I replaced standard cucumbers with lemon cucumbers from our garden! Adapted from ichef.com with a nod and hat doff to another site (grouprecipes.com) for the hummus idea. If you dislike mint, try another fresh herb: basil is always an excellent choice, lovage, salad burnet or good ol' parsley. For a more substantial meal, add greens-arugula, baby spinach, loose leaf lettuce; perhaps some finely minced shallots, heirloom toms, ad infinitum...

1 egg yolk
1/4 teaspoon Dijon mustard
2 tablespoons fresh lemon juice
1/3 cup fresh mint leaves, loosely packed
1/2 cup sunflower oil
salt, to taste
cracked black pepper or white pepper, to taste
8 thin slices homemade wheat bread, your choice to remove crusts (ok to substitute white or multi grain bread-we used a 9-grain bread with sunflower seeds)
3 lemon cucumbers, peeled and thinly sliced (approximately)
greens, washed and dried (optional)

Steps:

  • Note: If you have concerns about the raw egg yolk, use a good quality store bought mayonnaise or substitute cream cheese (softened). For a vegan version, replace the mayonnaise with hummus or a mayo' substitute: Recipe #754 for example.
  • Minty Mayonnaise: in a blender or food processor, combine the egg yolks, mustard, lemon juice, and mint.
  • With motor running, add the oil in a slow steady stream and blend until emulsified. Season to taste with salt and pepper and transfer to a bowl.
  • Tea Sandwiches: Spread each slice of bread generously on one side with the mayonnaise.
  • On half the slices, arrange an even layer of lemon cucumber slices. Top with remaining bread slices.
  • Cut each sandwich into quarters before serving.

1/2 seedless cucumber, peeled and very thinly sliced (about 32 slices)
1/4 cup loosely packed fresh mint leaves, rinsed, spun dry, finely chopped
1/4 cup unsalted butter, room temperature
1/4 cup cream cheese, room temperature
16 slices best-quality white bread (or whole wheat)
salt

Steps:

  • Place cucumber slices between layers of paper towels to remove excess moisture.
  • In a small bowl, combine the mint, butter, and cream cheese; spread on one side of each slice of bread. Lay the cucumber slices onto the buttered side of 8 slices of bread. Sprinkle with salt. Top with the remaining slices of bread, buttered side down.
  • Gently cut the crusts from each sandwich with a sharp knife. Cut the sandwiches in half diagonally and then cut in half again.
  • Makes 8 whole sandwiches, or 16 halves, or 32 fourths.

One of my favorite tea sandwiches is Ms. Jenny Benedictine's cucumber spread. This is a little twist on that spread. It's got a bit more herbs in it that her original recipe. Great for an afternoon snack or a fancy tea-time tray. Passive time is chill time.

1 (4 ounce) container cream cheese with vegetables, softened
1 1/2 teaspoons dill weed
1 -2 dash hot sauce (optional)
1 large cucumber

Steps:

  • Peel the cucumber and cut in half lengthwise. Use a spoon and scrape out the seeds. In a food processor, place the cucumber. Pulse until chopped VERY fine, but not pureed.
  • Add to the remaining ingredients and mix well. Cover and refrigerate at least 2 hours before using to allow flavors to marry.
  • Serve on crustless bread or fancy crackers.

1/4 cup loosely packed fresh mint leaves, rinsed, spun dry, and chopped fine
2 tablespoons unsalted butter, softened
2 tablespoons cream cheese
6 slices of whole-wheat bread
a 3-inch length of seedless cucumber, cut into thin slices

Steps:

  • In a small bowl combine the mint, the butter, and the cream cheese and stir the mixture until it is combined well. Spread the bread slices with the butter mixture, top 3 of them with the cucumber, distributing the cucumber evenly and seasoning it with salt, and top the cucumber with the remaining bread slices. Cut off and discard the crusts and cut each sandwich diagonally into quarters.

4 ounces butter, softened (1 stick)
4 ounces cream cheese, softened
6 tablespoons sugar
1/2 teaspoon vanilla extract
1 egg yolk
1/8 teaspoon salt
1 cup flour
2 tablespoons flour
1 (11 ounce) jar prepared lemon curd
confectioners' sugar

Steps:

  • Cream the butter, cream cheese and sugar.
  • Add the vanilla, egg yolk, and salt. Mix until blended.
  • Mix in flour at low speed until incorporated.
  • Halve the dough and pat into two squares. Wrap in plastic wrap; refrigerate for 30 minutes.
  • Preheat oven to 350°F Line 2 cookie sheets with parchment. Remove the parchment from on cookie sheet and dust with flour. Roll one dough square into 17"x11" rectangle about 1/8" thick. Transfer the parchment and pan to the refrigerator while you repeat with dough.
  • Using a fluted pastry wheel, trim all sides of the chilled dough to even it out. Cut the dough into 15 squares. Separate the squares on the pan. Repeat with other pan.
  • Bake until lightly brown on the edges, 11 to 12 minutes. Transfer to racks to cool.
  • Sandwich the cookies with the lemon curd; dust with confectioner's sugar.

1/2 small white onions or 1/2 small yellow onion, thinly sliced
1/4 cup vinegar
2 tablespoons sugar
1 tablespoon bottled lemon juice (realemon)
1 teaspoon celery seed
3/4 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Place cucumbers and onion in a bowl.
  • Combine rest of the ingredients in a measuring cup.
  • Stir well.
  • Pour over cucumbers and onions.
  • Chill for 4 hours.
