This is a great recipe to use up leftover turkey or chicken. It does not taste anything like leftovers. Makes about six 2-inch croquette balls. Definitely need to double or triple recipe for large groups as I can eat 2 croquettes easily.

2 slices bread, or more as needed
2 tablespoons butter
3 tablespoons all-purpose flour
½ cup milk
½ cup chicken broth
2 cups diced cooked turkey
1 tablespoon chopped fresh parsley
¼ teaspoon dried rosemary
salt and ground black pepper to taste
1 egg, beaten

Steps:

  • Place bread in a blender and blend until soft crumbs form. Place bread crumbs in a shallow bowl.
  • Heat butter in a saucepan over medium heat until melted. Stir flour into melted butter until dissolved. Mix milk and broth into butter-flour mixture; cook and stir until mixture is thick, about 5 minutes. Remove saucepan from heat and cool mixture.
  • Mix turkey, parsley, rosemary, salt, and pepper into cooled mixture. Form turkey mixture into balls. Place balls on a plate and refrigerate until chilled, at least 3 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Dip balls in the beaten egg, allowing excess to drip back into bowl. Press balls into bread crumbs until coated. Arrange balls on a baking sheet.
  • Bake in the preheated oven until cooked through and browned, 25 to 30 minutes.

Number Of Ingredients 12

12 oz cooked turkey breast (chopped fine (a food processor or chopper is great for this))
3 medium potatoes (peeled, cooked and mashed)
3/4 cup chicken broth
2 teaspoons olive oil
3 cloves garlic
1 medium onion (chopped)
1/2 cup parsley (chopped)
salt and fresh pepper
1/2 cup seasoned whole wheat bread crumbs
1 egg (whisked)
olive oil spray
leftover turkey gravy for serving (optional)

Steps:

  • In a large bowl, mash potatoes with 1/4 cup broth, salt and pepper. Set aside.
  • Saute garlic, and onions in oil over low heat. Add parsley, salt and pepper and cook until soft, about 2-3 minutes.
  • Add turkey, and remaining broth, mix well and shut heat off.
  • Add turkey to mashed potatoes and using your clean hands mix well. Taste for salt and adjust if needed.
  • Preheat oven to 450°F.
  • Measure 1/4 cup of mixture then form into croquettes. Place on waxed paper. Repeat with remaining mixture.
  • Dip each croquette in egg mixture, then breadcrumbs and place on a parchment lined cookie sheet for easy cleanup. Spray generously with olive oil (about 1 tbsp worth). Bake in the oven about 15 minutes, or until golden.
  • Optional, serve with leftover turkey gravy.

2 cups mashed potatoes (with added milk and butter)
1/2 cup grated Parmesan cheese
1/2 cup shredded Swiss cheese
1 shallot, finely chopped
2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
1 teaspoon minced fresh sage or 1/4 teaspoon dried sage leaves
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups finely chopped cooked turkey
1 large egg
2 tablespoons water
1-1/4 cups panko bread crumbs
1/4 cup butter, divided
Sour cream, optional

Steps:

  • In a large bowl, combine mashed potatoes, cheeses, shallot, rosemary, sage, salt and pepper; stir in turkey. Shape into twelve 1-in.-thick patties., In a shallow bowl, whisk egg and water. Yield Makes about 24 (2-inch) croquettes

2 to 2 1/2 cups bread crumbs
1 large egg
2 tablespoons water
2 cups mashed potatoes
2 cups stuffing
2 cups chopped cooked turkey or rotisserie chicken
4 to 6 tablespoons olive oil, as needed
To serve:
Cranberry sauce
Warm turkey gravy
Equipment: 1 large rimmed baking sheet

Steps:

  • In a small sauté pan over moderate heat, toast the bread crumbs until golden and crunchy, 3 to 4 minutes. Transfer to a small bowl and let cool.
  • In a small bowl, beat together the egg and water.
  • In a large bowl, combine the mashed potatoes, stuffing, and turkey. Using your hands or a spoon, shape the mixture into 2-inch-long, oblong-shaped croquettes (you should have about 24 croquettes) and transfer to a large rimmed baking sheet.
  • Working with 1 croquette at a time, dredge them in the egg-water mixture, letting the excess drip off, then dredge them in the bread crumbs, and return them to the rimmed baking sheet.
  • In a large skillet, over moderately high heat, warm 2 tablespoons of the oil. Working in batches, pan-fry the croquettes, turning them occasionally, until crispy on all sides, 5 to 6 minutes total. Repeat with the remaining croquettes, wiping the pan clean and adding 2 tablespoons of the oil to the pan between batches. DO AHEAD: The croquettes can be prepared ahead and frozen, well wrapped in foil, for up to 3 months. To reheat: Bake the frozen croquettes on a large baking sheet in a 475°F oven until golden brown, about 10 minutes. Remove the croquettes from the oven for about 5 minutes to let the interiors thaw, then return them to the oven to finish baking for another 2 minutes.
  • Serve hot with cranberry sauce and/or warm gravy.

