This spring-inspired cocktail riffs on the Prohibition gin classic, the Bees Knees. Make a quick blueberry infusion for your gin of choice, then add lemon, lavender simple syrup, and honey for a satisfyingly sweet and tart floral gin cocktail.

2 oz blueberry-infused gin ((infusion instructions below))
1 oz lemon juice
¾ oz lavender simple syrup ((I used Hipstirs Lavender Haze))
¼ oz honey syrup

Steps:

  • Combine all ingredients in a cocktail shaker filled about 3/4 with ice.
  • Shake until chilled, then strain into a cocktail glass and garnish with blueberries.

Plymouth gin has a slightly floral nature. We accentuated it with dried lavender, creating a fast and versatile infusion with many possibilities. This infusion is visually stunning-the herb colors the gin with a slight hue of dark lavender. We use it as the base for our Provençal cocktail (page 49) and recommend it for making a lavender fizz or even an Aviation cocktail (page 63) made with lemon juice, maraschino liqueur, and infused gin.

2 teaspoons organic dried lavender
1 (1-liter) bottle Plymouth gin

Steps:

  • Place the lavender in a small saucepan over low heat. Add 2 cups of the gin and bring to a boil. Immediately remove from the heat and allow to cool. Add the remaining gin. Strain the mixture through cheesecloth into a bottle and discard the lavender. Store at room temperature away from sunlight. Will keep indefinitely.

And we've given this classic drink a floral, Provençal twist by adding lavender. The result is unexpected and delicious: a perfect balance of sharp, fragrant, sweet, and strong.

Number Of Ingredients 5

1/4 cup hot water
1 teaspoon dried lavender blossoms*
1/4 cup honey
6 tablespoons gin
2 tablespoons lemon juice

Steps:

  • Mix hot water and dried lavender blossoms in bowl. Let steep 5 minutes. Whisk in 1/4 cup honey. Strain into another bowl. Add 3 tablespoons of the honey syrup, gin, and lemon juice; strain into cocktail shaker with ice. Shake well and strain into 2 chilled Martini glasses.
