210 grams (1 and 1/2 cups) plain flour or all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
150 grams (3/4 cup) caster sugar or granulated sugar
1 cup (approximately 1 large) red apple, peeled and roughly chopped
2 large eggs
1 teaspoon vanilla extract
120 ml (1/2 cup) vegetable oil
120 ml (1/2 cup) Greek yogurt
50 grams (1/4 cup) caster sugar or granulated sugar
1 teaspoon ground cinnamon
1 tablespoon butter, melted
30 grams (1/4 cup) icing sugar or powdered sugar, sifted
1-2 tablespoons milk

Steps:

  • Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch round cake pan with baking or parchment paper.
  • In a large mixing bowl, add flour, baking powder, baking soda, salt and sugar. Add chopped apple and stir briefly to combine.
  • In a separate bowl, add eggs, vanilla, oil and yoghurt. Whisk briefly just to break up the egg yolks.
  • Add wet ingredients to dry ingredients and gently mix with a wooden spoon until combined - but be careful not to over mix. Spoon batter into prepared tin.
  • To make cinnamon topping, combine cinnamon, sugar and butter. Mix together until lumpy and wet. Sprinkle over cake batter.
  • Bake cake for approximately 30-35 minutes or until a skewer inserted into the middle comes out clean. Transfer cake to a wire rack to cool completely.
  • To make the glaze, mix together sugar and 1 tablespoon of milk. Stir until smooth. If the glaze is too thick, add an extra tablespoon of milk. Drizzle glaze all over the cake.

1/2 cup butter, softened
1/2 cup sugar
1/2 cup dark brown sugar
2 eggs
1/4 tsp vanilla extract
1 1/4 cup all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/4 tsp salt
1 1/2 cups chopped and peeled apples (about 2 medium apples)
1/2 cup chopped walnuts

Steps:

  • Heat oven to 350°F. Spray a 9-inch round cake pan with cooking spray.
  • In large bowl, beat softened butter and sugars with electric mixer on medium speed until light and fluffy. Beat in eggs, one at a time. Stir in vanilla, flour, baking soda, cinnamon and salt. Stir in the chopped apples and walnuts. Spoon into your greased pan.
  • Bake 40 to 45 minutes or until toothpick inserted in center of cake comes out clean. Cool about 10-15 minutes. Cut the warm cake into slices and serve with ice cream.

1-3/4 cups sugar
1 cup vegetable oil
3 large eggs, room temperature
1 teaspoon vanilla extract
2 cups all-purpose flour
1-1/4 teaspoons baking powder
1 teaspoon salt

2 cups finely chopped peeled tart apples
1 cup chopped walnuts

2 eggs
2 cups apples (stewed, chopped fresh or canned, I use canned)
1 cup sugar
2 cups flour
2 teaspoons baking powder
2 teaspoons cinnamon

  • Bake in a greased & floured or baking paper lined 20cm cake pan for 40-45minutes at 170'C or until springs back when touched lightly with finger.
