This recipe comes from Cookbooks Online. This is a easy and nutritious main meal. You can put it in the oven and go about other things as it fixes itself. My family loves this recipe and perfers that I double it to make more gravy for over noodles and mashed potatoes. I tried this in a crockpot while camping after a reviewer had said they have made it that way. I used frozen stew beef. I let it cook on low 9 hours (by accident we were at a water park) and it turned out great for my family the meat just fell apart. I did need to thicken it with 1/4 cup cold water and 2 tablespons cornstarch.

2 lbs boneless beef cubes
1 (10 1/2 ounce) can cream of mushroom soup
1 (10 1/2 ounce) can water
1 (1 7/8 ounce) envelope dry onion soup mix

Steps:

  • Mix the soups and water together using a electric mixer in a bowl.
  • Place the cubed beef in a oven proof dish.
  • Pour the soup mix over the beef and gently fold until all the meat is covered.
  • Cover the dish and bake at 325 for 2 hours, stirring several times.
  • Serve this over mashed potatoes or noodles.

A delicious gravy forms during the cooking of this very easy and tender beef dish. (I got this recipe out of the American Heart Association Cookbook back in the '80's and have made it many, many times. I like the long cooking time because I can get so many other things done while the meat is cooking. (I would imagine it could be done in a crockpot, but I have never done it.)

1 lb lean beef chuck, cut in to 1 1/2-inch cubes
1/2 cup red wine
1 (10 1/2 ounce) can consomme, undiluted (I use Campbells)
1/4 teaspoon dried rosemary
fresh ground black pepper, to taste
1 medium onion, chopped
1/4 cup fine dry breadcrumb
1/4 cup all-purpose flour

Steps:

  • Put meat in casserole with the red wine, consumme, pepper, rosemary and onion.
  • Mix flour and breadcrumbs together and stir into liquid in casserole.
  • Cover and bake at 300 degrees F for 3 hours.
  • Serve over rice or noodles.

This easy leftover roast beef casserole recipe is made with vegetables, prepared gravy, and is topped with some shredded cheddar cheese.

1 cup pearl onions (frozen)
1 (10-ounce) package peas and carrots (frozen, about 1 1/2 cups)
2 cups diced leftover roast beef (cooked, 1/4-inch to 1/2-inch dice)
1 cup beef gravy (homemade, canned, or made from dry mix)
1/2 cup sharp cheddar cheese (shredded)

Steps:

  • Gather the ingredients.
  • Position a rack in the center of the oven and heat to 350 F. Lightly grease a 1 1/2-quart to 2-quart casserole dish or spray it with nonstick cooking spray.
  • In a medium saucepan, cover the pearl onions and peas and carrots with water. Bring to a boil. Reduce the heat to low and simmer until the vegetables are mostly tender, about 3 minutes.
  • Drain the vegetables thoroughly and transfer them to a large bowl. Add the roast beef and gravy to the bowl of vegetables. Mix well.
  • Transfer the beef-vegetable mixture to the prepared casserole dish, spreading it out evenly. Top with shredded cheddar cheese.
  • Bake until the filling is bubbling and the cheese has melted, about 20 minutes.
