LEMON-ALMOND BUTTER CAKE

Lemon-Almond Butter Cake image

This buttery almond cake with lemon curd baked inside is like the ultimate citrus tart, without the heartbreak of pie crust. It's fancy enough to be served as a dinner party dessert, yet substantial enough to be served with Sunday brunch. (Bonus: you'll have several tablespoons of lemon curd left over. It's delicious on toast or pancakes.)

Time 2h30m

Yield 8 servings

Number Of Ingredients 14

Grated zest and juice of 2 lemons
3/4 cup plus 2 tablespoons sugar
4 extra-large eggs
6 tablespoons unsalted butter, cubed
9 tablespoons unsalted butter, softened
1 cup plus 1 tablespoon flour
1 cup plus 1 to 2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon kosher salt
2 extra-large eggs
1/2 cup ground toasted almonds
2 tablespoons toasted sliced almonds
About 1/2 cup heavy cream for garnish
1 tablespoon almond liqueur (optional)

Steps:

  • For the curd, combine zest, juice, sugar and eggs in a heatproof bowl, and beat well. Add butter, and place over a saucepan full of simmering water. Cook, stirring constantly with a rubber spatula or wooden spoon, until mixture thickens into curd, about 5 minutes. Strain into a bowl, and press plastic wrap onto surface to keep skin from forming. Refrigerate until cool, at least 1 1/2 hours.
  • Heat oven to 350 degrees. Grease 9-inch spring-form pan with 1 tablespoon butter, and dust with 1 tablespoon flour, shaking out excess.
  • With an electric mixer, cream the remaining butter and 1 cup sugar together until light and fluffy. Sift together the remaining flour, baking powder and salt, and stir in. In a separate bowl, whisk eggs until they start to foam. Do not overbeat or the cake will be tough. Add eggs and ground almonds to batter, and mix well.
  • Scrape batter into the prepared pan. Drop 8 individual tablespoons lemon curd around perimeter of batter, leaving a 1-inch border, and taking care to space drops evenly. Drop 3 to 4 tablespoons curd into center of batter. Refrigerate remaining curd for another use. Sprinkle cake with toasted almonds and 1 to 2 tablespoons sugar, depending on taste.
  • Bake until cake is toasty brown on top and a toothpick inserted into cake (not curd) comes out clean, about 40 minutes. Let cool on rack 10 minutes, then remove sides of pan, and cool completely.
  • Whip cream with almond liqueur. Present cake at table, and offer whipped cream on the side.

LEMON-ALMOND BUTTER CAKE

Lemon-Almond Butter Cake image

Categories     dessert

Yield Makes 8 servings

Number Of Ingredients 15

Grated zest and juice of 2 lemons
3/4 cup plus 2 tablespoons sugar
4 extra-large eggs
6 tablespoons unsalted butter, cubed
9 tablespoons unsalted butter, softened
1 cup plus 1 tablespoon flour
1 cup plus 1 to 2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon kosher salt
2 extra-large eggs
1/2 cup ground toasted almonds
2 tablespoons toasted sliced almonds
1 tablespoon almond liqueur (optional)
1/2 cup heavy cream (optional)
2 tablespoons confectioners' sugar or as needed

Steps:

  • Combine the lemon zest and juice in a nonreactive saucepan with the sugar and eggs and beat well. Add the butter and cook over medium heat, stirring constantly with a rubber spatula or wooden spoon, until the sugar dissolves and the mixture thickens into curd. Be sure to keep scraping the bottom of the pan during the few minutes this takes you; you don't want the eggs to scramble before the curd forms. If you're the nervous type, make the curd in a heatproof bowl over a pot of boiling water (the bowl shouldn't touch the water). The curd will take just a little longer to thicken, about 5 minutes. Strain the crud into a bowl and press a piece of plastic wrap against the surface so a skin doesn't form. Refrigerate until cool, at least 1 1/2 hours.
  • Preheat the oven to 350 degrees. Grease a springform pan with 1 tablespoon of the butter and dust it with 1 tablespoon of the flour.
  • Cream the remaining 8 tablespoons butter in a large bowl with 1 cup of the sugar until light and fluffy. Sift the remaining 1 cup flour, the baking powder, and salt together and stir into the creamed butter.
  • In a separate bowl, beat the eggs until they start to foam. Do not overbeat, or the cake will be tough. Add the eggs and ground almonds to the flour and butter mixture, mixing well.
  • Scrape the batter into the prepared pan. Drop 8 individual tablespoons of lemon curd evenly around the outside of the cake, leaving a 1-inch border around the edge. Try to place the curd so there's an even amount of cake batter between each dollop of curd. Drop 3 tablespoons curd in the center. Refrigerate any remaining curd for another use (hint: breakfast toast). Sprinkle the top of the cake with sliced almonds and 1 to 2 tablespoons sugar, according to taste.
  • Bake until the cake is toasty brown on top and a toothpick or knife inserted into the cake comes out clean (be sure not to insert it near the curd), about 40 minutes. Let cool for 10 minutes, then remove the sides of the pan and let cool completely on a rack.
  • If serving the cake with whipped cream, add the almond liqueur to the heavy cream and beat until the cream is stiff. Sift a thin, even layer of confectioners' sugar over the top of the cake. Present the cake at the table and offer the almond whipped cream on the side.

