This is a great meal in one dish. I have made this in advance, added buttered crumbs and reheated in a 350F the oven for 25 minutes.

1 tablespoon butter or 1 tablespoon margarine
1 large sweet onion
2 tablespoons garlic, minced
3 cups cabbage, thinly sliced
2 1/2 cups ham, cubed
8 small potatoes, scrubbed and quartered
1/2 cup white wine
1 tablespoon dried parsley
salt and pepper

Steps:

  • Sauté the onion & cabbage in the melted butter, stir fry until translucent.
  • Add potatoes, garlic, wine salt & pepper, stir.
  • Add parsley & ham, mix well, cover.
  • Simmer 20 minutes or until the potatoes are tender.
  • Serve.

I'm always looking for a way to recycle leftovers, and this casserole is a great way to do just that. To leftover ham and a bit of cabbage, add some fridge and pantry staples and create a warm, comforting casserole for your family to enjoy. Toss a salad while the casserole is baking, add some biscuits or cornbread, and your meal is complete!

2 cups chopped cooked ham
1 ½ cups frozen Southern-style hash brown potatoes, thawed
5 tablespoons unsalted butter, divided
1 ½ cups chopped onions
5 cups chopped cabbage
½ cup shredded carrots
3 tablespoons all-purpose flour
½ teaspoon salt
¼ teaspoon dry mustard
¼ teaspoon white pepper
2 cups milk, or more as needed
1 cup grated sharp Cheddar cheese
3 slices bacon strips, cooked and crumbled
¾ cup buttery round crackers, crumbled

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking dish.
  • Spread out chopped ham on the bottom of the prepared dish.
  • Set hash browns on a microwave-safe plate and microwave on high power for 1 minute and 30 seconds. Potatoes should be thawed and feel slightly warm to the touch, but not be cooked. Set aside.
  • Melt 2 tablespoons butter in a large skillet over medium heat and cook onions until they are just starting to turn clear, 2 to 3 minutes. Add chopped cabbage and continue to cook, stirring often, until cabbage wilts down a little but is still crisp, 3 to 5 minutes. Stir in shredded raw carrots and microwaved hash browns, then add mixture to the baking dish.
  • Wipe out the skillet and melt the remaining 3 tablespoons butter over medium heat. Combine all-purpose flour, salt, dry mustard, and white pepper in a small bowl. Sprinkle flour and seasonings over the melted butter and stir, constantly, until flour and butter are well mixed and the mixture is bubbly, about 3 minutes. Allow to bubble for 1 minute, while stirring.
  • Gradually pour in milk, stirring constantly to avoid lumps. Cook, stirring, until the mixture boils and thickens, 3 to 5 minutes. If the mixture is too thick, stir in an additional 3 to 4 tablespoons milk. Remove from heat.
  • Add half of the grated Cheddar cheese and stir until it is melted, then add the remaining half and repeat.
  • Pour sauce over the casserole and top with crumbled bacon and cracker crumbs.
  • Bake in the preheated oven until the top is bubbly and brown, 30 to 35 minutes. Serve warm.

This is so good to serve on these below 0 degree days we have been having. A real comfort food for me. I have also chopped up turnips and added along with the other veggies. Serve with a nice crusty bread.

2 lbs cabbage, chopped coarsely
2 cups diced cooked ham
1 1/4 cups shredded carrots (I use the already shredded in a bag to save time)
1 cup celery, sliced thin
1 small onion, chopped
1/4 cup butter or 1/4 cup margarine
2 (14 1/2 ounce) cans chicken broth
1 cup white wine
3/4 teaspoon celery salt (or adjust amount to your taste)
1 (5 1/2 ounce) can evaporated milk
1/3 cup flour
3/4 cup water

Steps:

  • In a large pot, combine the first 9 items and cook on high heat bringing mixture to a boil Reduce heat to medium/low (just a simmer) for about 40 minutes or until vegetables are tender.
  • Stir in the can of evaporated milk.
  • mix flour and water until smooth and add slowly to soup mixture.
  • Cook, stirring occasionally until mixture comes to a boil.
  • Season with salt and pepper to taste.

Finally used up the last of my Christmas hams and talk about delicious...this was so much more than I expected. I used what I had and I wouldn't change a thing. The ham was melt in your mouth tender, along with the cabbage. I hope you try it sometime. I served it with a skillet of my Southern cornbread. Absolute comfort food!...

2 - 2 1/2 c cooked ham, cubed
1 medium onion, chopped
1 Tbsp minced garlic - i use the chunky garlic paste
5 Tbsp butter
1/2 c rice
1 - 103/4 oz can cream of mushroom/ garlic soup
2 c half & half
1 c milk or as much needed
4 c chopped cabbage
1 tsp salt
1 tsp pepper
1/2 Tbsp horseradish paste
1 tsp red pepper flakes, optional

Steps:

  • 1. In a large skillet or chicken fryer as I used, melt butter over medium heat, when bubbly add onion, garlic, ham and rice. Continue stirring and cooking until rice is golden and onion becomes tender.
  • 2. In a bowl, whisk together the soup and half and half. Pour this mixture into pot, stir - then add the cabbage, salt, pepper, pepper flakes and horseradish. Cover and simmer for 45 - 55 minutes or until cabbage and rice is tender. Add the cup of milk if becomes too thick, before the rice is tender. I ended up adding a full cup. Let set for 10 minutes with lid on, before serving. This insures the rice to be cooked.
  • 3. I served this yummy dish with a pan of hot corn bread.
