1 lb carrot, jullienned
2 tablespoons butter
1 tablespoon lemon juice
1 garlic clove, minced
salt
1 dash pepper
1/2 teaspoon dried basil

Steps:

  • Cook carrots in a small amount of water for 20 minutes.
  • In a different saucepan, melt butter.
  • Stir in lemon juice, garlic, salt, pepper, and basil.
  • Add carrots and toss.

2 carrots, sliced 1/4-inch thick
1 tablespoon butter
1 tablespoon brown sugar
1 teaspoon lemon juice
1 pinch salt and ground black pepper to taste

Steps:

  • Place carrots into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until carrots are tender, about 8 minutes. Drain.
  • Heat butter in a skillet over medium heat; cook and stir carrots, brown sugar, and lemon juice in the melted butter, stirring often, until sugar has dissolved, 2 minutes.

Quick Carrots With Garlic & Basil image

A quick different way with carrots. You can use other herbs if you like in place of the basil. I have used both fresh garlic and crushed from a jar with little difference.

500 g carrots (sliced diagonally)
2 teaspoons olive oil
2 large garlic cloves (sliced thinly or 1 teasp crushed garlic from a jar)
2 tablespoons fresh basil (thinly sliced or chopped)

Steps:

  • Cook carrots in boiling water for for 2 -3 mins until tender but crisp or microwave if desired.
  • Drain and reserve 1/2 cup of liquid.
  • Combine the garlic and oil in a nonstick pan and cook over a moderate heat until fragrant (you can smell the garlic).
  • Add the carrots and stirring, cook until well combined and hot, adding a little of the reserved cooking liquid if necessary.
  • Remove from the heat and stir in the basil.
  • Serve hot.
