb green beans, ends trimmed
1 Tbsp extra-virgin olive oil
3 Tbsp butter
3 large garlic cloves - minced
1 tsp red pepper flakes
1 Tbsp lemon zest, grated
salt & ground pepper

Steps:

  • 1. Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain and shock in a bowl of ice water to stop from cooking.
  • 2. Heat a large heavy skillet over medium heat. Add the oil and the butter. Add the garlic and red pepper flakes and saute until fragrant, about 30 seconds. Add the beans and continue to saute until coated in the butter and heated through, about 5 minutes. Add lemon zest and season with salt and pepper.

1/3 cup slivered almonds
2 pounds fresh green beans, stem ends trimmed
3 cloves garlic, peeled and thinly sliced lengthwise (a medium clove should yield 4 slices)
6 tablespoons extra virgin olive oil
1-1/2 tablespoons lemon zest
1-1/2 teaspoons kosher salt
1/2 teaspoon ground black pepper
1/4 teaspoon sugar
1-1/2 tablespoons freshly squeezed lemon juice
6 tablespoons coarsely grated Parmigiano-Reggiano

Steps:

  • Set an oven rack in the middle position and preheat the oven to 450°F. Line a rimmed baking sheet with heavy-duty aluminum foil. In a small dry skillet over medium heat, toast the almonds until golden. Watch carefully and stir frequently as they can burn quickly! Immediately transfer to small bowl (don't leave them in hot pan as they will continue to cook). Set aside. Put the green beans in a large bowl. Add the sliced garlic, olive oil, 1 tablespoon of the lemon zest, kosher salt, pepper and sugar and toss well. Transfer the mixture to prepared baking sheet (don't leave any flavor behind: use a rubber spatula to scrape all of the oil and seasoning out of the bowl and onto the beans). Roast the beans and garlic for 15 minutes. Stir with a spatula to promote even cooking, then continue roasting until the beans are tender throughout, about 10 minutes more. The beans should be fully cooked, with some lightly browned but not shriveled. Add lemon juice, Parmigiano-Reggiano, remaining lemon zest and pine nuts to beans and toss well. Taste and adjust seasoning with salt, pepper and lemon juice if necessary. Transfer to a serving platter and serve hot or room temperature.

INGREDIENTS
6 tablespoons olive oil
2 lemons, 1 thinly sliced, 1 juiced
4 cloves garlic, minced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3/4 pound trimmed green beans
8 small red potatoes, quartered
4 chicken breasts (bones left in, with skin, about 3 1/4 pounds)

Steps:

  • Preheat oven to 400°F. Coat a large baking dish or cast-iron skillet with 1 tablespoon of the olive oil. Arrange the lemon slices in a single layer in the bottom of the dish or skillet.
  • In a large bowl, combine the remaining oil, lemon juice, garlic, salt, and pepper; add the green beans and toss to coat. Using a slotted spoon or tongs, remove the green beans and arrange them on top of the lemon slices. Add the potatoes to the same olive-oil mixture and toss to coat. Using a slotted spoon or tongs, arrange the potatoes along the inside edge of the dish or skillet on top of the green beans. Place the chicken in the same bowl with the olive-oil mixture and coat thoroughly. Place the chicken, skin-side up, in the dish or skillet. Pour any of the remaining olive-oil mixture over the chicken.
