1 cup mayonnaise
1/2 cup sour cream
1 tablespoon lemon juice
1 teaspoon lemon zest
1/4 cup parsley leaves
1/4 cup cilantro leaves
1/4 cup basil leaves
2 (8.8 oz) packages cooked beets, diced
3 to 4 cups chopped iceberg lettuce
3 to 4 cups chopped romaine lettuce
3 ribs celery, thinly sliced
8 ounces blue cheese, crumbled
10 ounces frozen peas, thawed
Freshly ground black pepper
4 slices bacon, cooked until crispy and crumbled

Steps:

  • In the bowl of a food processor, add mayonnaise, sour cream, lemon juice and zest, and herbs. Pulse until smooth. Refrigerate until you are ready to use.
  • Layer your salad in a trifle dish. Start with the beets on the bottom in an even layer. Next add a layer of each lettuce, celery, blue cheese, and peas. Spread the dressing over the top of the salad and season with pepper to taste. Top with bacon. Serve immediately or refrigerate until ready to serve.

This delightful layered salad is filling and fresh at the same time. It is so versatile that it works for any time of the year--July 4th or Christmas. It's one of the better ways I get my kids to 'eat their peas'!

1 cup creamy salad dressing (such as Miracle Whip®)
2 tablespoons white sugar
5 (15 ounce) cans baby peas, drained
½ cup finely chopped green bell pepper
1 head iceberg lettuce, torn into bite-sized pieces
2 cups shredded Cheddar cheese
bacon bits

Steps:

  • Stir together salad dressing and sugar in a large salad bowl or 9x13 glass baking dish until sugar is dissolved. Add peas and chopped green pepper, if desired, and mix lightly to combine. Spread the pea mixture evenly across the bottom of the dish.
  • Spread the lettuce in an even layer over the pea mixture, and top the lettuce with a layer of the Cheddar cheese. Sprinkle bacon bits over the cheese.
  • Chill for at least 8 hours or overnight to blend flavors.

1 head lettuce (broken)
3/4-1 cup green onion, chopped
1/2-3/4 cup celery, chopped
1 (10 ounce) package frozen green peas (defrost but DO NOT cook!)
1/2-1 cup green bell pepper, chopped
1 cup light mayonnaise
1 cup light sour cream
2 -3 tablespoons sugar
10 slices turkey bacon
1 -2 cup cheddar cheese, grated (I use 2%)
parmesan cheese

Steps:

  • Break salad and put in bowl.
  • Chop green onion, celery, bell pepper.
  • Dethaw green peas.
  • Cook bacon and crumble.
  • Mix Mayo, Sour cream and sugar together (this is your "mayo mixture" referenced below.).
  • Grate the cheddar cheese.
  • Layer ingredients in this order: (bottom to top).
  • -Lettuce.
  • -Green onion.
  • --Celery.
  • -Green peas.
  • -Green pepper.
  • -Mayo mixture.
  • -Turkey bacon.
  • -Cheddar cheese.
  • -Sprinkle the top with Parmesean cheese.

1 small green bell pepper, chopped

Finally I eat peas! I really hate peas, When I went to a bbg a few summers ago my girlfriend made this salad and everyone was digging into this with bread and nachos! Took me a little convincing till I finally tried! Oh my I love! So happy I finally can eat peas, but still this is the only way!

3 chopped celery stalks

2 c shredded mozz
