3/4 cup milk, scalded and cooled
1 tablespoon sugar
1 package dry yeast
1 cup oleo or Crisco
3 cups flour
1 teaspoon salt
3 egg yolks, beaten
1 teaspoon vanilla
1/2 cup water
1/2 cup sugar
3 tablespoons cornstarch
1 No. 2 can crushed pineapple
2 cups confectioners sugar
3 tablespoons milk
2 tablespoons oleo or butter
1 teaspoon vanilla

Steps:

  • Dissolve sugar and yeast in warm milk
  • Let rise
  • Sift flour and salt
  • Add oleo as for pie cut (cut into flour)
  • Add yeast and egg yolks and mix well
  • Let rise 1 hour
  • Spread half of the dough in a 13" x 9" pan
  • Spread the pineapple mixture over the dough and cool mixture (water, sugar, cornstarch, and pineapple)
  • Pat remaining dough and put over mixture
  • Bake at 350 degrees until light brown, about 30 minutes
  • Mix all the ingredients and heat until thick while continuously stirring
  • Heat the milk, and oleo over low heat stirring until butter melts
  • Add the confectioners sugar and vanilla
  • Spread over cooled cake and sprinkle with nuts right away

My grandmother always kept this cake in the freezer for unexpected company. A nice change of dessert from the usual bar or square recipe. Garnish with icing sugar sprinkled over the top if desired.

2 cups all-purpose flour
½ cup white sugar
2 teaspoons baking powder
¼ teaspoon salt
½ cup unsalted butter
¼ cup milk
1 egg
1 teaspoon vanilla extract
¼ cup butter
2 (8 ounce) cans crushed pineapple, drained and juice reserved
2 tablespoons white sugar
¼ cup cornstarch
½ cup all-purpose flour
¼ cup butter
1 teaspoon vanilla extract
⅓ cup white sugar

Steps:

  • Combine flour, sugar, baking powder, and salt in a bowl. Cut in butter using a pastry cutter or your hands until coarse crumbs form.
  • Whisk milk, egg, and vanilla extract together in a small bowl. Add to flour mixture and knead until just combined, adding a little more flour if too wet or a little more milk if too dry. Divide the dough into thirds; 2/3 will be for the bottom, save 1/3 for the top.
  • Roll 2/3 the dough out onto a lightly floured surface into an 11x15-inch rectangle. Place dough into the bottom of a 9x13-inch baking pan, making sure it comes at least halfway up the sides.
  • Combine pineapple and sugar in a small saucepan and bring to a boil over medium heat, about 5 minutes. Meanwhile, pour reserved pineapple juice into a bowl and add cornstarch; stir until dissolved. Add to the saucepan and stir until thickened, about 5 minutes more. Remove from heat and let filling cool in the refrigerator, about 15 minutes.
  • Scrape filling onto the bottom dough in the baking pan and smooth out.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Roll remaining 1/3 dough out onto a lightly floured surface into a 9x13-inch rectangle. Roll the dough onto the rolling pin and unroll on top of the pineapple filling, making sure edges of the dough reach the edges of the pan.
  • Combine flour and sugar in a small bowl. Add vanilla extract and cut in butter until coarse crumbs form. Sprinkle streusel topping over dough.
  • Bake in the preheated oven for 45 minutes. Remove from oven and let cool on a rack. Cut into 24 squares.

1/2 cup butter, melted
2 1/2 cups graham wafer crumbs
1/2 cup butter, softened
1 1/2 cups icing sugar
2 egg yolks
2 cups whipped cream
1 1/2 cups crushed pineapple, drained

Steps:

  • Mix melted butter and crushed graham wafer crumbs together in 8x8-inch baking pan; reserve 2 tablespoons for top of dessert.
  • Spread remaining crumb mixture evenly in pan. Bake at 350F 10-15 minutes; cool.
  • Mix softened butter, icing sugar and egg yolks together in bowl; mix until smooth and creamy. Spread evenly over cooled crumb base.
  • Mix together pineapple and whipped cream. Spread over above layer. Sprinkle reserved crumbs on top of dessert.
  • Refrigerate at least 1/2 hour before serving.

This is a light refreshing dessert we always had growing up on the 3 holidays. (Thanksgiving, Christmas and Easter) My mom & my aunts would always stay up late cutting up the marshmallows, laughing & talking. I make mine more simply and use the mini marshmallows. :)mmmmmmm Its pretty simple too.

1 (16 ounce) can crushed pineapple in juice
1 (16 ounce) bag mini marshmallows
1 (8 ounce) container Cool Whip

Steps:

  • In a large serving bowl empty bag of marshmallows.
  • Open pineapple and pour over marshmallows, and stir well.
  • Let soak, stirring every couple of hours, to let pineapple juice soak into marshmallows.
  • About an hour before serving, add cool whip, stir well, and place back in refrigerator for flavors to blend.
