FRENCH FRY CASSEROLE

A friend gave me this recipe a few years ago and it's still a family favorite. Try the recipe as is, or use cream of chicken soup for a different taste.

1 tablespoon vegetable oil
1 ½ pounds lean ground beef
½ onion, diced
½ green bell pepper, diced
salt and black pepper to taste
1 (10.75 ounce) can condensed cream of mushroom soup
¾ cup processed cheese sauce (such as Cheez Whiz®)
½ (28 ounce) package frozen shoestring potato fries

Steps:

  • Preheat oven to 400 degrees F (200 degrees C), and grease a 9x13 inch baking dish.
  • Heat the oil in a skillet, and cook and stir the ground beef, onion, and green pepper over medium heat for about 15 minutes, until the meat is crumbly and no longer pink and the onion is translucent. Season with salt and pepper to taste, and stir in the condensed mushroom soup. Bring the mixture to a simmer over medium-low heat.
  • Scoop the cheese sauce into a microwaveable bowl, and melt on low power for about 30 seconds.
  • Place the ground beef mixture into the bottom of the prepared baking dish, and spread an even layer of the melted cheese sauce over the ground beef. Top with frozen shoestring fries. Bake in the preheated oven for about 20 minutes, until the fries are starting to turn golden.

I had left over fries and didn't want to throw them away and I found a recipe online tweeked it and made it my signature breakfast go to dish. Just tried the same recipe but I made some changes I used ground beef instead of sausage and substituted pasta sauce in place of egg/mixture but I kept everything else the same. In a word...

2 large eggs
1 c milk
1/2 large onion
1 bag(s) french fries or tater tots
1 dash(es) salt, garlic powder, pepper and mrs. dash
1 c jimmy deans sausage or any brand
1 c mexican blend shredded cheese

Steps:

  • 1. Preheat oven to 350° next cook sausage and seasonings in a skillet until almost done (sausage will continue to cook in oven).
  • 2. Next spray your dish with cooking spray or use a non-stick pan then layer with french fries or tater tots and set aside.
  • 3. Slightly whisk milk and eggs together in a bowl. Next begin to layer alternately sausage and cheese once that is done pour Egg and milk mixture over and bake. The bake times will vary depending On the size dish used mine took about 35-40 minutes bake until the egg has set in the middle and cheese has melted. Be sure to check center of the finished product to make sure the eggs are not runny if they are cook a Little longer. Take out of oven and let cool before serving. Enjoy!!!!!

16 oz frozen French fries
6 eggs
½ cup half and half
½ tsp salt
Pepper to taste
½ tsp garlic powder
½ pound beef sausage (sliced)
¼ cup bacon bits (or to taste)
1 Roma tomato diced
¼ cup green onions (chopped)
¼ cup shredded cheddar cheese
¼ cup shredded mozzarella cheese
Parsley as desired

Steps:

  • Begin by warming your French fries in your casserole dish until they are hot to the touch. If using frozen fries, bake them according to the package instructions. The fries work best when slightly crispy to start, so spray them with butter or toss with oil as they bake.
  • In a mixing bowl, combine eggs, half and half, salt, pepper, and garlic powder. Whisk to combine. Pour on top of your warmed French fries.
  • On top of your French fry and egg mixture, add your desired meats, tomato, and onion, etc. Bake at 400°F for 20 minutes, or until the center of your casserole appears to be done. Remove from the oven and add cheese to the top. Place back into the oven, and bake for an additional 10 minutes, or until cheese is melted and appears to start to turn golden in color. Remove from the oven, serve, and enjoy.

Steps:

  • Over medium heat, saute chopped onion in a dash of olive oil and a pinch of salt until translucent, Chop fries into small pieces and add to skillet. Toss well and cover pan. Cook, stirring frequently, until potatoes start to crisp up. Season to taste - I used paprika, onion powder, cayenne, salt and pepper to taste. Continue to cook until most of the potatoes are crispy. Serve with eggs.
