LAVENDER LEMONADE TEA - HOT OR ICED
A favorite spring and summertime drink of mine, using fresh or dried lavender and lemons from the garden. Wonderfully refreshing! May be served cold over ice, or hot with honey. Adapted from "The Ultimate Liquor-Free Drink Guide" by Sharon Tyler Herbst.

Steps:
- Bring 1 cup water to a boil. Add the lavender and lemon zest; cover and steep for 1 hour.
- Strain the lavender mixture into a 2-quart or larger pitcher. Add lemon juice, sugar and remaining 3 cups water; stir until sugar dissolves.
- Serve in tall, ice-filled glasses, garnished with lemon slices (or serve hot with honey, as you wish). Top up with additional water, if desired, or to taste.

Lavender being so easy to grow, I love playing around with it. From making bath oils, candles, soaps to using in recipes. This drink is so refreshing on a hot hectic day. Cools you down while relaxing yourself.

- 1. Bring 2 cups water and two tea bags to a boil in pan. Turn heat off, add lavender and lemon zest. After three mins remove tea bags. Let steep for 1 hour. Strain in large pitcher and stir in lemon juice sweetner, and 2cups water. Serve over ice with splash of sparkling water or sparkling wine.

Steps:
- In a large saucepan, bring 7 cups water to a low boil.
- In a bowl, carefully pour 4 cups of the water over the lavender and let steep for 10 minutes before straining.
- Pour the remaining 3 cups water over the sugar and stir until dissolved.
- Combine the lavender and sugar mixtures in a pitcher and stir in the lemon juice. Serve over the ice.
