I had a craving for fresh fish and dill, so I played around and came up with this. Its been rated one of my greatest hits! Great with rice or potatoes and steamed green beans.

¼ cup butter, melted
¼ cup white wine
1 lemon, juiced
5 cloves garlic, chopped
1 bunch fresh dill, stems trimmed
1 (1 pound) salmon fillet
½ cup toasted almonds

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Mix butter, white wine, lemon juice, and garlic together in a small bowl.
  • Pour a small amount of the butter mixture into an 8x8-inch baking pan until bottom is evenly coated; cover with a thin layer of dill. Place salmon, skin side down, into the baking pan. Sprinkle with remaining dill; pour remaining butter mixture over salmon. Cover tightly with aluminum foil.
  • Bake in preheated oven until fish flakes easily with a fork, 25 to 35 minutes. Sprinkle generously with almonds before serving.

2 salmon fillets (4 ounces each)
5 teaspoons reduced-fat butter, melted
3/4 teaspoon lemon juice
1/2 teaspoon grated lemon zest
1/2 teaspoon snipped fresh zest

Steps:

  • Place salmon, skin side down, on a broiler pan. Combine the butter, lemon juice, lemon zest and dill. Brush one-third of mixture over salmon. Broil 3-4 in. from the heat for 7-9 minutes or until fish flakes easily with a fork, basting occasionally with remaining butter mixture.

Another marinade that I like to prepare with salmon. This does not include the cooking time of the salmon. This can be used as a marinade for any other type of seafood.

3 tablespoons butter
1 -3 teaspoon lemon juice
2 1/4 teaspoons dill weed
lemon pepper seasoning, to taste
1 lb salmon fillets or 1 lb steak

Steps:

  • In a saucepan, heat butter, lemon juice and dill weed.
  • Coat 1/2 salmon with mixture.
  • Sprinkle with lemon pepper and grill, skin side down.
  • Brush with remaining mixture while grilling.

6 wild salmon filets (about 4 oz each)
3/4 teaspoon(s) coriander
1 1/2 teaspoon(s) coarse salt
1 tablespoon(s) ghee (or unsalted butter)
LEMON DILL SAUCE
1/2 cup(s) chicken bone broth
1/3 cup(s) heavy whipping cream
2 tablespoon(s) sour cream, full fat
1/2 teaspoon(s) pepper
3-4 sprig(s) fresh dill (about 2 t chopped)
2 tablespoon(s) butter, unsalted
1 teaspoon(s) fresh garlic paste
3 tablespoon(s) fresh lemon juice

Steps:

  • Preheat oven to 325. Get out a rimmed cookie sheet.
  • Mix together coriander and salt. Debone fish. Sprinkle coriander mixture evenly over flesh side of fish. Set aside.
  • Heat non-stick pan over med-high heat. Melt ghee. Place filets skin side down. Cook 3 minutes. Flip. Cook three more minutes. Place filets in rimmed cookie sheet and put in pre-heated oven.
  • Combine bone broth, heaving whipping cream, sour cream, and pepper to a small bowl. Whisk and set aside.
  • Using the same pan you used for the fish (I tend to simply wipe it clean with a paper towel), melt the butter over med-high heat. Add garlic paste and cook about one minute, until fragrant. Turn down the heat to medium-low and add cream mixture, using a whisk to stir. Add dill. Stir over medium-low heat for 5 minutes. Reduce heat to low. Add lemon, whisk. Remove fish from oven and place in pan, skin side down. Spoon butter dill sauce over each filet and cook additional 2 minutes and continue to spoon sauce over the top. Remove from heat and plate.

LEMON BUTTER DILL SALMON

4 salmon fillets
2 cloves of galic crushed
1&1/2 sticks of butter
7 sprigs of fresh dill
(approximately 1 tbsp)
1 medium lemon
2oz of your favorite dry white wine. (Save the rest to drink with the meal)
Lowery's Lemon Pepper
2 c of Mesquite chips

Steps:

  • Soak the wood chips in water for at least a half hour prior to cooking. Spray the entire grill with your favorite cooking spray prior to placing heat to the grill. Sprinkle the fillets, both sides, with the Lemon Pepper. In a sauce pan, at low temp place the butter in the pan until it melts. Add the dill, garlic, wine, and the juice from the lemon. Stir constantly, and when the dill has softened, (approximately 5-7 minutes) remove from heat. Once you begin cooking, when it is time to turn the salmon over ensure you place the fillets on a section of the grill where the fillets have not already been placed. This is to prevent sticking. All fish cooks faster than meats, so time and heat is the trick to cooking all fish. Five minutes before you are ready to cook, place the wood chips on the coals, and place the hood down on the grill. Once the smoke is heavily coming out, it is time to place the salmon on the grill. Place the salmon on the grill, and again close the grill hood. In about five to seven minutes, open the grill and lift one of the fillets, and once the color of the fillets is a whitish pink, turn them over and brush the cooked side with the sauce, and again, close the hood. Again, in about five minutes it is time to take the salmon up. If you don't over cook it, it will be moist. Save the remaining sauce for the table.
