1 cup white sugar
1 tablespoon fresh lavender blossoms

Steps:

  • Combine water, sugar, and lavender blossoms in a small saucepan. Bring to a boil, stirring until sugar dissolves. Simmer for 1 minute. Remove from heat and let syrup steep, about 30 minutes.
  • Pour syrup into a sterilized glass jar through a mesh strainer to remove blossoms; let cool.

1 cup frozen blueberries
¾ cup sugar
¼ cup honey
1 ½ tablespoons dried lavender buds

Steps:

  • Combine water, blueberries, sugar, and honey in a saucepan over medium-high heat. Bring to a boil, then reduce temperature to a light simmer. Add in lavender, stir to combine, and simmer for 10 minutes.
  • Let mixture cool for 10 minutes, then strain into a jar using a fine mesh strainer. Use the back of a spoon to mash the berries through the strainer to release juices. Refrigerate for up to 1 month.

A refreshing summer drink made with lavender agave simple syrup.

1 ½ cups water
1 ½ cups agave nectar
1 ½ cups dried lavender blossoms
¼ cup mint leaves
2 ½ cups pineapple juice
ice cubes
2 cups club soda, or to taste
8 slices lime
8 sprigs mint

Steps:

  • Bring water to a boil in a small saucepan. Reduce heat to low; whisk in agave nectar until dissolved. Remove from heat.
  • Stir lavender blossoms into the saucepan. Let syrup steep, about 15 minutes. Strain into a bowl through a strainer lined with cheesecloth.
  • Refrigerate syrup until chilled, at least 2 hours.
  • Pour 1 1/2 cup syrup into a glass measuring cup. Add mint leaves; mash gently with a cocktail muddler. Mix in pineapple juice.
  • Fill a pitcher with ice. Pour in pineapple juice mixture. Top off with club soda and stir. Serve garnished with a slice of lime and sprig of mint.

2 cups water
2 cups granulated sugar
2 tablespoons dried lavender blossoms

Steps:

  • Bring ingredients to a boil in saucepan, stirring so that the sugar dissolves. Reduce heat and continue stirring until all the sugar has dissolved.
  • Remove from heat and let steep for 30 minutes.
  • Remove lavender blossoms and allow syrup to cool.
  • Store in an airtight container and keep refrigerated.
