1 tablespoon vegetable oil
2 small zucchini, diced (about 2 cups)
1 large onion, chopped (about 1 cup)
2 cups packed coarsely chopped fresh spinach leaves
1 cup frozen whole kernel corn
2 1/3 cups prepared enchilada sauce
12 corn tortillas (6-inch)
2 cups shredded Monterey Jack cheese (about 8 ounces)
Chopped fresh cilantro leaves

Steps:

  • Heat the oven to 350 degrees F.
  • Heat the oil in a 10-inch skillet over medium-high heat. Add the zucchini and onion and cook for 5 minutes or until they're tender. Stir in the spinach and corn. Cook and stir until the spinach is wilted.
  • Spread 1/2 cup enchilada sauce in a 3-quart shallow baking dish. Line the bottom of the baking dish with 6 tortillas, overlapping as needed. Spread with half the remaining enchilada sauce. Top with the vegetable mixture and half the cheese. Top with the remaining tortillas and enchilada sauce.
  • Bake for 20 minutes. Top with the remaining cheese and bake for 5 minutes or until the cheese is melted. Sprinkle with the cilantro before serving, if desired.

I got this recipe from Canadian Living magazine a few years ago. It is a delicious layered casserole combination of creamy mashed potatoes, spinach and squash, that's a great comfort food laced with zingy fresh ginger. I often receive potluck invitatiions with the requests to bring "That layered thing."

8 medium potatoes, about 3 lbs
4 tablespoons butter, at room temperature
1 cup light sour cream or 1 cup regular sour cream
1 teaspoon salt
1 (300 g) package thawed frozen spinach, preferably chopped
2 green onions, sliced thinly
1 egg, lightly beaten
1 (300 g) package frozen cooked squash, thawed
1 tablespoon finely grated fresh ginger or 1/2 teaspoon dried ginger
1 cup grated cheddar cheese

Steps:

  • Peel potatoes, cut in half.
  • Place in a large saucepan and cover with boiling or hot water.
  • Cover saucepan and bring back to the boil.
  • Reduce heat to medium and continue boiling gently, partially covered, until potatoes are very tender, about 20 to 30 minutes.
  • Drain potatoes and mash.
  • Stir in 2 TBS butter, sour cream and 1/2 tsp salt.
  • You should have about 6 cups.
  • Squeeze handfuls of spinach until fairly dry.
  • Coarsely chop if not already chopped.
  • Place in a medium size bowl.
  • Stir in onions, egg,1 TBS butter and 1/4 tsp salt.
  • Drain off any liquid from thawed squash.
  • Stir squash with 1 TBS butter, ginger and 1/4 tsp salt.
  • Preheat oven to 350*F.
  • Butter a large caserole dish that will hold at least 8 cups or coat with cooking spray.
  • Spoon one third of the potato mixture into buttered dish and spread til smooth.
  • Evenly spread with all of the squash mixture.
  • Spread with half of remaining potatoes, then all of spinach mixture.
  • Top with a layer of remaining potatoes, then sprinkle with cheese.
  • Bake uncovered, in center of oven until hot and cheese is lightly golden, from 55 to 65 minutes.
  • To test if hot right through, plunge a table knife into center of casserole and hold for 15 seconds.
  • Then withdraw knife and lightly touch to see if it has become very warm.

2 cups sliced carrots
1 small onion chopped
2 cups sliced celery
1/2 green pepper cut in stripes
1 1lb. can cut green beans, drained
31/2 cups canned tomatoes
3 Tbs. tapioca
2 Tbs. sugar
1 tsp. salt
1/4 tsp. pepper
1/3 cup cracker crumbs
2 Tbs. butter

Steps:

  • In sauce pan, add carrots and a small amount of water. Bring to a boil and cook 2 mins., drain. Arrange vegatables in layers as listed in a buttered casserole. Combine tomatoes, undrained with tapioca, sugar and seasonings. Pour over vegatables. Bake 350 covered for 45 mins. Uncover Sprinkle with crumbs & butter mixture. Bake another 45 mins. Allow casserole to stand at room temp. for 5 mins. to thicken before serving.

How to make Italian Layered Vegetable Casserole

2 medium eggplants
1 large or 2 medium zucchini, sliced thinly (or 2-4 cups sliced vegetables of your choice, such as mushrooms)
chopped parsley, garnish
1/2 small onion, minced
2 cloves garlic, minced
1 28-ounce can diced tomatoes
2 tablespoons tomato paste
1 teaspoon oregano
1 teaspoon basil
1/4 teaspoon ground black pepper
1 teaspoon sugar or other sweetener (optional)
1/2 teaspoon salt (or to taste)
1 15-ounce can great northern beans, rinsed and drained
1 tablespoon nutritional yeast
1 teaspoon basil
1/2 teaspoon oregano
1/8 teaspoon cayenne
1/2 teaspoon salt (or to taste)
1 cup spinach, firmly packed

Steps:

