LEMON AND CONDENSED MILK BISCUITS (BOTSWANA)
This recipe was featured on week 34 of my food blog, "Travel by Stove." I am attempting to cook on meal from every nation on Earth, and Botswana is my 34th stop. Unless otherwise noted, my Travel by Stove recipes are taken from authentic or traditional sources, and this recipe has been posted without any alternations or additions to the ingredients. This recipe originally appeared in "Mma Ramotswe's Cookbook." When I made these I used too little flour, so mine were more like cookies (as pictured in my photo). Yours will be thicker and more biscuit-like.

Steps:
- Cream together the butter and sugar, then add the condensed milk and keep blending until well mixed.
- Add the lemon juice and grated zest, then sift together the dry ingredients and add that too. Keep blending until the ingredients are well-incorporated.
- Take teaspoons of dough and roll them into balls, then place them on a greased baking sheet and flatten gently with a fork.
- Bake at about 335 degrees for 12 to 15 minutes, or until starting to brown underneath. Let cool, then dust with powdered sugar.
SWEETENED CONDENSED MILK BISCUITS ( COOKIES )
These biscuits (cookies) are still my adult children favourites and I can never seem to make enough of them !! The secret of this biscuit is to chill the dough before baking. If making this recipe, please don't use skim milk or evaporated milk, only condensed milk.

- Beat the margarine and sugar until creamy.
- Add vanilla essence - beat for another couple seconds.
- Add the tin of sweetened condensed milk to the "cream" mixture.
- Add salt then flour - cut into the mixture whilst mixing with a round edged knife.
- Once mixture has the consistency of workable dough (more flour may be needed to get right consistency) roll out dough into 6 inch "sausages" - wrap "sausage dough" in parchment paper (wax paper) and place in fridge for half an hour before cutting the sausages into slices. Flatten biscuits lightly before baking in a preheated oven @ 180degrees until biscuits are a fine golden colour.

SOUTH AFRICAN FRIDGE TART

Steps:
- Place condensed milk in a mixing bowl and add lemon juice 5ml at a time while mixing thoroughly. Taste after every 5ml and add to suit your taste. Lemon juice will curdle the condensed milk and it will finally turn lighter in colour and change the texture. Be sure to end with a fairly tart (tangy) mixture to offset the sweetness of the custard. Must be pleasant to eat on it's own though -- Put aside but do not refrigerate.
- Make approximately 500 ml of Custard.
- Place one layer of Tennis biscuits on the bottom of a 20 x 30 glass or ceramic fridge/oven dish. Spread a layer of Custard (approximately 1cm) over the biscuits without disturbing them but covering them. Place another layer of biscuits over the custard. Now spread a layer of the lemony condensed milk over the biscuits (approximately 5-6 mm). Repeat until you run out of ingredients or you reach the top of the dish.
- Leave one biscuit for the end to crush and sprinkle over the top. You can decorate the top with other sprinkles but biscuit crumbles are the original. Refrigerate for 4 to 6 hours but cover with tin foil to keep fridge flavours out. Cut in square portions and serve.
- This is the original South African Fridge Tart!
