6 cups torn mixed salad greens, such as Italian blend
2 cups small broccoli florets
1 cup shredded carrots
2 cups frozen sweet peas, cooked, drained
1 medium red bell pepper, cut into thin bite-size strips
2 medium stalks celery, thinly sliced (1 cup)
6 slices bacon, crisply cooked, drained and crumbled
5 medium green onions, thinly sliced (5 tablespoons)
3/4 cup reduced-fat mayonnaise
3/4 cup buttermilk
2 tablespoons chopped fresh or 1/2 teaspoon dried basil leaves
1/2 teaspoon finely shredded lemon peel
1 teaspoon lemon juice
1/4 teaspoon pepper
1/2 cup shredded reduced-fat Cheddar cheese (2 oz)

Steps:

  • Place salad greens in large salad bowl. In order given, layer remaining salad ingredients over greens.
  • In small bowl, mix all dressing ingredients except cheese until well blended. Spoon dressing over salad; sprinkle with cheese. Toss salad to coat.

1 head lettuce, torn into bite size pieces
1/3-1/2 cup chopped onion
1/2 cup thinly sliced celery
1/2 cup chopped red bell pepper (Can substitute using green, orange or yellow peppers)
1 (9 ounce) bag frozen peas, thawed by running under hot water, then blotted with paper toweling
1 -1 1/4 cup salad dressing
2 tablespoons sugar
1 cucumber, peeled and thinly sliced (blot with paper towels to remove excess moisture)
1 (8 ounce) package shredded medium cheddar or 1 (8 ounce) package sharp cheddar cheese
10 slices bacon, cooked and crumbled

Steps:

  • In a large bowl, layer salad with vegetables and ingredients in order given.
  • Chill 30 minutes to 1 hour.
  • This salad is best eaten, shortly after being made.
  • Serves 8.
  • Note: Sometimes I substitute 1-(8 oz.) can of well drained bamboo shoots for the sliced cucumbers. Just be sure to blot the bamboo shoots with paper toweling before placing them on the salad.

1 package (3 1/2 ounces) sliced pepperoni, chopped (3/4 cup)
1 medium head cauliflower (2 pounds), separated into florets (6 cups)
1/2 cup chopped red onion
2 cups seasoned croutons
2 cups mayonnaise or salad dressing
1/2 cup grated Parmesan cheese
1/4 cup sugar

Steps:

  • In large glass bowl, layer lettuce, pepperoni, cauliflower and onion.
  • Mix all Parmesan Dressing ingredients; drop by spoonfuls over onion. Cover and refrigerate at least 2 hours to blend flavors but no longer than 24 hours.
  • Just before serving, sprinkle with croutons; toss.

1/3 cup nonfat sour cream
1 teaspoon Worcestershire sauce
1/2 teaspoon hot pepper sauce (such as Tabasco)
1/4 cup crumbled blue cheese (about 1 1/2 ounces)
1 pound supermarket salad bar ingredients (packed separately), including at least 4 vegetables (such as lettuce, spinach, shredded carrots, shredded red cabbage, peas and sliced mushrooms)
1 cup diced ham (about 5 ounces)
4 cherry tomatoes, halved
Chopped nuts (optional)

Steps:

  • Whisk first 4 ingredients in small bowl to blend. Mix in blue cheese. Season dressing to taste with salt and pepper.
  • In 6-cup soufflè dish (preferably clear glass), alternate layers of salad bar ingredients and ham. Spread dressing over; arrange cherry tomato halves and nuts, if desired, atop dressing. Serve immediately or chill up to 8 hours.

1 can water chestnuts, drained and sliced
1 package 10 oz green peas
1 1/2 cups mayo
1 tbsp sugar
2 large tomatoes - optional
4 hard cooked eggs - optional
6 slices bacon - optional
cheddar cheese
Mayo (double this)
1 cup crisco oil
2 egg yolks
1 tbsp cider vinegar
1/2 tsp salt
1/4 tsp sugar
1/8 tsp cayenne pepper
1/2 tsp dry mustard
1 tbsp lemon juice

Steps:

  • Layer vegetable ingredients in salad bowl. Put 1/4 cup oil, egg yolks, vinegar, salt, sugar, pepper and dry mustard in blender. Blend thoroughly and add remaining oil slowly.

1 cups mushrooms, sliced
1 cup frozen green peas, thawed
1 cup carrots, sliced
3 whole hard-boiled egg whites, sliced
6 slices fat-free turkey bacon, cooked and crumbled
1 cup fat free grated cheddar cheese, divided
3/4 cups fat free mayonnaise
1 1/2 teaspoon s lemon juice

Steps:

  • Place lettuce in bottom of a serving bowl, about 8" in diameter. Layer mushrooms on top. Then layer peas and carrots. Arrange egg white slices and bacon over vegetables. Top with half cup cheddar cheese; set aside.
  • In a mixing bowl, combine mayonnaise and lemon juice in a mixing bowl. Spread mixture over top of salad sealing to edge of bowl. Sprinkle with remaining cheese.
  • Cover and chill for 24 hours. Before serving, toss to coat the vegetables.

1 hard boiled egg, chopped

1 tablespoon sugar
1/2 cup sour cream

1 cup grated Cheddar cheese

Steps:

  • Break lettuce in small pieces. Rinse peas in cold water and drain. Lightly toss vegetables and egg. Mix together salad dressing, sugar, sour cream and salt. Spread over vegetables. Sprinkle cheese over top. Refrigerate at least 1 hour.