LEMON CHESS GOOEY BUTTER CAKE

Lemon Chess Gooey Butter Cake image

Provided by Food Network

Categories     dessert

Time 1h

Yield 20 servings

Number Of Ingredients 9

1 package (18.25 ounces) plain yellow cake mix
8 tablespoons (1 stick) butter, melted
1 large egg
2 large lemons
1 package (8 ounces) cream cheese, at room temperature
2 large eggs
8 tablespoons (1 stick) butter, melted
2 tablespoons white or yellow cornmeal
3 3/4 cups confectioners' sugar, sifted

Steps:

  • Place a rack in the center of the oven and preheat the oven to 350 degrees F. Set aside an ungreased 9- by 13-inch pan.
  • For the crust, place the cake mix, melted butter, and egg in a large mixing bowl. Blend with an electric mixer on low speed for two minutes. Stop the machine and scrape down the sides of the bowl with a rubber spatula. The batter should come together in a ball. With your fingertips, pat the batter evenly over the bottom of the pan, smoothing it out with your fingers until the top is smooth. Set the pan aside.
  • For the filling, rinse and dry the lemons well. Grate the zest from the lemons and set aside; you should have about 2 teaspoons. Cut the lemons in half, and squeeze into a small bowl; you should have about 6 tablespoons. Set the juice aside.
  • Place the cream cheese in the same mixing bowl that was used to make the crust, and with the same beaters (no need to clean either) blend with an electric mixer on low speed until fluffy, 30 seconds. Stop the machine and add the lemon juice, lemon zest, eggs, melted butter, and cornmeal and beat on medium speed for 1 minute. Stop the machine and add the confectioners' sugar. Beat on medium speed until the sugar is well incorporated, 1 minute more. Stop the machine and scrape down the sides of the bowl with the rubber spatula so that the filling covers the entire surface and reaches the sides of the pan. Place the pan in the oven.
  • Bake the cake until it is well browned but the center still jiggles when you shake the pan, 45 to 47 minutes. Remove the pan from the oven and place it on a wire rack to cool, 30 minutes. Cut into squares and serve.
  • Store this cake, covered in aluminum foil, at room temperature for up to 4 days, or in the refrigerator for up to 1 week. Or freeze it, wrapped in foil, for up to 6months. Thaw the cake overnight in the refrigerator before serving.

UPSIDE-DOWN LEMON SPONGE CAKE WITH LEMON-MAPLE BUTTER

Upside-Down Lemon Sponge Cake With Lemon-Maple Butter image

Warm desserts are the quintessential Christmas treat. This one is made even more special with the charred lemon slices, which give it just the right amount of sharpness to cut through all the sweetness. Be sure to take the butter for the cake out of the refrigerator well in advance, as it needs to be fully softened at room temperature before you make the batter. This cake also reheats quite well; just give it a quick steam to warm through or pop individual portions into the microwave in a sealed, heat-proof bowl.

