This easy no-bake recipe features chewy peanut butter cereal bars topped with a chocolate and butterscotch frosting.

6 cups Special K cereal
1 cup granulated sugar
1 cup light corn syrup
One 16-oz jar room temperature peanut butter*
butter (for greasing the pan and bowl)
1½ cups semisweet chocolate chips
1½ cups butterscotch chips
flaky sea salt (for topping (optional))

Steps:

  • Grease a large bowl with butter and place the Special K in the bowl.
  • Grease a 9x13 or 8x11 baking dish. The 9x13 will make thinner bars, the 8x11 bars will be thicker (as pictured).
  • Place sugar and corn syrup in a saucepan over medium heat. Heat the mixture stirring occasionally, until the edges start to bubble. Remove the saucepan from the heat and immediately stir in the peanut butter.
  • Working quickly (before the mixture cools), pour the peanut butter mixture over the Special K and stir until combined. Scoop into the prepared baking dish and press into an even layer. Proceed with the frosting.
  • Place chocolate chips and butterscotch chips in the bowl of a double boiler. Cook, stirring frequently, until melted and smooth. Note: make sure the boiling water is not touching the bottom of your bowl, only the steam.
  • Immediately pour the frosting over the bars and smooth into an even layer. Sprinkle with flaky sea salt. Allow several hours for the frosting to firm up, then cut and serve.

Got this from Mike's aunt Laura. She got the impression that I loved these when she made them. Maybe it's because I ate the whole pan myself!

Number Of Ingredients 8

2 cups flour
1/2 cup confectioners' sugar
1/2 lb soften sweet butter
4 large eggs (or 3 extra large)
1 1/2 cups sugar
1/3 cup fresh lemon juice (about 1 1/2 lemons)
1/4 cup flour
1/2 teaspoon baking powder

Steps:

  • Make crust (mix sugar, flour and butter until it feels like dough).
  • Press crust into sides and bottom of greased and floured 9 X 13 pan.
  • Bake 25 minutes @350 until light brown.
  • While baking crust, make mix by mixing eggs, sugar and lemon juice. Then add flour and baking powder to mix.
  • Mix well and pour into finished crust.
  • Bake 30 minutes.
  • Cool in pan.
  • Cut into squares.
  • Decorate with confectioners sugar.
  • Let stand uncovered to dry out.

Couldn't find my exact version on the site so decided to post. This one is a family favorite since the 70's. Always moist and chewy and disappear fast!

Number Of Ingredients 6

1 cup white sugar
1 cup white corn syrup
1 1/2 cups peanut butter
6 cups Special K cereal
1 cup milk chocolate chips
1 cup butterscotch chips

Steps:

  • Bring sugar and corn syrup to boil over medium heat.
  • Add Peanut Butter and stir until blended.
  • Pour mixture over Special K Cereal in large bowl and mix together.
  • Press into 9 x 13 pan.
  • Melt the Chocolate Chips and Butterscotch Chips together in double boiler.
  • Spread over top of cereal .
  • Refrigerate until chocolate is hardened.

This recipe is different than the others I saw on this site. This is the most requested recipe I have from my students. It IS so good, it IS like candy! Hope you try it and give it a thumbs up.

1 c sugar
1 c white corn syrup
1/2 stick butter
1 1/2 c peanut butter
6 c corn flakes, crunch with your hands to make a bit smaller
TOPPING
1 c chocolate chips
1 c butterscotch chips

Steps:

  • 1. Place the sugar, syrup and butter in a heavy bottom pan. Bring to a boil over medium high heat. Boil one minute. Remove from heat.
  • 2. Add peanut butter stir until melted and well blended.
  • 3. Add the cereal and stir until cereal is well coated. ( If you want smaller pieces of corn flakes just crush them a bit with your hands before adding to the peanut butter mix). I think corn flakes taste better than Special K cereal. Use what you have on hand, I have used rice krispies and that works well too.
  • 4. Place in a buttered 9x13 pan.
  • 5. Melt the chocolate and butterscotch chips in the microwave or in a double boiler. Watch carefully if using the microwave, start with a minute and stop to stir every 15 minutes until chips are melted and smooth when you stir them. Spread over the bars. Place in fridge to set the chocolate. Cut and enjoy.

7 cups Rice Krispies or 7 cups Special K cereal
1 cup chocolate chips
1 cup butterscotch chips
1/2 cup butter

Steps:

  • melt together corn syrup and sugar.
  • turn off heat and add P-nut butter.
  • stir in cereal.
  • dump in lightly greased 9x13 in.
  • pan, pressing lightly with buttered fingers or wax paper.
  • melt together chocolate chips, buttterscotch chips,and butter in microwave until completely melted.
  • Spread over bars and allow to cool.
