There are a lot of Guacamole recipes here. I saved this one from Parade magazine years ago and is in my opinion the best I have tried.

3 ripe avocados, pitted and peeled
2 tablespoons fresh lime juice
1/4 cup sour cream
1/4 teaspoon ground cumin
3 dashes Tabasco sauce
3 ripe plum tomatoes, seeded and diced
1/4 cup diced red onion
1/4 cup chopped fresh cilantro leaves or 1/4 cup flat leaf parsley
salt and pepper

Steps:

  • Coarsely mash the avocados in a bowl with the lime juice. Stir in remaining ingredients.

Simple ingredients in perfect proportion make a this dip a crowd-pleasing favorite for any event. We decided not to use tomato in ours -- it makes the guac watery -- and included both onion and garlic for extra zip. A healthy dose of fresh lime juice balances and brightens the flavors.

1/2 small red onion, diced small
1 tablespoon distilled white vinegar
4 ripe Hass avocados
1/4 cup lime juice (about 2 limes)
1 jalapeno, minced (seeds and membranes included if you prefer heat or removed for a milder version)
1 clove garlic, grated
1 teaspoon kosher salt
1/2 cup lightly packed cilantro leaves, finely chopped (about 1/4 cup finely chopped)
Tortilla chips, for serving

Steps:

  • Put the diced onion into a small strainer and rinse under cold running water. Transfer to a small bowl and cover with 1 cup cold water. Stir in the vinegar and let sit for 10 minutes.
  • Slice the avocados in half, remove the pits and scoop the flesh into a medium bowl. Pour the lime juice over the avocado. Using a fork or potato masher, mash the avocado until creamy with some chunks remaining. Drain the onions well and add to the bowl, along with the jalapeno, garlic, salt and cilantro. Stir to combine.
  • Serve immediately with tortilla chips. Or press a piece of plastic wrap directly against the surface of the guacamole to prevent discoloration and refrigerate until ready to serve.

EASY GUACAMOLE WITH LAWRY'S

Quick, easy sweet and salty guacamole - we like to use big chunks of the veggies in ours - its up to you : ) Cooking time is refrigeration time. Best with Tostitos Gold chips if you ask me : )

2 avocados, mashed
2 medium tomatoes, chunks
1/2 red onion, chunks
2 limes, juice of
Lawry's Seasoned Salt (to taste)

Steps:

  • Peel and seed avocados; place in bowl.
  • Chop red onion in large chunks; place in bowl with avocado and mash together until you arrive at the consistency you like.
  • Chop tomatos into chunks and add to avocado mixture, mix lightly.
  • Juice two limes into the bowl (real limes work much better than juice).
  • Add Lawry's Seasoning to taste - I usually give two or three good shakes.
  • Refrigerate at least a half hour, stir and serve!

  • Coarsely mash the avocados in a bowl with the lime juice. Stir in all the remaining ingredients.Makes 3 cups. Per 2 tablespoons: 50 calories, 3g carbohydrate, 1g protein, 4g fat, no cholesterol.
