Number Of Ingredients 14

4 sweet potatoes, cooked and peeled
1/3 c sugar
1/3 c butter
2 eggs
1 tsp vanilla
1/2 c sweetened condensed milk
4 - 6 oz orange marmalade, sometimes even more
1 - 1 1/2 tsp cinnamon, or more to taste
1/8 - 1/4 tsp pumpkin pie spice
TOPPING
1 c coconut
1/3 c all-purpose flour
1 c brown sugar
1/3 c melted butter

Steps:

  • 1. Combine the first nine ingredients in a mixer and mix well.
  • 2. Pour into a 9 by 13 pan or a 9 by 7 by 2.5 pan.
  • 3. Combine the topping ingredients in a separate bowl.
  • 4. Sprinkle on top of the sweet potato mixture.
  • 5. Bake 350 degrees for 25-35 minutes
  • 6. Note: The amount of cinnamon, orange marmalade, and pumpkin pie spice may need to be adjusted to taste as all sweet potatoes are not the same size.

Given to me by my sister-in-law, Laura Gwaltney. Our family's Christmas wouldn't be the same without this delicious dish! Guaranteed to disappear quickly.

Number Of Ingredients 11

3 cup(s) mashed sweet potatoes (about 8 med. potatoes)
1 teaspoon(s) vanilla extract
1 cup(s) white sugar
2 - eggs
1/3 cup(s) butter, melted
TOPPING:
1 cup(s) brown sugar
1 cup(s) coconut, shredded
1 cup(s) pecans, in pieces
1/3 cup(s) all purpose flour
1/3 cup(s) butter, cold

Steps:

  • Bring a large pot of water to a boil; add sweet potatoes. Cook about 40 minutes or until done; drain and peel.
  • Mash with electric mixer until fairly smooth. Mix first five ingredients together and place into a 9x13-in. baking pan.
  • Mix topping ingredients together and cut in the butter.
  • Sprinkle on top of potatoes and bake at 350 degrees for 30 minutes.
  • Serve with turkey, ham, chicken, pork, whatever you like. Makes a wonderful holiday dish!
  • My sister-in-law, Laura Lee Gwaltney, who shared this recipe with me. Every year at Christmas she makes this for our large family and there is never a spoonful left over.
