1 (.25 ounce) package unflavored gelatin
¼ cup cold water
4 egg yolks
4 egg whites
1 cup white sugar
½ cup fresh lemon juice
1 teaspoon lemon zest
½ teaspoon salt
1 (9 inch) prepared graham cracker crust

Steps:

  • Soften gelatin in water 5 minutes.
  • Beat yolks and add 1/2 cup of the sugar, lemon juice and salt. Cook in the top of a double boiler, stirring constantly, until of custard consistency. Add grated lemon zest and softened gelatin and stir thoroughly. Cool.
  • When mixture begins to get thick, In a clean bowl, whip egg whites until stiff, adding remaining 1/2 cup sugar while whipping. Fold egg whites into custard.
  • Pour filling into pie shell and chill in refrigerator. Serve when firm. Garnish with sweetened whipped cream if desired.

2 1/4 cups sifted all-purpose flour
1 teaspoon sugar
1 teaspoon salt
12 tablespoons cold unsalted butter (6 ounces), cut into pieces
1/4 cup ice water (strain out the ice just before using)
1 teaspoon red wine vinegar
4 eggs, separated
2/3 cup sugar
1/4 cup fresh lemon juice
1 1/2 teaspoon finely grated lemon zest
1 1/2 teaspoons powdered gelatin
1/3 cup water
Sweetened whipped cream, for garnish

Steps:

  • Make the Crust: In a food processor combine the flour, sugar, and salt. Add the butter and pulse until pea-sized pieces appear.
  • In a small bowl, stir the water and vinegar together.
  • Add the vinegar mixture and pulse briefly¿it will still look crumbly. Transfer the crumbs to a work surface and shape into a round, flat disk. Wrap in plastic wrap and refrigerate at least 30 minutes before using. (Or, refrigerate up to 48 hours or freeze up to 1 month before using. If frozen, let thaw in the refrigerator overnight before rolling out.)
  • When the time comes to roll out the dough, let the dough warm up for a few minutes at room temperature to make it more workable. Dust a work surface with just a few tablespoons of flour and keep some extra flour at hand. Sprinkle a little flour on top of the dough and start rolling outward from the center with quick, light strokes. Don't worry if the edges split a bit; concentrate on forming a good circle from the center. Lift up and rotate the dough 1/4 turn every minute or so to help ensure even rolling. The dough should feel smooth and soft; some say it should feel like the inside of your forearm. If it gets sticky, sprinkle on a bit more flour, but don't do this more than 2 or 3 times; the dough will absorb too much flour. Instead, put it back in the refrigerator for 15 minutes to firm up the butter. Keep rolling until the circle is at least 2 inches larger than your pan (for example, 11 inches wide for a 9-inch pie pan), or 3 inches larger for deep-dish pies.
  • Set your pie pan nearby. We always use heavy aluminum pans, because glass pans seem to bake the crust too fast. However, we know that the advantage of glass is that you can easily check the color of the crust. To transfer the crust to the pan, I find it easiest to roll a finished crust up onto the rolling pin, then gently unroll it in the pan. Or, you can fold it gently in quarters, lift it up, position the center point on the center of the pan, and unfold it into the pan. Make sure that the dough is allowed to settle completely into the pan.
  • Don't stretch and press the dough into the corners; stretched dough will likely shrink back when you bake it. Instead, lift the edges of the crust to let it settle down into the corners. If the dough tears a bit, don't be concerned; we'll patch it in a minute. Using scissors or a sharp knife, trim the dough to within 3/4-inch of the rim. Use any extra scraps to patch the crust, pressing with your fingers (wet them if necessary) or set aside. To decorate the rim, fold under the excess dough then just press it all around with the back of a fork. For a slightly more advanced look, press the thumb and forefinger of 1 hand together. Use them to gently push the thick dough rim outward, while pushing inward with the forefinger of the other hand, so that they intersect in a "V" with the dough in between. Repeat all around the rim to make a wavy edge. Chill 1 hour.
  • Preheat the oven to 425 degrees F. Line the shell with a sheet of foil and fill with raw rice or dried beans. Bake for 20 to 25 minutes. Remove the foil and rice and continue baking until golden brown. Let the pie shell cool on a rack while you make the filling.
  • Make the Filling: In a mixing bowl with a whip attachment, whisk together the yolks and 1/3 cup sugar until fluffy, then add the lemon juice and zest. Place the bowl over a saucepan of simmering water, and cook, whisking, until thickened, about 7 to 8 minutes.
  • Meanwhile, sprinkle the gelatin over cold water and let dissolve.
  • Remove the yolk mixture from the heat and whisk in the gelatin until dissolved. Place the mixture over an ice bath and stir with a rubber spatula to cool it. Once it's room temperature remove it from the ice bath and let it sit while you whip the meringue.
  • Place the egg whites in a clean dry bowl and whip on medium speed until foamy; then turn up to high and continue whipping until soft peaks form. Gradually add the remaining 1/3 cup sugar and whip until glossy and sugar has dissolved. Fold 1/3 of the whites into the lemon mixture; then fold in the remaining whites in 3 batches. Pour the mixture into the cooled pie shell and smooth the top.
  • Chill the pie at least 2 hours before serving. Serve with dollops of whipped cream.

