Easy and elegant last minute dinner. If you do not like tilapia, use whichever fish is your favorite.

Number Of Ingredients 5

4 tilapia fillets
4 tablespoons butter
1 lemon
1/4 cup chopped fresh dill
salt and pepper

Steps:

  • Heat oven to 325°F.
  • Juice 1/2 of the lemon, and cut the other half into thin slices.
  • Place fillets in a glass baking dish. Season with salt and pepper.
  • Top each fillet with 1 tablespoon butter.
  • Sprinkle lemon juice and dill on top of each fillet.
  • Spread lemon slices over top.
  • Bake for 10-15 minutes.

4 fresh Talipia fillets
salt, pepper
Lemon juice
2 halved/sliced carrots
2 T butter
Dill Parsley
Parchment paper

Steps:

  • Preheat oven to 375 degrees. Peel and slice carrots; parboil and drain. Add butter, dill and parsley to carrots. Salt and pepper both sides of tilapia. Place each fillet in separate piece of parchment paper. Squeeze lemon juice on each fillet and spoon carrot mixture on top. Wrap fillets in parchment paper and bake on cookie sheet for 20-25 minutes.

6 Frozen Tilapia fillets
12 slices of Fresh Lemon
Melted Butter 2 T
Lemon Pepper 2 tsp
Dried Dill 2 tsp
Season Salt 1 tsp

Steps:

  • Place single tilapia fillet on a piece of aluminum foil. Brush with melted butter. Mix together, dill, lemon pepper, and season salt and sprinkle on the fillet. Place 2 slices of lemon on top and Wrap foil to create a packet. Place 3 fillets in a Freezer Ziplock Bag. Freeze. To Prepare: Keep Frozen(Do Not Thaw) Preheat oven to 375. Place sealed packets on baking sheet. Bake 30-40 min or until the fish just flakes with a fork. Allow fish to rest in packets 5 minutes. Use caution when opening packets are hot and release steam when opened.

I am one of those crazy people who loves fish. Baked, fried, broiled, grilled... I just love it. This dish is very light, extremely simple, and very tasty. Best of all, it's fool proof. I used Tilapia for this dish, but any kind of mild fish would work well with these flavors.

Number Of Ingredients 9

4 - 6 4 oz portions of tilapia (or other mild fish)
1 Tbsp butter, melted
1 medium onion sliced thinly into rings
2 clove minced garlic
2 lemons, zested, and juiced
2 Tbsp dried dill weed
1 tsp each dried basil and tarragon
1 Tbsp olive oil
salt and pepper to taste

Steps:

  • 1. Preheat oven to 350 degrees. Wash fish fillets and pat dry between two paper towels. Lightly season with salt and pepper and set aside.
  • 2. In a sauce pan, melt butter and saute lemon zest,juice, garlic, onion, and herbs... then add olive oil. Saute a couple minutes till heated through. (about 5 minutes or so)
  • 3. In a medium glass baking dish place fish fillets and pour the lemon butter herb sauce over them. Sprinkle a little more salt and pepper over the fillets to taste then cover with two layers of foil. Put in the oven and slow roast for 2 hours.
  • 4. can serve with rice, or roasted redskinned potatoes (lemon butter with dill goes well with both) and a nice green side salad. Enjoy!
  • 5. 2 hours may seem like a long time to cook the fish, but the double layer of foil keeps all the moisture and flavor in the fish so it's light and flakey when you take it out of the oven.