  • Instructions Peel the eggplants, if desired (this makes the casserole easier to cut). Cut into 1/4-inch slices. Pre-cook the slices until they are partially dehydrated:
  • To microwave, cover the bottom of the microwave with two layers of paper towels. Place eggplant slices in a single layer and cook on high power for 8-10 minutes, until reduced in size and beginning to shrivel. Repeat with remaining eggplant.
  • To pre-cook in the oven, place on a silicone baking mat or parchment-covered baking sheet. Bake at 450 F until slices are shriveled but not brown or crispy. Remove immediately from paper towels or baking sheet and place on a plate. While the eggplant is cooking, prepare the sauce, if you're making it from scratch. Sauté the onion in a non-stick skillet until softened; add the garlic and cook for another minute. Set aside. Remove 1/2 cup of the diced tomatoes and set aside. Put remaining tomatoes and sauce ingredients into blender and blend until smooth. Add reserved tomatoes and onions to blender and stir to combine (do not blend). Prepare the filling by placing all ingredients into a food processor and processing until smooth. Preheat oven to 425. Spray a mid-sized rectangular casserole dish (I used 11×7-inch) with canola oil or non-stick spray. Put a thin layer of sauce in the bottom of the dish-just barely enough to cover the bottom. Arrange 1/3 of the eggplant slices over the sauce. Spread 1/2 of the bean filling over the eggplant, and put half of the zucchini or other vegetables over the filling. Drizzle lightly with sauce. Repeat eggplant, filling, zucchini, and sauce. Place the final layer of eggplant over the top, and pour the remaining sauce evenly over it, spreading it to cover the eggplant completely. Bake uncovered for about 30 minutes. Check to make sure that zucchini is cooked and sauce has thickened; if not, add more time. Remove when done and allow to sit for a few minutes before serving. Sprinkle with chopped parsley as garnish.

12 corn tortillas (6 inch)
3 Tbsp. oil, divided
1 onion, chopped, divided
2 cans (15 oz. each) tomato sauce
2 tsp. dried Mexican oregano
1-1/2 lb. red potatoes (about 5), cooked, cut into 1/2-inch cubes (about 4 cups)
1 zucchini, chopped
1 pkg. (10 oz.) frozen corn
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed
1/4 cup milk
3 cups KRAFT Mexican Style Finely Shredded Four Cheese
1 Tbsp. chopped canned chipotle peppers in adobo sauce

Steps:

  • Heat oven to 350ºF.
  • Heat large heavy skillet on medium-high heat. Brush tortillas evenly with 2 Tbsp. oil. Add to skillet, in batches; cook 10 to 15 sec. on each side or just until softened. (Do not overcook. Tortillas should still be pliable.) Drain on paper towels. Cut 6 tortillas in half.
  • Heat 1 tsp. of the remaining oil in medium saucepan on medium heat. Add 1/4 cup onions; cook 3 min., stirring frequently. Stir in tomato sauce and oregano; simmer on low heat 10 min., stirring occasionally.
  • Meanwhile, heat remaining oil in large skillet. Add remaining onions; cook 3 min., stirring frequently. Add potatoes, zucchini and corn; cook 5 min., stirring frequently. Add cream cheese and milk; cook and stir 3 to 5 min. or until cream cheese is completely melted and sauce is well blended. Remove from heat.
  • Spray 13x9-inch baking dish with cooking spray. Cover bottom of prepared dish with 2 whole tortillas and 4 tortilla halves; top with 1 cup of the tomato sauce mixture, half the vegetable mixture and 1 cup cheese. Repeat layers. Top with remaining tortillas, 1 cup of the remaining tomato sauce mixture and remaining cheese; cover. Reserve remaining tomato sauce mixture for later use.
  • Bake 30 min. or until heated through. Microwave chipotle peppers and reserved tomato sauce mixture in microwaveable bowl on HIGH 2 min.; stir. Serve with the casserole.

1 medium eggplant (about 1 pound), peeled and thinly sliced
salt
3 medium all-purpose potatoes, (about 1 pound), peeled, and thinly sliced
Freshly ground black pepper
2 medium onions
1 red bell pepper, cored and thinly sliced
1 green bell peppers, cored and thinly sliced
3 medium tomatoes, chopped
6 basil leaves, torn into bits
1/3 cup olive oil

Steps:

  • 1 Peel the eggplant and cut it into thin crosswise slices. Layer the slices in a colander, sprinkling each one generously with salt. Place the colander over a plate and let stand 30 to 60 minutes to drain. Rinse the eggplant slices and pat them dry. 2 Place a rack in the center of the oven. Preheat the oven to 375°F. Generously oil a 13 × 9 × 2-inch baking dish. 3 Make a layer of overlapping potato slices on the bottom of the dish. Sprinkle with salt and pepper. Cover the potatoes with a layer of eggplant and sprinkle with salt. Add layers of onions, peppers, and tomatoes. Sprinkle with salt and pepper. Scatter the basil over the top. Drizzle with the olive oil. 4 Cover with foil. Bake 45 minutes. Carefully remove the foil. Cook 30 minutes more or until browned and the vegetables are tender when pierced with a knife.