1/4 cup water
1 cup sugar, divided

  • In a small saucepan, sprinkle gelatin over water; let stand 2 minutes to soften. Add 1/2 cup sugar and salt. Cook and stir over low heat until sugar is dissolved., In a medium bowl, beat egg yolks on high speed about 5 minutes or until pale yellow. Gradually drizzle hot gelatin mixture into yolks, beating constantly. Return yolk mixture to same saucepan. Stir in lemon juice. Cook over low heat until mixture thickens and bubbles around the edges, stirring constantly. Cool to room temperature. In a large bowl, combine cream, food coloring if desired and remaining sugar. Beat a high speed until soft peaks form. Add cooled lemon mixture. Continue beating at high speed until stiff peaks form., Microwave chocolate and shortening in a small resealable plastic bag on high for 30 seconds. Knead bag to mix. If necessary, microwave at additional 10-15-second intervals until melted. Spoon half of lemon filling into pastry shell. Cut a small hole from corner of bag and drizzle half of chocolate over filling. Top with remaining filling. Drizzle remaining chocolate over pie. Chill pie at least 2 hours before serving. Garnish with raspberries, mint and lemon.

1 cup frozen whipped topping, slightly thawed
Sugared Lemon Slices, optional, recipe follows
1 lemon

Steps:

  • In a stand mixer or with a hand mixer, beat 1/2 cup of the milk and dry whipped topping mix in a large bowl for 4 minutes, or until light and fluffy. Set aside. In another large bowl, beat 1 jar of lemon curd, lemon pudding mix, and remaining 1/2 cup of milk for 2 minutes, or until smooth and beginning to thicken. Fold whipped topping mixture into lemon pudding mixture. Spoon into pie crust. Spread slightly thawed whipped topping over lemon mixture. Swirl remaining lemon curd through whipped topping. 1 teaspoon minced crystallized ginger
5 tablespoons unsalted butter, melted
Filling
2 cups ice cubes
1/4 cup water
1 envelope unflavored gelatin
3/4 cup plus 2 tablespoons sugar
3/4 cup strained fresh lemon juice
4 large egg yolks
2 teaspoons finely grated lemon peel
1/8 teaspoon fine sea salt
1 1/4 cups chilled whipping cream
1/4 cup powdered sugar
Lemon peel strips from 1 lemon, removed with citrus zester

Steps:

  • For crust:
  • Position rack in center of oven and preheat to 350°F. Mix gingersnap cookie crumbs, sugar, and ginger in medium bowl. Add melted butter and stir until mixture is evenly moistened. Transfer crumb mixture to 9-inch-diameter glass pie dish; press crumbs firmly and evenly onto bottom and up sides to top of dish. Bake until crust is firm and slightly darker in color, about 8 minutes. Cool crust completely.
  • For filling:
  • Pour enough cold water into medium bowl to come halfway up sides; add 2 cups ice cubes and set aside.
  • Pour 1/4 cup water into small bowl; sprinkle gelatin over. Let stand until gelatin softens, about 15 minutes.
  • Whisk 3/4 cup sugar, lemon juice, egg yolks, grated lemon peel, and salt in heavy medium saucepan to blend. Whisk constantly over medium heat until mixture thickens very slightly (mixture will coat spoon but will not be thick like curd) and thermometer inserted into mixture registers 160°F, about 6 minutes (do not boil). Add gelatin mixture; whisk until gelatin dissolves and mixture is smooth, about 1 minute. Place saucepan in bowl with ice water until lemon filling is cool to touch, whisking occasionally, about 8 minutes. Transfer lemon filling to large bowl.
  • Using electric mixer, beat whipping cream with powdered sugar in another medium bowl until peaks form. Fold 1/4 of whipped cream into lemon filling until incorporated. Fold in remaining whipped cream in 3 additions. Transfer filling to cool crust, mounding slightly in center. Refrigerate pie until filling is set, about 4 hours.
  • Do ahead: Can be made 1 day ahead. Keep refrigerated. Let stand at room temperature 20 minutes before serving.
  • Toss lemon peel strips with remaining 2 tablespoons sugar in small bowl; let stand 10 minutes. Twist peel to form curls (see tip below). Garnish center of pie with lemon peel curls.

