One of my favorite things to give as a gift is a recipe in a jar. I have loads of soups, dips, cookies and breads. Here is one of my favorite.

Number Of Ingredients 9

3 Tbsp curry powder
3/4 tsp garlic powder with parsley
1 tsp ground ginger
1/2 tsp kosher salt
1/2 tsp freshly ground black pepper
1/2 c onion flakes, dehydrated
2 Tbsp parsley flakes
1 1/2 c red lentils
1/4 c coconut flakes, dried , unsweetened

Steps:

  • 1. FOR THE JAR: Combine curry, ginger, salt and pepper in a small bowl. Pour into a 1 pint jar with a wide mouth and tight fitting lid.
  • 2. In the same bowl, combine, onion and parsley and mix with 1/2 lentils pour into jar. Mix 1/2 cup lentils and coconut and pour into jar. Top off with remaining 1/2 cup lentils. Pack down after each layer. Seal jar. Cover jar lid as desired and attach a gift tag with instructions with raffia or ribbon.
  • 3. GIFT TAG INSTRUCTIONS: 1 tablespoon vegetable oil 1 jar Curried Coconut Lentil soup mix 48 ounces chicken broth, regular or low- sodium 2 cups water Heat oil in large saucepan over medium hear. Add container of jar, cook and stir for 1 minute or until spices are fragrant. Add broth and water; bring to a boil over high heat. Reduce heat; simmer uncovered, 20 minutes or until lentils are tender. Garnish with coconut if desired. Makes 4 servings.

½ cup barley
½ cup dried split peas
½ cup uncooked white rice
½ cup dry lentils
2 tablespoons dried minced onion
2 tablespoons dried parsley
2 teaspoons salt
½ teaspoon lemon pepper
2 tablespoons beef bouillon granules
½ cup uncooked alphabet pasta
1 cup uncooked twist macaroni

Steps:

  • In a wide mouth 1 quart jar, layer the barley, peas, rice and lentils. Then layer around the edges the onion, parsley, salt, lemon pepper, bouillon and the alphabet pasta. Fill the rest of the jar with the twist macaroni.
  • Seal and attach a gift card. The gift card should read: Add contents of jar to 3 quarts of water, 2 stalks of chopped celery, 2 sliced carrots, 1 cup of shredded cabbage (optional) and 2 cups diced tomatoes. Over medium low heat, cover and simmer about 1 hour, or until vegetables are tender.

½ cup dry split peas
⅓ cup beef bouillon granules
¼ cup pearl barley
½ cup dry lentils
¼ cup dried onion flakes
2 teaspoons dried Italian seasoning
½ cup uncooked long-grain white rice
2 bay leaves
½ cup uncooked alphabet pasta

Steps:

  • In a 1 1/2 pint jar, layer the split peas, bouillon, barley, lentils, onion flakes, Italian seasoning, rice, and bay leaves. Wrap the pasta in plastic wrap, and place in the jar. Seal tightly.
  • Attach a label to the jar with the following instructions: Friendship Soup ADDITIONAL INGREDIENTS: 1 pound ground beef, black pepper to taste, garlic powder to taste, 1 (28 ounce) can diced tomatoes - undrained, 1 (6 ounce) can tomato paste, and 3 quarts water. TO PREPARE SOUP: Remove pasta from top of jar, and set aside. In a large pot over medium heat, brown beef with pepper and garlic; drain excess fat. Add diced tomatoes, tomato paste, water, and soup mix. Bring to a boil, then reduce heat to low. Cover, and simmer for 45 minutes. Stir in the pasta, cover, and simmer 15 to 20 minutes, or until the pasta, peas, lentils and barley are tender.

1/4 cup dried minced onion
2 tablespoons dried parsley flakes
2 teaspoons ground allspice
2 teaspoons ground cumin
2 teaspoons ground turmeric
1-1/2 teaspoons salt
1 teaspoon garlic powder
1 teaspoon ground cardamom
1 teaspoon ground cinnamon
1 teaspoon pepper
1/2 teaspoon ground cloves
2 packages (1 pound each) dried red lentils
ADDITIONAL INGREDIENTS (for each batch):
1 medium carrot, finely chopped
1 celery rib, finely chopped
1 tablespoon olive oil
2 cans (14-1/2 ounces each) vegetable broth

Steps:

  • Combine the first 11 ingredients. Place 1-1/3 cups lentils in each of four 12-oz. jelly jars. Evenly divide onion mixture among small cellophane bags; place sealed bags inside jars, on top of lentils. Store in a cool, dry place up to 6 months. Yield: 4 batches., To prepare one batch: Rinse lentils and drain. In a large saucepan over medium-high heat, saute carrot and celery in oil until tender. Add lentils, onion mixture and broth. Bring to a boil. Reduce heat; simmer, covered, until lentils are tender, 10-15 minutes.

1 pint glass jar with lid
1 cup dried red lentils, sorted
2 tablespoons julienne-cut smoked sun-dried tomatoes (from 3-oz package)
2 tablespoons cooked real bacon pieces or bits (from 3-oz jar)
1 bay leaf
1/2 cup dried brown lentils, sorted
2 teaspoons dried minced onion
1 tablespoon parsley flakes
1 teaspoon dried basil leaves
1 carton (32 oz) Progresso™ chicken broth (4 cups)
1 cup water
3/4 cup sliced carrots, if desired

Steps:

  • In glass jar, place 1/2 cup of the red lentils; top with sun-dried tomatoes and bacon pieces. Place bay leaf, stem side down, against side of jar. Layer brown lentils over bacon; top with dried minced onion, parsley flakes, basil and remaining 1/2 cup red lentils. Cover; refrigerate until ready to make soup or up to 2 weeks.
  • In 2-quart saucepan, place contents of jar. Stir in broth, water and carrots. Heat to boiling over medium heat; reduce heat to low. Cover; simmer 30 to 35 minutes, stirring occasionally, until lentils are tender. Remove bay leaf before serving.