Provided by Yotam Ottolenghi

Categories     snack, cakes, custards and puddings, dessert

Time 1h45m

Yield 8 servings

Number Of Ingredients 14

3 medium lemons
1/2 cup plus 3 tablespoons/165 milliliters maple syrup
1 vanilla bean (pod)
1 3/4 cups/225 grams all-purpose (plain) flour
2 teaspoons baking powder
1/4 teaspoon kosher salt
1 cup/225 grams unsalted butter (2 sticks), cut into small cubes and at room temperature
3 large eggs plus 1 large egg yolk
1 packed cup/220 grams soft light brown sugar
1/4 cup/60 milliliters whole milk
1 cup/240 grams crème fraîche, for serving
3 tablespoons/45 milliliters lemon juice (from 1 to 2 lemons)
1/2 cup/120 milliliters maple syrup
7 tablespoons/100 grams unsalted butter, cut into small cubes and refrigerated

Steps:

  • Heat the oven to 325 degrees Fahrenheit/160 degrees Celsius.
  • Trim the 3 lemons, slicing and discarding the tips, then cut each lemon into very thin (1/10-inch/1/4-centimeter-thick) rounds to get 24 slices; discard the seeds (pips). Place a large nonstick skillet over high heat. Working in about three batches, add lemon slices in a single layer and cook until nicely charred on both sides, 1 to 2 minutes per side. Repeat with the remaining slices and set aside.
  • Line a baking dish about 8-by-12 inches/20-by-30 centimeters in size with a piece of parchment paper large enough to cover the base and sides, and enough overhang to later fold over the batter. Pour 1/2 cup/120 milliliters maple syrup into the prepared dish. Halve the vanilla bean (pod) lengthwise, scrape the seeds into a small bowl, then add the scraped-out halves to the prepared dish. Top with the charred lemon slices, spreading out so they cover the entire base while overlapping slightly in spots.
  • Sift the flour, baking powder and salt into the bowl of a stand mixer fitted with the whisk attachment, and mix on medium speed to combine. Add the room-temperature butter, eggs and egg yolk, brown sugar, milk, reserved vanilla seeds and the remaining 3 tablespoons maple syrup, and mix on medium-low speed for 2 minutes until combined. The mixture will look like it's split a little with some smaller cubes of butter, but that's O.K.
  • Spoon the mixture into a piping bag or resealable plastic bag, snipping the base, and pipe the mixture directly on top of the lemons in the baking dish in an even layer (this ensures the lemons don't move around too much). Using the back of a spoon, smooth over the mixture to create an even layer. Fold over the excess parchment paper to cover, then wrap the dish tightly in foil.
  • Place the baking dish into a larger roasting pan (tin) that is roughly 10-by-14 inches/24-by-36 centimeters. Carefully add about 1 inch/3 centimeters boiling water to the pan, transfer to the oven and bake until a toothpick inserted into the center comes out clean, about 60 minutes. Lift the baking dish from the water, remove the foil, and unwrap the parchment paper. Set aside for 5 minutes before carefully inverting the whole thing onto a platter, carefully removing the parchment paper to expose the lemons.
  • During the last 10 minutes of baking, prepare the lemon-maple butter: Add the lemon juice and maple syrup to a small saucepan and bring to a simmer over medium-high heat. Cook for about 2 minutes, then turn the heat down to low. Once the mixture is no longer simmering, gradually whisk in the chilled butter a little at a time until you have an emulsified sauce.
  • Drizzle half the lemon-maple butter all over the warm sponge cake and serve warm, with the remaining lemon-maple butter and crème fraîche alongside.

  • 2. For the crust, place the cake mix, melted butter and egg in a large mixing bowl. Blend with mixer on low for 2 minutes. Stop the mixer and scrape down the sides of the bowl with a spatula. With your fingertips, pat the batter evenly over the bottom of the 13 x 9 pan, smoothing it out with your fingers until the top is smooth. Set aside.
  • 3. For the filling, grate the zest from the lemons and set aside (you should have about 2 tsp.). Cut the lemons in half and squeeze the juice into a small bowl (you should have about 6 tbsp.) Set this aside.
  • 4. Place the cream cheese in the same mixing bowl that was used to make the crust and with the same beaters (no need to clean either) blend on low speed until fluffy. Add the lemon juice, lemon zest, eggs, melted butter and cornmeal. Beat on medium speed for 1 minute. Add the confectioners sugar and beat until well incorporated, about 1 minute more.
  • 5. Pour the filling onto the crust and spread with spatula so that the filling covers the entire surface and reaches the sides of the pan. Bake for approximately 45-47 minutes until it is well browned but the center still jiggles. Place on a wire rack to cool, 30 minutes.