1-1/2 teaspoons unflavored gelatin
2 tablespoons water
1/2 cup sugar, divided

  • Cut pie crust sheet in half. Repackage and refrigerate one half for another use. On a lightly floured surface, roll out remaining half into an 8-in. circle. Don't try if you don't like lemon. WOOO HOOOO this is lemony and delicious. The graham cracker taste of the crust just compliments all the lemon flavor. I find that refrigerating overnight gives all the ingredients time to really have that taste a "chiffon" pie such as this should have. I got this recipe out of my Jello Brand Recipe Book years ago. Been making it ever since then. Hope you enjoy. :)

2 teaspoons grated lemon rind
2 tablespoons lemon juice

  • Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved.
  • Stir in lemon peel and juice.

Nonstick vegetable oil spray
2 cups shortbread cookie crumbs
3 1/2 tablespoons unsalted butter, melted
Filling
1/4 cup water
1 1/2 teaspoons unflavored gelatin
4 large eggs, separated
2/3 cup sugar
1/3 cup fresh lemon juice
1 teaspoon grated lemon peel
1/2 cup chilled whipping cream
Topping
1/2 cup sugar
1/3 cup water
2 cups fresh or frozen whole cranberries (about 8 ounces)
1/2 cup currant jelly

Steps:

  • For crust:
  • Preheat oven to 350°F. Spray 9-inch deep-dish glass pie dish with nonstick spray. Mix cookie crumbs and melted butter in small bowl. Press crumb mixture over bottom and up sides of prepared dish. Bake until golden brown, about 20 minutes. Cool on rack.
  • For filling:
  • Place 1/4 cup water in small bowl; sprinkle gelatin over. Let stand until gelatin softens, about 10 minutes.   • For topping:
  • Stir sugar and 1/3 cup water in medium saucepan over medium-low heat until sugar dissolves. Increase heat to medium-high; bring to boil. Add cranberries; cook until half have popped, about 5 minutes. Add jelly; stir until melted. Cool to room temperature. Gently spoon topping over pie. Chill at least 30 minutes to set. (Can be made 4 hours ahead; keep refrigerated.)

1 store-bought graham cracker crust
1/4 cup cold water
1 (1/4 ounce) envelope unflavored gelatin
1/2 cup lemonade
1/2 cup fresh lemon juice
1 cup sugar, divided
4 large eggs, separated (whites brought to room temperature)
1 teaspoon grated lemon zest
salt (a big pinch)
1/4 teaspoon cream of tartar
1/2 teaspoon vanilla extract
fresh whipped cream
raspberries or hulled strawberry

Steps:

  • Bake piecrust according to package directions and let cool; refrigerate until ready to use.
  • Meanwhile, add water to a small bowl; sprinkle the gelatin over the water and set aside.
  • In a medium saucepan (preferably nonstick), whisk the lemonade, lemon juice, 1/2 cup of sugar, egg yolks, lemon zest, and salt together.
  • Place over medium heat and cook, stirring constantly, for about 7-9 minutes or until the mixture thickens enough to coat the back of a spoon (do not let mixture boil or it will curdle).
  • Remove from heat; stir in the softened gelatin and immediately pour into a large bowl.
  • Let cool for 10 minutes; then refrigerate for 50-60 minutes or just until the mixture turns lumpy (this indicates the gelatin is starting to thicken it).
  • In a large bowl, beat the 4 egg whites until soft peaks form.
  • Beat in the cream of tartar.
  • Gradually add in the remaining 1/2 cup sugar, beating at high speed until the whites are thick and glossy.
  • Beat in the vanilla.
  • The whites should be firm but not dry.
  • Gently fold about one-third of the whites into the lemon mixture.
  • Add the remaining whites and continue to fold until evenly blended.
  • Transfer the filling into the cooled pie shell and smooth the top with a rubber spatula.
  • Cover with loosely tented foil and refrigerate for at least 3 hours or overnight.
  • Serve with a dollop of whipped cream and berries on top.

1 (.25 ounce) envelope of unflavored gelatin
1/2 cup of water
3 Tablespoons fresh lemon juice
3/4 cup Splenda No Calorie Sweetener, Granulated
3/4 teaspoon grated lemon rind
1/4 teaspoon lemon extract
1 (9 inch) graham cracker crust

Steps:

  • Pour evaporated milk in a mixing bowl; place in freezer until ice crystals form (about 30 minutes). Sprinkle gelatin over water and lemon juice in a small saucepan; let stand 1 minute. Stir in Splenda Granulated Sweetener and cook over medium heat, stirring constantly, 2 minutes or until gelatin dissolves. Stir in lemon rind and lemon extract. Beat evaporated milk at high speed with an electric mixer until soft peaks form (about 5 minutes). Gradually add gelatin mixture, beating at high speed until mixture is combined. Do not over beat. Pour mixture into crust; cover and chill 1 hour or until set.

