In this tian -- a French shallow casserole -- a colorful assortment of squash slices are paired with fresh tomatoes.

Number Of Ingredients 8

1 1/4 pounds assorted squash, such as ‘Costata Romanesco,’ patty pan, yellow, green, and black, sliced 1/8 inch thick
2 medium ripe tomatoes (1 pound), sliced 1/8 inch thick
3 tablespoons olive oil
5 tablespoons homemade or low-sodium canned chicken stock
Salt and freshly ground pepper
2 tablespoons fresh thyme leaves, plus sprigs for garnish
1 cup fresh bread crumbs
2 tablespoons unsalted butter, melted

Steps:

  • Heat oven to 350 degrees. In a 10-inch round gratin dish, arrange squash slices and tomatoes in an overlapping pattern to fill the dish. Brush vegetables with olive oil; drizzle the remaining oil on top. Drizzle the chicken stock on top. Sprinkle with salt and pepper and 1 tablespoon thyme leaves.
  • In a medium bowl, combine the bread crumbs, butter, and remaining thyme, and season with salt and pepper. Arrange bread-crumb mixture on top of the vegetables. Bake until the vegetables are tender and the bread crumbs are golden, about 50 minutes. Remove from oven, garnish with thyme sprigs, and serve.

The writer Laurie Colwin had an obsession with gingerbread, publishing a few different essays and recipes exploring its charms. In the essay that precedes this moist, cakelike rendition, from her book "Home Cooking," she writes that it is "home food" - not fancy restaurant food, that is, but soothing cold-weather food that is simple to make, ideal for an afternoon spent holed up indoors. The essay is also a paean to Steen's cane syrup, from Louisiana, which comes in cheerful yellow cans. Steen's is easy to find online, if not at your local supermarket, but the recipe does not suffer if you use another brand of light molasses instead. Serve the cake plain with whipped cream, or with fruit and a dollop of crème fraîche, or glazed with lemon icing, as Ms. Colwin often did. (The New York Times)

4 ounces (1 stick) unsalted butter, additional for buttering pan
1/2 cup light or dark brown sugar
1/2 cup light molasses
2 large eggs
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1 1/2 tablespoons ground ginger, or to taste
1 teaspoon cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
2 teaspoons lemon brandy or vanilla extract (see note)
1/2 cup buttermilk (or milk with a little plain yogurt beaten into it)

Steps:

  • Heat oven to 350 degrees. Butter a 9-inch cake pan and set aside. Cream remaining 4 ounces butter with the brown sugar. Beat until fluffy, add molasses, then beat in eggs.
  • Add flour, baking soda, ground ginger, cinnamon, cloves and allspice.
  • Add lemon brandy or vanilla extract and buttermilk and turn batter into pan.
  • Bake for 20 to 30 minutes (check after 20 minutes). Cool on a rack.

5-6 cups butternut squash, (or delicata), peeled, seeded, and cut into 1" squares
1/4 cup flour
1/2 cup Parmesan cheese
1 large garlic clove, finely minced
1 teaspoon salt
freshly ground black pepper, to taste
1/4 cup olive oil

Steps:

  • Preheat the oven to 400°. Put the flour in a bag and shake the squash in the flour; discard any extra flour that does not adhere to the squash. Transfer the squash to a greased shallow casserole dish; the squash pieces can be close together, but should be in one layer. Sprinkle the squash with the cheese, and then the garlic; add salt and pepper. Drizzle the olive oil over all; toss lightly. Bake for about 20 - 30 minutes or until the squash is tender when pierced with a fork and crispy on the outside.
