This dessert is light and the crust is what I believe makes the recipe irresistable. The lemon crossed with the cream cheese is to die for!!!

1 cup flour
1/2 cup softened butter
1 tablespoon sugar
1 (21 ounce) can lemon pie filling
8 ounces cream cheese
1 cup powdered sugar
1 cup milk
1 teaspoon vanilla
2 (1 1/2 ounce) envelopes Dream Whip

Steps:

  • Preheat oven to 350.
  • In medium mixing bowl combine flour, butter and sugar with fork until crumbly. Press into ungreased 9 x 13 baking dish. Bake for 20 minutes or until slightly golden brown. While crust is baking beat cream cheese and powdered sugar until smooth. When crust is done baking throw it in the fridge for about 30 minutes to cool it off quickly. When it is cool to the touch spread cream cheese mixture over crust, next the pie filling and top Dream Whip prepared according to package.

This pie is great. It is cool and creamy. Everyone loves it.

1 pkg cream cheese, softened
1/2 c mayonnaise
1/2 c sugar
3 eggs
2 tsp grated lemon rind
1 Tbsp lemon juice
1 tsp vanilla extract
1 graham cracker pie crust

Steps:

  • 1. In a large bowl with mixer at medium speed beat cream cheese and real mayonnaise until smooth; gradually beat in sugar. (2) Beat in eggs, one at a time; beat in rind, juice and vanilla. (3) Pour into pie crust, place on cookie sheet. Bake at 350 for 30 to 35 minutes or until set. Chill 4 hours.

1 graham cracker pie crust
4 large egg yolks
1/2 c sugar
4 Tbsp lemon juice
1 Tbsp lemon zest, grated
1/4 tsp salt
1 c heavy cream
8 oz cool whip

Steps:

  • 1. Place egg yolks, sugar, lemon juice, zest and salt in the top of a double boiler or in a metal bowl and place over boiling water. Beat with whisk constantly until thickened.
  • 2. Let cool. Beat the heavy cream until stiff peaks form. Fold into cooled lemon mixture. Pour into pie shell. Top with whipped cream. Refrigerate until set. Store in fridge.