10-12 oz turkey, cooked (holiday dinner leftovers work)
1 c stuffing (holiday leftovers)
1 stalk(s) celery, diced
2 small green onions, finely chopped
1 c cauliflower & broccoli florettes, green bean casserole or corn
1 large egg
1 - 1 1/2 c cracker crumbs *I used Cheeze-Its*
pinch salt and pepper
1 c French fried onions or crackers, crushed
olive oil

Steps:

  • 1. Using a food processor, chopper or Bullet finely chop meat, celery, onion, cauliflower, and broccoli.
  • 2. Stir in stuffing and 1c crushed cracker crumbs. *I used Cheeze-Its & saltines but any flavor of crackers would work.
  • 3. Whisk egg well and add to mixture along with a pinch of salt and pepper. *This makes a good binder for the patties*
  • 4. Take a scoop of the mixture and roll into a ball that sticks together (add more cracker crumbs if it's not holding together well). Press ball into patties the size of a standard burger bun in diameter.
  • 5. Dredge patties in crushed French fried onion or remaining cracker crumbs if desired.
  • 6. Heat a skillet to medium heat and use 2 tbsp olive oil fry the patties for 3-5 minutes on each size until golden brown.
  • 7. Serve these patties on a bed of fresh greens with a light dressing (sour Cream w/chives) or on a grilled sesame bun topped with tomato, cucumber & lettuce. Make the patties smaller for appetizers.

6 tablespoons butter
1/2 cup flour
1 cup milk
1 cup chicken broth
2 teaspoons lemon juice
2 tablespoons snipped parsley
2 teaspoons grated onion
1/2 teaspoon celery salt
Dash each pepper, paprika, and nutmeg
4 cups ground, cooked turkey
3/4 cup fine bread crumbs
2 eggs mixed with water
Flour, for dredging

Steps:

  • In a medium-size saucepan, melt butter. Blend in flour and add milk and chicken broth. Cook and stir until mixture thickens and bubbles, and continue cooking for 1 minute more.
  • Add lemon juice, snipped parsley, and onion. Stir in celery salt and a dash each of pepper, paprika, and nutmeg. Cool.
  • In a large mixing bowl, combine sauce with the ground turkey. Chill thoroughly. With wet hands, shape mixture into balls. Roll balls one at a time in bread crumbs.
  • Lightly shape balls into cones. For each croquette, dip it into the mixture of egg and water, then roll in bread crumbs. Again, dip croquette in egg/flour and roll in bread crumbs. Fry croquettes in deep-fat fryer for approximately 3 minutes or until brown. Drain. Serve with turkey gravy.

Revamp your leftover stuffing into this delicious and decadent appetizer. Each is a perfect warm crispy bite of stuffing with a cheesy surprise in the middle!

Vegetable oil, for frying
3 cups leftover stuffing, preferably sausage, such as Valerie's Cranberry-Walnut Stuffing
1 large egg
Kosher salt
1/2 cup all-purpose flour
3/4 cup panko
3 ounces mozzarella, cut into 1/2-inch cubes
Nonstick cooking spray
Leftover gravy or mustard, for serving

Steps:

  • Pour enough oil into a large Dutch oven to fill the pan about 3 inches deep. Heat over medium heat until a deep-fry thermometer inserted in the oil reaches 325 degrees F. Line a rimmed baking sheet with parchment paper, line a second rimmed baking sheet or plate with paper towels and set a cooling rack inside a third rimmed baking sheet. Preheat the oven to 200 degrees F.
  • Place the stuffing in a food processor fitted with the blade attachment. Pulse until slightly broken up but still with chunks, 4 to 5 times.
  • Scrape the stuffing into a large bowl. Whisk the egg and 1/2 teaspoon salt in a small bowl. Stir the egg mixture into the stuffing with a fork. Add the flour and use a rubber spatula or your hands to incorporate it until no streaks remain.
  • Place the panko in a shallow baking dish. Use a 2-tablespoon cookie scoop to scoop out a portion of the stuffing mixture. Flatten the scoop slightly with your hands, then place a cube of mozzarella in the center. Bring the stuffing up over the cheese to enclose it; if the mixture sticks to your hands, spray them with a little cooking spray. Form the croquette into a football shape. Roll the croquette in the panko, pressing slightly to adhere. Place on the parchment-lined baking sheet. Repeat with the remaining stuffing and mozzarella; you should get 10 to 12 croquettes.
  • Use a spider to gently lower half of the croquettes into the hot oil, making sure not to overcrowd the Dutch oven. Fry until golden brown, 2 to 3 minutes. Transfer to the paper towel-lined baking sheet and sprinkle with salt. Let the croquettes drain for a minute, then transfer them to the baking sheet with the wire rack and keep warm in the oven until ready to serve. Bring the oil back to 325 degrees F, then repeat with the remaining croquettes.
  • Serve the croquettes on a platter with leftover gravy or mustard.

1 medium onion, minced
Coarse salt and freshly ground pepper
1 1/2 teaspoons minced fresh sage
1 1/2 teaspoons minced fresh savory or thyme
2 cups finely chopped cooked turkey
1/4 cup heavy cream
1 cup mashed potatoes
1/4 cup all-purpose flour
1 large egg, lightly beaten
1 1/2 cups finely ground fresh breadcrumbs
Vegetable oil, for frying
Cranberry sauce, for serving

Steps:

  • Melt butter in a large skillet over medium-high heat. Add onion, 1 teaspoons salt, and teaspoon pepper. Cook for 3 minutes. Stir in sage and savory or thyme, and cook for 1 minute. Stir in turkey and cream, and cook until liquid evaporates, about 1 minute. Transfer to a large bowl, and let cool for 15 minutes.
  • Add potatoes, flour, and egg to turkey, and season with salt and pepper.
  • Drop 2 tablespoons turkey mixture into a shallow bowl of breadcrumbs, turn to coat, and pat into 2-inch disks. Arrange in a single layer on a baking sheet, and refrigerate for 10 minutes.
  • Heat 1/4 inch oil in a skillet over medium heat. Working in batches, cook croquettes in a single layer until golden brown, about 2 minutes per side. Transfer to paper towels to drain. Serve immediately with cranberry sauce.
