This is super comforting and satisfying. Creamy and rich, but with a nice pop of green from the spinach, pesto, and basil. The chicken gives it some texture and makes it feel like a complete meal on its own. I love the crispy edges of the cheese. Serve with a bright and fresh Geek salad on the side.

1 (16 ounce) package lasagna noodles
5 ounces baby spinach leaves
4 cups shredded cooked chicken
3 cups shredded mozzarella cheese, divided
3 cups Alfredo sauce, divided
2 ¼ cups whole-milk ricotta cheese
½ cup prepared basil pesto
½ teaspoon kosher salt
1 cup shredded Parmesan cheese
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Preheat oven to 350 degrees F. Spray two 12-cup standard muffin tins with cooking spray. Set aside.
  • Bring a large pot of lightly salted water to a boil. Cook 12 lasagna noodles in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Remove with a slotted spoon or a pair of tongs to a colander, leaving water to boil. Rinse noodles with cold water and drain again. Lay noodles flat on a large baking sheet.
  • Place spinach in boiling pasta water and stir until wilted, about 30 seconds; drain. Squeeze dry and coarsely chop.
  • Stir spinach, chicken, 1 cup mozzarella, and 1 1/2 cups Alfredo sauce together in a large bowl. Set aside.
  • Stir ricotta cheese, pesto, and salt together in a medium bowl. Spread 3 tablespoons ricotta mixture onto each lasagna noodle. Working one noodle at a time, cut noodle in half lengthwise. Spread 2 tablespoons chicken mixture onto each noodle half. Roll up lengthwise and place cut-side down in the prepared muffin cups.
  • Top each lasagna cup with 1 tablespoon Alfredo sauce. Sprinkle tops of lasagna cups evenly with remaining 2 cups mozzarella and Parmesan, making sure any stray strands of cheese are pushed into the muffin cups around the roll-up. Cover muffin tins with aluminum foil.
  • Bake in the preheated oven until bubbly and cheese is melted, about 15 minutes. Uncover and continue to bake until even more bubbly and cheese is browned, about 10 more minutes. Let sit for 5 minutes before removing from muffin tin. Sprinkle with basil and parsley and serve.

4 tablespoons all-purpose flour
3 cups milk
Salt and pepper
Freshly grated nutmeg
11/2 cups grated Parmigiano-Reggiano
2 tablespoons EVOO (extra-virgin olive oil)
1 garlic clove, cracked away from its skin
1 bunch of green chard, stems removed, leaves coarsely chopped
2 pounds spinach, stems removed, leaves coarsely chopped
1 box no-boil lasagna noodles

Steps:

  • Preheat the oven to 375F.
  • Melt the butter in a medium pot over medium heat. Sprinkle the flour over the melted butter, whisk to combine, and cook for about 1 minute. Slowly whisk the milk into the butter-flour mixture, season with salt, pepper, and nutmeg, and cook for a couple of minutes to thicken. Stir in half the Parmigiano (about 3/4 cup). Set the sauce aside.
  • Heat the EVOO in a large cast-iron skillet over medium-high heat. Toss in the cracked clove of garlic and cook for a minute or two to release its aroma and flavor. Add the chard and cook, turning occasionally to wilt down, 2 minutes. Add the spinach a few handfuls at a time, wilting each batch before adding more. Season the greens with salt and pepper.
  • Break the pasta sheets into large pieces. Toss them into the pan with the greens and give them a good stir to incorporate them. Pour the sauce into the skillet, stirring again to incorporate everything evenly. Smooth the top down and sprinkle the remaining 3/4 cup Parmigiano into the skillet. Cover the skillet with foil, transfer to the oven, and bake the lasagna for 30 minutes. Remove the foil from the pan and let it finish cooking uncovered for about 15 more minutes to brown the cheese.

2 tablespoons butter
1 (28 ounce) jar marinara sauce
2 cups fresh spinach
1 cup chopped onion

1 pinch cayenne pepper, or to taste
1 pinch dried parsley flakes, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 10 minutes. Drain, stir in butter, and set aside.
  • Combine marinara sauce, spinach, onion, mushrooms, tomato paste, garlic, cayenne, parsley, sea salt, and black pepper in a saucepan. Bring to a simmer, stirring occasionally, while you prepare the cheese mixture.
  • Combine lump crab, ricotta cheese, mozzarella cheese, 1 cup Parmesan-Romano cheese, eggs, and clam juice together in a large mixing bowl. Blend thoroughly together.
  • Spoon a light layer of sauce into the bottom of the prepared pan. Add a layer of spaghetti, followed by a layer of cheese mixture. Repeat until ingredients have all been added, making sure sauce makes up the top layer. Sprinkle with 1/4 cup Parmesan cheese.

This recipe is a recreation of my friend's favorite Lean Cuisine (they have discontinued it). I don't create my own recipes very often so any input that could improve the final product would be appreciated.

