This Lasagna Soup is one of my all time favorites! You get all the flavors of a delicious hearty lasagna in a comforting soup form! It's loaded with beef, tomatoes and Italian herbs and the melty cheese just takes it over the top.

Number Of Ingredients 18

2 Tbsp olive oil, (divided)
1 lb lean ground beef
1 large yellow onion, (diced (1 3/4 cups))
5 garlic cloves, (to taste, minced*)
4 1/2 cups low-sodium chicken broth, (then more to thin as desired)
1 (14.5 oz) can petite diced tomatoes
1 (14.5 oz) can crushed tomatoes
2 1/2 Tbsp tomato paste
1 3/4 tsp dried basil**
3/4 tsp dried oregano
1/2 tsp dried rosemary, (crushed)
1/2 tsp dried thyme
Salt and freshly ground black pepper, (to taste)
8 lasagna noodles, (broken into bite size pieces (6.5 oz)***)
1 1/4 cups (5 oz) shredded mozzarella cheese
1/2 cup (2 oz) finely shredded parmesan cheese
8 oz ricotta cheese
2 Tbsp chopped fresh parsley, (plus more for garnish)

Steps:

  • Heat one tablespoon olive oil in a large pot over medium-high heat. Once hot, crumble beef into pot, season with salt and pepper to taste and cook, stirring occasionally until browned. Drain fat from beef and set beef aside.
  • Heat remaining 1 Tbsp olive oil in pot, add chopped yellow onion and saute until it begins to soften, about 3 minutes. Add in garlic and saute 30 seconds longer.
  • Add in chicken broth, diced tomatoes, crushed tomatoes, tomato paste, basil, oregano, rosemary, thyme, browned ground beef and season with salt and pepper to taste.
  • Bring just to a boil, then reduce heat to medium-low, cover and simmer 20 minutes.
  • Meanwhile, prepare lasagna noodles according to directions listed on package.
  • In a mixing bowl, using a fork, stir together mozzarella, parmesan and ricotta.
  • Stir cooked pasta into soup along with parsley, then thin soup with a little more broth if desired****.
  • Ladle soup into bowls, dollop with a large scoop of the cheese mixture and sprinkle with chopped parsley (cheese will melt well once stirred into soup).

Lasagna is a go-to recipe in the ol' Drummond family, and there's nothing on earth that can top it. Unless, of course, you turn our go-to lasagna into a piping hot soup. It's a new favorite around here! Try it . . . just once. You'll see why.

12 uncooked lasagna noodles
1/4 cup olive oil
1 yellow onion, halved and sliced
4 garlic cloves, minced
1 sprig oregano, minced
2 sprigs thyme, minced
1 pound ground beef
1 pound pork sausage, casing removed
1 teaspoon kosher salt
1/2 teaspoon black pepper
3 tablespoons tomato paste
3/4 cup white wine or stock
One 14.5-ounce can whole tomatoes with juice
4 cups (1 quart) vegetable or chicken stock
1 tablespoon chopped parsley, plus more for serving
1/2 cup heavy cream
1 cup whole-milk ricotta cheese
1/2 cup freshly grated Parmesan cheese
1 tablespoon minced parsley
1 tablespoon minced basil, plus some torn leaves for garnish
1/2 teaspoon kosher salt
1/2 teaspoon black pepper

Steps:

  • Bring a pot of water to a boil. Break the lasagna noodles into random smaller pieces.
  • In a large Dutch oven or soup pot, heat the olive oil over medium heat. Add the onion,
  • garlic, oregano, and thyme and cook, stirring, until starting to soften, about 2 minutes.
  • Increase the heat to medium-high, then add the ground beef, sausage, salt, and pepper . . .
  • And saute until the meat is fully cooked, breaking it up as you go, about 5 minutes. Drain
  • off at least half of the grease.
  • Add the tomato paste . . .
  • And stir to combine. Let the tomato paste cook for 1 minute.
  • Add the wine and stir to deglaze the bottom of the pan, scraping up any flavorful little
  • bits.
  • Add the tomatoes and their juice, crushing them with the spoon as you stir them in.
  • Add the stock and stir it in . . .
  • Then add the parsley.
  • Bring to a boil, then reduce the heat to low and simmer for 20 minutes. Taste and adjust
  • the salt and pepper as needed.
  • Cook the noodles about 1 minute less than the package directions, until almost tender. Drain and set aside.
  • Pour in the cream and stir to combine.
  • Add the noodles and let them simmer for 5 minutes while you make the ricotta mixture.
  • Make the ricotta "dumplings:" In a bowl, combine the ricotta, Parmesan, parsley,
  • basil, salt, and pepper . . .
  • And stir until combined.
  • Dish up bowls of soup, sprinkle with a little extra basil, and add a dollop of ricotta (or two or three) to the top of each one!

