1 cup lavender flowers
2 cups cold water
1 cup lemon juice
1 cup sugar

Steps:

  • Place the lavender in a pitcher; pour the boiling water over the lavender; cover with plastic wrap and allow to steep 10 minutes; strain and discard the lavender from the water and return the water to the pitcher. Add the cold water, lemon juice, and sugar to the pitcher and stir until the sugar dissolves. Refrigerate until serving.

6 to 7 cups water
1 cup sugar
1-1/2 cups fresh squeezed lemon juice (about 6 large lemons)
2 tablespoons dried lavender flowers
1 teaspoon vanilla extract
Ice cubes

Steps:

  • Bring 2 cups water and sugar to a boil. Remove from the heat; add lavender. Cover and let stand for 2-4 hours., Strain, discarding lavender. Stir in lemon juice, vanilla and remaining water. Chill; serve over ice.

4 cups water (divided use)
1/4 cup organic fresh edible lavender, well rinsed (or 1-2 tablespoons dried lavender)
1 fresh lemon, zest of
1 cup fresh lemon juice
1 cup sugar (preferably superfine)
lemon slice, to garnish

Steps:

  • Bring 1 cup water to a boil. Add the lavender and lemon zest; cover and steep for 1 hour.
  • Strain the lavender mixture into a 2-quart or larger pitcher. Add lemon juice, sugar and remaining 3 cups water; stir until sugar dissolves.
  • Serve in tall, ice-filled glasses, garnished with lemon slices (or serve hot with honey, as you wish). Top up with additional water, if desired, or to taste.

1 ½ cups lemon juice
3 cups water
1 ¼ cups white sugar
2 tablespoons dried lavender flowers
1 ½ teaspoons dried hibiscus petals

Steps:

  • Mix 3 cups water and lemon juice in a large pitcher. Refrigerate until chilled.
  • Bring remaining 3 cups water, sugar, lavender, and hibiscus petals to a boil in a saucepan. Reduce heat to medium-low and simmer for 10 minutes. Remove from heat and allow to cool. Strain lavender and hibiscus from liquid and pour into pitcher with lemon water. Refrigerate until cold.

4 lemons
1/2 cup dried lavender
1/2 cup raw honey

Steps:

  • Using a vegetable peeler, remove zest from two lemons, leaving white pith behind. Squeeze all of the lemons for 2/3 cup juice and set aside. In a large pot bring 5 1/2 cups of water and zest to a boil over high heat. Stir in the lavender. Partially cover the pot, lower the heat, and simmer for 10 minutes.
  • Meanwhile, place a large strainer lined with cheesecloth or a damp paper towel over another pot or heat-proof bowl. Strain tea, pressing on herbs to extract all liquid. Stir in honey until dissolved. Stir in lemon juice. Let cool completely, about 45 minutes. Fill four tall glasses with ice. Pour tea over ice and serve immediately.

¼ cup dried lavender
2 cups boiling water
¾ cup white sugar
8 lemons

  • Place ice cubes into a 2 quart pitcher. Place the lavender into a bowl, and pour boiling water over it. Allow to steep for about 10 minutes, then strain out the lavender and discard. Mix the sugar into the hot lavender water, then pour into the pitcher with the ice.
  • Squeeze the juice from the lemons into the pitcher, getting as much juice as you can. Top off the pitcher with cold water, and stir. Taste, and adjust lemon juice or sugar if desired. Pour into tall glasses, pull up a lawn chair and a good book, and relax!

1/2 cup honey
1 tablespoon dried lavender buds
3 sprigs fresh lavender
1 cup fresh lemon juice
4 ounces ice cold vodka, optional
Frozen grapes, for serving

Steps:

  • Combine the honey, lavender buds and 3 cups water in a saucepan over medium heat. Bring just to a boil, stirring to dissolve the honey. Set aside and allow to cool completely, then cover and refrigerate overnight.
  • Add the lavender sprigs and the lemon juice to a large measuring cup and muddle to release the lavender oils. Strain the honey-lavender water and combine it with the muddled lemon juice. Let sit for 15 minutes before removing the lavender sprigs. Divide the lemonade between two 2-cup to-go containers. Refrigerate until ready to serve.
  • Divide the vodka, if using, between the containers. Add some frozen grapes to keep the drink cold! Serve.

1 heaping tablespoon food-grade dried lavender
1 cup fresh lemon juice (6 to 8 lemons), plus lemon slices, for garnish
1 bottle chilled cava or other sparkling white wine such as prosecco or champagne

  • Put the sugar and 1 cup of water in a small pot and bring just to a simmer, stirring occasionally to dissolve the sugar. Remove from the heat, stir in the dried lavender, cover and let steep for at least 20 minutes.
  • Pour the lavender syrup through a fine-mesh strainer. The syrup can be made up to 3 days in advance and kept cold in the refrigerator.
  • In a large pitcher, add the lemon juice, lavender syrup, 2 cups of water and ice and stir to combine. Taste, adding more water to reach the desired sweetness.

For the simple syrup:
1/2 cup firmly packed mint leaves
3 ten inch sprigs of lavender (flowers plus leaves and stems)
2 cups of sugar
2 cups of water
For the lemonade:
1 lemon, juiced, about 1/4 cup
1 to 2 tablespoons of lavender mint syrup
ice
water or sparkling water
mint sprig for garnish

Steps:

  • For the simple syrup: Place the sugar and water in a saucepan and bring to a low boil over medium high heat, stiring gently to dissolve the sugar. Ball up the lavender in your hands to bruise the leaves and release the oils slightly. Add the bruised lavender and the mint leaves to the sugar syrup, reduce the heat to medium low and simmer for 10 minutes. Remove from the heat and let cool to room temperature. Strain the syrup, discarding the lavender and mint, and pour into a plastic squeeze bottle. For the lemonade: Fill a tall glass halfway with ice, add the lemon juice, lavender-mint syrup, and enough water to cover. Stir, garnish with the mint sprig and enjoy!
