6 hard boiled eggs, sliced
1 lb bacon, fried crisp and crumbled
2 cups chopped lettuce
1 red onion, thinly sliced into rings
1 (10 ounce) package frozen peas
1 teaspoon salt
1 teaspoon sugar
1 teaspoon pepper
1 cup salad dressing (Miracle Whip)
1 cup mayonnaise
1/2 lb swiss cheese, grated

Steps:

  • In large bowl,layer 1/2 the spinach,eggs,bacon,lettuce,onion / and top with remaining spinach.
  • Combine salad dressing and mayonnaise.
  • Spread over salad and top with cheese.
  • Chill 2-3 hours .

1/2 cup thinly sliced radishes

5 slices bacon, crisply fried and crumbled
1/2 cup Spanish peanuts

Steps:

  • Remove and discard spinach stems. Rinse leaves well; drain and pat dry. Tear spinach into bite-sized pieces and arrange evenly in salad bowl. Evenly layer cucumber slices, radish, green onion and eggs. Spread dressing over top. Cover; chill up to 24 hours. Just before serving, sprinkle with bacon and peanuts.

1 cup milk
1 cup mayonnaise
1 (1 ounce) package ranch dressing mix

2 cups shredded red cabbage
1 cup cherry tomatoes, or more to taste

Steps:

  • Heat a skillet over medium heat; cook and stir bacon until crispy, 7 to 10 minutes. Drain on a paper towel-lined plate.
  • Bring a large pot of lightly salted water to a boil. Cook tortellini in the boiling water until tender yet firm to the bite, 3 to 4 minutes; drain and run under cold water.

2 to 3 bunches of fresh spinach, washed and torn into small pieces. i prefer baby spinach torn.
5 hard boiled eggs chopped
1/3 to 1/2 pound boiled ham, sliced
1/2 pound swiss cheese, cut in strips
1 small red onion sliced thin, or 1 bunch of green onions chopped or mix both
1 package frozen peas, thawed but not cooked
1/2 pound bacon, cooked crisp and crumbled

salad dressing recipe:
1 cup of sour cream
1 pint of best foods mayonnaise
2 teaspoons sugar
salt and pepper to taste

Steps:

  • 1. MAKING THE SALAD: Combine the sour cream, mayonnaise, sugar and salt and pepper to taste, whisk and set aside. Note: This recipe may be cut in half and put in an 8 X 8 glass baking dish. You will make two layers.
  • 2. In a casserole or lasagna dish, put the first layer of spinach.
  • 3. Add cheese, onions, eggs, ham, peas.
  • 4. Cover with 1/2 of the dressing. Repeat layers of ingredients, finishing with the rest of the dressing on top.
  • 5. REFRIGERATE: Cover and refrigerate overnight to blend the flavors. Just before serving sprinkle the crisp bacon on top. Cut in squares to serve.

I got this recipe at a company picnic in the Colorado Rockies years ago. I was impressed by the fact that it was a "make ahead" recipe, that it would last days in the refrigerator and was so light and fresh tasting ---- but, particularly, because it was such a nice accompaniment to the Brats and Ribs that were being grilled and were so rich and spicy. There are a lot of layered salads on "zaar" but none quite like this. This is an excellent salad and so easy to prepare ahead and take to a party!

1/2 head iceberg lettuce
1 (10 ounce) bag fresh spinach
4 hardboiled egg, chopped
1 bunch chopped green onion (tops too)
1 lb crisp cooked bacon, crumbled

salt and pepper
1 cup grated swiss cheese
1 (7 ounce) can water chestnuts, sliced

1/2 tsp. dill weed
1/2 tsp. sugar
4 slices OSCAR MAYER Bacon, cooked, crumbled

Steps:

  • Layer spinach, 1 cup cheese, mushrooms, onions and peas in 2-1/2-qt. bowl.
  • Mix mayo, dill and sugar; spread over salad, completely covering top of salad. Refrigerate 5 hours.
  • Top with remaining cheese and bacon before serving.

1 (8-ounce) package cheese tortellini, uncooked
2 cups red cabbage, shredded
6 cups spinach leaves, torn
1 cup cherry tomatoes, halved
1/2 cup green onion, sliced
1 (8-ounce) bottle ranch salad dressing
8 slices bacon, crisply cooked and crumbled

Steps:

  • Cook tortellini according to package directions; drain and rinse with cold water. In a clear glass 13"x9" baking pan, layer cabbage, spinach, tortellini, tomatoes and green onion. Pour dressing evenly over top; sprinkle with bacon. Tip: It's easy to make fresh croutons for salads and soups! Toss bread cubes with olive oil and dried herbs or garlic powder as you like. Toast on a baking sheet at 400 degrees for 5 to 10 minutes, until golden.