A new twist on a family favorite.

8 ounces whole-milk ricotta cheese (about 1 cup)
2 ounces Parmesan cheese, finely grated (about 1¼ cups)
⅛ teaspoon ground nutmeg
1 ¼ teaspoons kosher salt, divided
1 tablespoon olive oil
1 pound ground chuck
1 medium-size yellow onion, chopped (about 1 cup)
3 medium garlic cloves, finely chopped (about 1 Tbsp.)
2 (15-oz.) cans diced tomatoes
6 cups chicken stock
1 ½ tablespoons granulated sugar
8 ounces uncooked lasagna noodles, broken into 1½- to 2-inch pieces
1 tablespoon red wine vinegar
4 ounces low-moisture mozzarella cheese, shredded (about 1 cup)
¼ cup small basil leaves

Steps:

  • Stir together ricotta, Parmesan, nutmeg, and ¼ teaspoon of the salt in a medium bowl. Cover and refrigerate until ready to serve.
  • Heat oil in a large Dutch oven over medium-high. Add ground chuck. Cook, stirring and breaking up into pieces, until browned and just cooked through, about 3 minutes. Using a slotted spoon, transfer beef to a small bowl lined with paper towels; set aside.
  • Do not wipe Dutch oven clean. Add onion to Dutch oven. Cook over medium-high, stirring occasionally, until softened and starting to caramelize, about 4 minutes. Add garlic. Cook, stirring constantly, until fragrant, about 1 minute. Stir in diced tomatoes and stock; bring to a boil over high. Stir in sugar and remaining 1 teaspoon salt. Add lasagna pieces. Cook, stirring occasionally, until noodles are just cooked through and almost al dente, about 8 minutes. Stir in browned beef. Remove from heat, and stir in vinegar. Divide soup evenly among 4 bowls; top with mozzarella and dollops of reserved ricotta mixture. Top bowls with basil leaves before serving.

SLOW-COOKER LASAGNA SOUP

1-1/2 pounds bulk Italian sausage
1 large onion, chopped
2 medium carrots, chopped
2 cups sliced fresh mushrooms
3 garlic cloves, minced
1 carton (32 ounces) chicken broth
2 cans (14-1/2 ounces each) Italian stewed tomatoes
1 can (15 ounces) tomato sauce
6 lasagna noodles, broken into 1-inch pieces
2 cups coarsely chopped fresh spinach
1 cup cubed or shredded part-skim mozzarella cheese
1/2 cup shredded Parmesan cheese
Thinly sliced fresh basil, optional

Steps:

  • In a large skillet, cook sausage over medium-high heat until no longer pink, breaking into crumbles, 8-10 minutes; drain. Transfer to a 5- or 6-qt. slow cooker., Add onion and carrots to same skillet; cook and stir until softened, 2-4 minutes. Stir in mushrooms and garlic; cook and stir until mushrooms are softened, 2-4 minutes. Transfer to slow cooker. Stir in broth, tomatoes and tomato sauce. Cook, covered, on low until vegetables are tender. 4-6 hours., Skim fat from soup. Add lasagna; cook until tender, 1 hour longer. Stir in spinach. Remove insert; let stand 10 minutes. Divide mozzarella cheese among serving bowls; ladle soup over cheese. Sprinkle with Parmesan cheese and, if desired, basil.

1 large green pepper, chopped
1 medium onion, chopped

2 cans (14-1/2 ounces each) diced tomatoes, undrained
2 cans (14-1/2 ounces each) reduced-sodium beef broth
1 can (8 ounces) tomato sauce
1 cup frozen corn
1/4 cup tomato paste
2 teaspoons Italian seasoning
1/4 teaspoon pepper
2-1/2 cups uncooked spiral pasta
1/2 cup shredded Parmesan cheese

Steps:

  • In a large saucepan, cook beef, green pepper and onion over medium heat 6-8 minutes or until meat is no longer pink, breaking up beef into crumbles. Add garlic; cook 1 minute longer. Drain., Stir in tomatoes, broth, tomato sauce, corn, tomato paste, Italian seasoning and pepper. Bring to a boil. Stir in pasta. Return to a boil. Reduce heat; simmer, covered, 10-12 minutes or until pasta is tender. Sprinkle with cheese.
