SAUSAGE AND BROCCOLI PASTA WITH LEMON
Sausage and Broccoli Pasta with Lemon is made with garlic, butter, red pepper flakes, grated Parmesan cheese, pasta, fresh lemon juice, broccoli and ground Italian sausage.

Steps:
- Chop the florets of broccoli into bite sized pieces. Set to the side.
- Squeeze juice from lemon and set to side.
- Bring a large pot of water to a boil. Make sure there will be room for both pasta and the broccoli.
- Add pasta and cook according to instructions on box/bag.
- The remaining 6 minutes of pasta cook time, add in the chopped broccoli. Boil broccoli 7 minutes of you like it more tender.
- Remove 1/3 cup of the pasta water for later before straining. Strain pasta and broccoli.
- As the pasta is cooking, add the ground Italian sausage to a large skillet pan on a medium-high heat. Add a pinch of red pepper flakes for a little extra heat and flavor. Chop and brown the meat.
- Push the meat to one side of the pan and add the butter in that open spot to melt.
- Add garlic and let cook for 1 minute or until the garlic becomes fragrant and then mix garlic in with meat.
- Remove pan from heat, add in the reserved pasta water and lemon juice. Stir.
- Add the strained pasta and broccoli. Stir.
- Pour cheese over top and another sprinkle of red pepper flakes.
- Serve.
LEMONY ONE-PAN ORECCHIETTE WITH SAUSAGE & BROCCOLINI
We've updated this classic pasta dish with a simple one-pot preparation and a welcome dose of lemon. Orecchiette is an underused short pasta that's named for its resemblance to the shape of a small ear. Cooking the pasta in chicken broth adds savory depth-you will taste the difference in every bite. Grape tomatoes are optional, but they do add a wonderful burst of color and fresh flavor to this dish. You can cook them with the sausage to soften them a little, if you like. For a milder meal, feel free to omit the red pepper flakes and use regular mild Italian turkey sausage.

- Coat a large nonstick soup pot with cooking spray; heat over medium high heat. Add sausage and cook, stirring often and breaking apart sausage with a wooden spoon, until well-browned, 8 minutes; remove sausage to a bowl.
- Add onion and salt; cook, stirring often, until onion is softened, 5-8 minutes. Add garlic and hot pepper flakes; cook, stirring, 1 minute. Add broth; bring to a boil over high heat. Add pasta; cook, stirring frequently, 8 minutes. Add broccolini; cook, stirring occasionally, until pasta is al dente, about 4 minutes more.
- Stir in cooked sausage, 3 Tbsp Parmesan, lemon zest, and lemon juice; garnish with tomatoes, basil, and remaining 1 Tbsp Parmesan.

RIGATONI WITH BROCCOLINI AND SAUSAGE

- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions for al dente, adding the broccolini for the last 4 minutes of cooking. Reserve 2 1/2 cups of the cooking water, then drain the pasta and broccolini and set aside.
- Meanwhile, heat a large Dutch oven over medium heat and add the olive oil. When the oil is hot, add the sausage and cook, breaking it up with a wooden spoon, until browned, about 4 minutes. Add the onion and cook, stirring occasionally, until softened, about 5 minutes.
- Add the tomato paste, red pepper flakes and garlic to the pot and cook, stirring, until sizzling, 30 seconds. Add 2 cups of the reserved pasta water, bring to a simmer and cook until reduced by half, 5 to 6 minutes.
- Add the pasta, broccolini and parsley to the sauce and toss to coat, adding more water if needed. Taste and add salt if necessary. Remove from the heat and sprinkle with the grated cheese, then toss well. Top each serving with more grated cheese.
PASTA WITH SAUSAGE AND BROCCOLINI
This is a really flavorful, easy to make pasta dish. The broccolini is a hybrid vegetable of broccoli and Chinese Kale. It is more tender and sweet than broccoli and less fibrous. Most of it is edible from the stalks to the florets. It really makes the dish better than the usual broccoli or broccoli rabe.

Steps:
- Slice sausage into bite size pieces and cook in large saute pan until fairly well done.
- Remove sausage from pan and drain on paper towels.
- Meanwhile, rinse broccolini, remove and discard only the ends of the stalks.
- Cut the rest of the broccolini into 2" pieces.
- Wipe the saute pan clean and heat olive oil.
- Add garlic and onion and cook for 2 - 3 minutes.
- Add broccolini and cook for 3 more minutes.
- Add can of chopped tomatoes with juice and cook for 2 more minutes.
- Add cooked pasta and sausage, tossing well to combine with the rest of the ingredients.
- Serve with fresh grated Parmeggiano Cheese and enjoy!
