A buttery cookie with a luscious lemon filling is simply hard to resist. Every time I serve these elegant cookies, I'm asked for the recipe.

Number Of Ingredients 13

1 cup butter, softened
1/3 cup confectioners' sugar
1 teaspoon vanilla extract
1-2/3 cups all-purpose flour
FILLING:
2/3 cup sugar
1-1/2 teaspoons cornstarch
1 teaspoon grated lemon zest
1/4 teaspoon salt
1 large egg, beaten
3 tablespoons lemon juice
1 tablespoon butter, melted
Confectioners' sugar, optional

Steps:

  • In a small bowl, cream butter and confectioners' sugar until light and fluffy. Beat in vanilla. Gradually add flour and mix well. Cover and refrigerate for 30 minutes or until easy to handle. , Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Using the end of a wooden spoon handle, make an indentation in the center of each. , Bake at 350° for 12-14 minutes or until lightly browned. Remove to wire racks to cool., For filling, in a large saucepan, combine the sugar, cornstarch and salt. Stir in lemon juice until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat to low; cook and stir for 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into egg; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; gently stir in butter and lemon zest. Cool., Spoon 1/2 teaspoonful into each cookie. Dust with confectioners' sugar if desired.

Crust:
1/2 cup butter or margerine
1/4 cup confectioner's sugar
1 cup flour
pinch of salt
Top layer:
2 slightly beaten eggs
1 cup sugar
2 tablespoons flour
2 tablespoons (fresh) lemon juice

Steps:

  • For the crust: Cream butter and sugar together. Add salt and flour gradually. Mix well. Press into an 8 x 8 pan and bake at 350 degrees for 15-20 minutes (Crust will not be brown). Top layer: Combine all ingredients and pour over hot crust as soon as you remove it from the oven. Reurn to oven and bake another 20-25 minutes until the top layer is set. Run a knife around the edges of the pan when you take it out of the oven as they are sometimes hard to cut. When cool, sprinkle with more confectioner's sugar and cut into squares. You can double this recipe and put it in a 9 by 13 pan .

1/3 cup powdered sugar
1 teaspoon vanilla
1 2/3 cups flour
1/3 cup sugar
1 1/2 teaspoons cornstarch
1 teaspoon grated lemon zest
1/4 teaspoon salt
1 egg, beaten
3 tablespoons lemon juice
1 tablespoon butter, melted

Steps:

  • in bowl, cream butter and powdered sugar.then add vanilla.mix well.
  • gradually add flour, mix well to combine --
  • cover and refrigerate 30 minutes --
  • roll into 1" balls.
  • Place 2" apart on ungreased cookie sheet.using the end of a wooden spoon handle.make an indentation in center of each cookie --
  • bake at 350* for 12-14 minutes or lightly browned --
  • remove to rack to cool completely.
  • to prepare FILLING:.
  • combine sugar, cornstarch, lemon zest and salt in saucepan --
  • stir in beaten egg, lemon juice and butter till smooth.
  • cook over medium heat till thickened.
  • reduce heat, cook and stir 2 minutes.
  • cool.
  • spoon 1/2 tsp of filling into each cookie.
  • dust with powdered sugar.
