10 ounces frozen spinach
8 ounces egg noodles
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons flour
1 1/3 cups milk
1/2 teaspoon salt
1 cup sour cream
12 ounces Spam, cut into strips
10 ounces frozen peas, thawed (or frozen mixed vegetables)
1 pinch paprika

Steps:

  • Cook spinach according to package directions; drain well.
  • Spread spinach over bottom of lightly greased 13x9-inch baking dish.
  • Cook noodles according to package directions; drain.
  • While noodles are cooking melt butter in medium saucepan; blend in flour until smooth.
  • Add milk, salt, and pepper; cook and stir over medium heat until mixture thickens and boils.
  • Stir a little hot mixture into sour cream; return to pan.
  • Add SPAM® and peas or mixed vegetables.
  • Combine sauce and noodles; pour over spinach.
  • Sprinkle with paprika.
  • Cover and bake in 375°F oven 20 minutes.
  • Uncover and bake 20 minutes longer.

1 (12 ounce) can imported german Spam or 1 (12 ounce) can hormel wurst
1/2 cup pumpernickel breadcrumbs
3 german stick ducks eggs, beaten
8 fluid ounces goat's milk
1/2 lb german Tilsit cheese or 1/2 lb Limburger cheese, cubed
6 whole dill pickles, sliced lengthwise
1 medium onion, chopped
1 lb german fries fried potato (like French fries, but deep-fried in melted Bratwurst fat instead of oil)

Steps:

  • Make sure that your German fries have been made from Blah potatoes, and keep them warm.
  • Grind the Spam, cheese, onion and pepper together.
  • (Grinding makes the dish easier to eat for those guest trolls who left their dentures at home).
  • Combine with the Pumpernickel crumbs, eggs, and milk.
  • Grease a large casserole dish with a generous amount of the Bratwurst fat.
  • Place the Spam mixture in the casserole, and then arrange the sliced dill pickles on top.
  • Bake, covered, at 350°F for 1¼ hours.
  • Uncover and bake 15 minutes more to brown.
  • Serve with German fries in individual emesis basins.
  • Don’t forget the Oreos for dessert!

My husbands grandmother use to make this casserole it was so easy and tasted great, also inexpensive to make.

2 c macaroni, elbow or shell, uncooked
1 can(s) cream of mushroom soup
1/4 lb processed cheese, cubed ( like velveeta )
1/2 c milk
1 medium chopped onion
1 medium chopped green bell pepper
1/4 tsp pepper
1 can(s) spam , cubed.

Steps:

  • 1. Cook macaroni as directed on package.
  • 2. Combine soup, milk, green pepper, onion and pepper.
  • 3. Place over low heat.
  • 4. Add cheese and stir occasionally until cheese is melted, then mix cooked macaroni and the cubed Spam with cheese sauce.
  • 5. Pour mixture into a 1 1/2 quart casserole dish.
  • 6. Place in oven at 350* degrees for about 30 minutes or until sauce is bubbly.

4 cups water
1 cup quick-cooking grits
1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), grated
1 (14.5 ounce) can diced tomatoes
1 (8 ounce) container sour cream
1 (16 ounce) package shredded Cheddar cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Bring the water to a boil in a large saucepan over high heat. Slowly pour the grits into the water while stirring constantly. Reduce heat to medium-low, and simmer until the grits are tender and thick, 3 to 4 minutes. Stir the grits constantly as they cook. Set aside.
  • Heat a skillet over medium-high heat, and sprinkle in the grated luncheon meat. Cook, turning occasionally, until the luncheon meat has browned. Pour off any excess grease, and stir half of the luncheon meat into the grits along with the tomatoes, sour cream, and half of the Cheddar cheese. Pour the grits into the prepared baking dish, and sprinkle with the remaining luncheon meat and Cheddar cheese.
  • Bake in the preheated oven until the casserole is hot and the cheese has melted and is bubbly, about 30 minutes.

Steps:

  • Quick fry the weiners and set aside.
  • Spray a 2 1/2 quart casserol dish dump remaining ingredients including weiners, except cheese.
  • Mix well.

1 1/2 to 2 pounds ground beef
1 medium onion, chopped
1 tablespoon oil
1 teaspoon garlic, minced
2 (15-ounce) cans tomatoes, diced
1 (8-ounce) can tomato sauce
1 cup water
1 small cabbage head, chopped
1 teaspoon pepper
1 teaspoon salt
1/2 cup uncooked rice, optional

Steps:

  • In a deep dish skillet with a small amount of oil, brown ground beef, and onion. Drain. Add the minced garlic to the ground beef with onions and give it a quick saute. Add in water, diced tomatoes and tomato sauce. Season with salt and pepper. Toss in the uncooked rice at this point if using. Place chopped cabbage in pan, and toss to combine all ingredients. Cover the pan with lid and simmer for 30 minutes or until cabbage has cooked.

This is a very simple, but delicious brunch casserole - almost like a crustless quiche. We had this for our Lazy Day New Years brunch (our guests come in pajamas and stay that way all day - hence the name). It's very colourful and quick to throw together, especially if the cheese is grated and broccoli is chopped the day before. Don't chop the tomatoes ahead of time though as they tend to get soggy and lose flavour if refrigerated.