LEMON-ALMOND BUTTER CAKE

LEMON-ALMOND BUTTER CAKE image

Categories     Cake     Citrus

Yield 8-10 people

Number Of Ingredients 12

1/2 cup sliced almonds
1 3/4 cake (soft-wheat) flour, sifted before measuring
2 teaspoons baking powder
1/4 teaspoon salt
2 lemons
1/2 cup unsalted butter, at room temperature
1 cup sugar
2 eggs, beaten
1/2 milk
lemon curt (recipe on page 284 - Simple Classics Cookbook)
Position a rack in the middle of an oven and preheat the oven to 300 degrees F.
Butter the bottom and sides of an 8-inch round cake pan with 2-inch sides. Cut out a piece of waxed paper to fit the bottom of the pan precisely and slip into place. Butter the paper and then dust the paper and pan sides with flour. Tap out any excess flour.

Steps:

  • Spread the sliced almonds on a baking sheet and bake until they being to change color, 4-5 minutes. Watch carefully so they don't burn. Set aside to cool. Raise the oven temperature to 350 degrees F. In a large bowl, sift together the sifted cake flour, baking powder, and salt. Set aside. Using a fine-hold grater and holding the grater over a saucer, grate the zest from the lemons as directed on page 287. Be sure to include all the zest clinging to the grater. Set aside. In a large bowl, combine the butter and sugar. Using an electric mixer set on medium speed, beat until light and creamy, about 5 minutes, scraping down the sides of the bowl 3 or 4 times. Ad the beaten eggs, a little at a time, beating thoroughly after each addition, then continue beating until doubled in volume, 4-5 minutes, again scraping down the sides of the bowl 3 or 4 times. Beat in the lemon zest. Using a rubber spatula, carefully fold in the flour mixture, one-third at a time, alternating with the milk. Spoon into the prepared pan, building up the sides higher than the center. Bake until the top is golden, 35-40 minutes. To test for doneness, insert a toothpick into the center; it should come out clean. Remove from the oven and let rest for a couple of minutes. Then, using a thin-bladed knife, loosen the sides of the cake from the pan and turn out, bottom side up, onto a wire rack. Peel off the paper and let cool completely. When cool, transfer the cake, bottom side up, to a flat cake plate. Using a long, sharp knife, cut the cake in half horizontally to form 2 layers. Using an icing spatula, spread a thin layer of lemon curd on the bottom layer. Replace the top layer and spread the remaining curd evenly over the top and sides of the cake. Arrange or scatter the toasted almonds over the top and sides.

CAKE BATTER
2/3 c flour
1/3 c sugar
2 tsp baking powder
1/4 tsp salt...heaping teaspoon
1/2 c unsalted butter, melted and cooled slightly
2 eggs
2 Tbsp lemon juice
1/2 tsp vanilla
1 Tbsp lemon peel...(gourmet collection by mccormick)
CREAM CHEESE FILLING
1 c confectioners' sugar
8 oz block of cream cheese, room temp
3 Tbsp butter, melted and cooled slightly
1 egg
1 tsp lemon extract
1/2 tsp vanilla extract
1/2 Tbsp lemon peel

Steps:

  • 1. Preheat oven to 325 degrees F. Grease a 9 inch springform pan. Set aside.
  • 2. Beat cream cheese on medium high for about 5 minutes until smooth and creamy. Add confectioner's sugar beat another 2 minutes. Add egg and beat until blended about 1 more minute, then add butter, both lemon and vanilla extracts, and lemon peel. Beat until combined for about 1 more minute. Set aside.
  • 3. Cake Batter: In large bowl whisk together flour, sugar, baking powder and salt. Next, whisk into flour mixture the butter, eggs, lemon juice, vanilla extract, and lemon peel until combined...DO NOT OVER MIX.
  • 4. Pour batter into spring form pan and spread batter evenly in the bottom of the prepared pan. Top with Cream cheese mixture by evenly spreading mixture over the batter to within 1/2" from edges of pan so that some of the cake batter still shows..see picture.
  • 5. Bake for 35-40 minutes...or until the cake has puffed up or toothpick inserted comes out clean on the outer edges of the cake..not in the middle where the cream cheese is..very important.
  • 6. Allow to cool in pan for 10 minutes before releasing sides of springform ring and then cool for another hour on the cooling rack. Now refrigerate for 3-4 hours before adding a large dollop of whipping cream in center of cake and add a marschino cherry, and then sprinkle with powdered sugar. Keep covered in fridge until ready to serve.
  • 7. You may use blueberries, raspberries or the maraschino cherry for the topping of the whipped cream..I had the cherry on hand so that is what I used...layer several different fruits if desired!

Very easy to put together as you just mix it all in a saucepan. Hope you like it too! It is good with a fruit sauce on top like raspberry, blueberry or strawberry.
