If you like meatloaf, you will love this version of it. Again I reinvented the classic to suit my low-carb diet. It really is delicious and you can't tell it's not the real deal!

Steps:
- Mix all ingredients together with hands and mold into a loaf.
- Bake on pizza sheet for 1 hour on 350°F or until cooked through, about 45 minutes into cooking process.
- Cover with desired amount of low-carb barbecue sauce and finish cooking.

LOW CARB MEATLOAF
After lots of tweaks, here is my final version of Low Carb Meatloaf. It turns out very moist. The recipe also contains low carb ketchup.

Steps:
- Preheat oven to 350 degrees.
- Mix ketchup ingredients together and set aside. Thickness can be adjusted with more or less water. I used 1 packet of an aspartame sugar substitute but feel free to use your preferred sweetener.
- Beat eggs slightly. Mix with all the meatloaf ingredients except the prosciutto and provolone. Press into a 9x13 rectangle. Lay the prosciutto on top then layer on the provolone slices (I used 6 slices of provolone). Roll up jelly roll style and place in pan/baking dish. Top with half the ketchup.
- Bake at 350 degrees for 1 hour 15 minutes. Pour off grease and let sit for 5 minutes. Serve with remaining ketchup.

LOW CARB MEAT LOAF
When we were on the "low carb" kick, I came up with this deviation from a classic meat loaf. This takes some time to cook, but is well worth the time. The surprise here is the usage of Toasted Wheat Bran instead of bread crumbs.

Steps:
- Combine beef, eggs, milk, soup mix, steak sauce, wheat bran and 3/4 of the tomato sauce in a large bowl. I squish it all together with my freshly washed hands -- gets them kinda messy!
- Place meat mixture in an oven proof pan, pour remaining tomato sauce on top and spread it around.
- Cover and bake in a preheated to 350 degree for 1 hour.
- Uncover and bake for another 15 - 30 minutes or until brown on top.
- Remove from oven and let set for a few minutes.