2 tubs (8 oz. each) Cool Whip (unflavored), divided
3 container s (4 oz. each) lemon chiffon flavored yogurt
1 9- in ch graham cracker crust
1 lemon, sliced thin

Steps:

  • Blend 1 tub of Cool Whip with 3 containers of yogurt. Pour into pie shell. Use back of spoon to smooth yogurt around the edges of pie shell. Try to mound the center slightly.
  • Use a tablespoon that is clean to spoon about 1/3 of the second tub of Cool Whip on the top of the yogurt mixture. Use the back of the tablespoon to smooth the Cool Whip on top of the pie the same way you put icing on a cake. The additional Cool Whip stops dehydration of the yogurt mixture while being refrigerated.
  • Garnish with thin lemon slices if desired in the middle of the top of the pie. Store in refrigerator for about 1/2 hour and serve immediately. Does not keep as a leftover, the pie crust absorbs the moisture from the yogurt and fruit. Discard if bottom becomes too moist.

FILLING:
1 tsp unflavored gelatin
4 tbs water
5 large eggs (2 whole, 3 separated)
1 1/4 (8 1/4 oz) sugar
1 tbs cornstarch
1/8 tsp salt
1 tbs grated lemon zest
1/4 cup fresh lemon juice (4 lemons)
1/4 cup heavy cream
4 oz cream cheese (cut 1/2 in pieces and softened)

Steps:

  • Oven rack to lower middle. Oven 325 degrees. Crust: 1. Graham crackers in food processor to fine (30 sec). Pulse to combine sugar and salt and butter (resemble wet sand). 2. Press evenly onto bottom and side of 9" pie plate. Bake to until lightly brown (15-18 min). Filling: A. In two small bowls, sprinkle 1/2 tsp gelatin over 2 tbs water Let soften separately (5 min). B. Thoroughly whisk 2 eggs and 3 yolks in medium saucepan. Whisk in 1 cup sugar, cornstarch and salt. Whisk in cream and lemon zest and juice. C. Cook over medium heat, stirring constantly for 4-5 min (should register 170 degrees). D. Stir in 1 gelatin mixture until dissolved. Remove from heat and let stand 2 min. E. Remove 1 1/4 cup of curd from saucepan and pour through fine mesh strainer in bowl. F. Pour in pie shell and place in freezer. G. Whisk remaining gelatin and cream cheese into remaining curd in saucepan. (Heat if necessary to combine.) H. Beat 3 egg whites on medium low until foamy (2 min). Increase speed to medium-high and slowly add remaining 1/4 cup sugar until stiff and glossy (4 min). I. Add remaining curd - cream cheese and whip on medium speed until few streaks remain (30 sec). J. Scrape sides of bowl and mix until no streaks remain. K. Pour over curd in pie shell -- allowing to mound in center. L. Refrigerate for at least 4 hours (up to 2 days) before serving.

1 1/2 cups unsweetened pineapple juice
1/4 cup honey
1/4 cup lemon juice
1 tablespoon lemon rind

Steps:

  • Mix cornstarch with 1/4 cup of the pineapple juice.
  • Bring remaining pineapple juice and honey to a boil.

1/4 cup heavy cream
4 ounces cream cheese, cut into 1/2 inch pieces

  • Serves 8 to 10 Before cooking the curd mixture, be sure to whisk thoroughly so that no clumps of cornstarch or streaks of egg white remain. 1/4 cup lemon juice
1 1/2 teaspoons grated lemon zest
1/2 cup heavy cream, whipped
1 Baked Pie Crust

Steps:

  • In a small bowl, drizzle the gelatin over the cold water to soak.
  • Meanwhile, in a medium metal bowl, whisk together the egg yolks with 1/2 cup sugar, the salt, lemon juice and lemon zest. Place the bowl over a larger pot of simmering water and cook, stirring constantly, until the mixture is thickened to a custard-like consistency, about 8 minutes. Add the soaked gelatin and stir until dissolved. Remove from heat and place the mixture over an ice bath, stirring just until cooled to room temperature. Remove from the ice bath and set aside.
  • In the bowl of a stand mixer, or in a large bowl using an electric mixer, beat the egg whites until foamy. With the mixer running, drizzle the remaining 1/2 cup of sugar over the whites and continue beating until the whites form stiff peaks.