1 lb cooked chicken breast, chopped
1 (10 ounce) package frozen chopped spinach, defrosted and squeezed dry
1 lb fresh mushrooms, sliced
1 medium onion, chopped
2 cups lowfat mozzarella cheese
16 ounces low-fat ricotta cheese
1 large egg
1 cup parmesan cheese
9 lasagna noodles (I precooked mine)
white sauce
1/4 cup flour
1 quart skim milk
2 tablespoons butter
1/8 teaspoon nutmeg
1 teaspoon salt
1 teaspoon white pepper

Steps:

  • Pre-cook your lasagna noodles according to the package directions. Set aside.
  • Saute onions and mushrooms in the butter until all the liquid from the mushrooms has evaporated and the onions have softened.
  • Add the flour and cook for 1 minute.
  • Add the skim milk and cook over low heat stirring frequently until the sauce has thickened.
  • Add salt, pepper, nutmeg and 1/3 cup parmesan cheese.
  • Stir until cheese has melted and add chicken breast and spinach. Set aside.
  • In a small bowl mix ricotta, 1/3 cup parmesan cheese, 1/2 cup mozzarella cheese and egg until well blended.
  • Begin to layer the lasagna (I used a deep 9x9 stoneware dish I had, but a 13x9 dish would work as well).
  • Spread a small amount of sauce over the bottom of your pan.
  • Cover sauce with one layer of pasta.
  • Spread 1/2 the ricotta cheese mixture and 1/3 of the remaining mozzarella over the pasta.
  • Cover the cheese with 1/3 of the remaining sauce.
  • Add another layer of pasta.
  • Spread the remaining ricotta mixture and 1/2 the remaining mozzarella over the pasta.
  • Cover the cheese with 1/2 of the remaining sauce.
  • Add a final layer of pasta.
  • Cover the pasta with the remaining sauce and cover the pan with foil.
  • You will have some mozzarella and parmesan cheese leftover. Reserve this for later.
  • Bake the lasagna at 350 degrees for 1 hour. Uncover the dish and sprinkle the remaining cheeses over the top.
  • Return to the oven for 15-20 minutes or until the cheese is golden and the lasagna is bubbling around the edges.
  • Let the lasagna rest for 15-20 minutes before serving.

12 lasagna noodles, cooked
1 pound chicken tenderloins, cooked and diced, about 8 to 10
3 cups Parmesan cheese, grated
4 cups mozzarella cheese, shredded
1 (6-ounce) bag baby spinach, raw
12 strips bacon, cooked crispy
1 teaspoon Italian seasoning
1 tablespoon flat-leaf parsley, chopped
8 cups (1/2 gallon) 1% low-fat milk
2 tablespoons natural chicken base (I use "Better Than Bouillon" brand)
4 ounces butter, about 8 tablespoons
4 cloves garlic, pressed through garlic press
4 ounces flour, about 12 tablespoons
Pinch or two salt
1/2 teaspoon black pepper
Pinch ground nutmeg
1 teaspoon Italian seasoning
1/4 cup Parmesan cheese, grated

Steps:

  • Preheat the oven to 350°F, and lightly grease a 12 x 9 x 2 1/2-inch baking dish. To assemble your lasagna, add a thin layer of the Creamy Sauce to the bottom of the baking dish, and spread evenly. Add 4 lasagna noodles over the sauce, and add in another, more generous, layer of the sauce. Next, sprinkle over about half of the diced chicken, followed by about 1 cup of the shredded parmesan and 1 cup of the shredded mozzarella. Next, sprinkle over about half of the bag of baby spinach, followed by about 1/3 of the chopped bacon. Repeat with another layer of 4 lasagna noodles, more sauce, the rest of the chicken, another cup of parmesan and mozzarella cheese, the remainder of the baby spinach, and another 1/3 of the chopped bacon; then, cover with the last layer of four lasagna noodles. Finish by topping the noodles with sauce, then sprinkle over the last cup of parmesan cheese, the last 2 cups of mozzarella cheeses, and the teaspoon of Italian seasoning; bake for about 20-25minutes, or until golden and bubbly. A twist on the standard lasagna dish. Fontina, fresh spinach, roasted chicken, cremini mushrooms and sauteed onions make this a great dish. A creamy bechemel sauce and rolled lasagna rolls make this perfect. I admit this takes a little time but worth it. Now I also take advantage of a grocery store roasted chicken for this or you can roast your own. But I do insist on fresh spinach and herbs, but why not take advantage of a little help ... I also get my mushrooms pre-sliced. Take a little help on some store bought items when you can. The fontina to me just adds lots of flavor, but if you can't find it mozzarella will work just fine. This is worthy of entertaining, but the best part ... make it ahead and just refrigerate. Just put in the oven and bake the night of the party, NO work.

28 lasagna noodles, pre cooked
2 cups chicken, shredded and chopped fine
1 (7 ounce) bag Baby Spinach
1 1/2 cups cremini mushrooms, chopped fine
1 medium onion, chopped fine
1 tablespoon fresh thyme
1 cup chicken broth
salt
pepper
4 tablespoons flour
4 tablespoons butter
2 cups milk
2 cups heavy cream
1 pinch nutmeg
1 (8 ounce) container ricotta cheese
3 cups fontina, grated (reserve 1 cup for the topping)
2 cups parmesan cheese (reserve 1/2 for the topping)
salt
pepper
1 tablespoon fresh parsley

Steps:

  • Noodles -- Now I do this a little different than most. I bring a 13x9 pan on the stove and fill with water and bring to a light boil. I then boil my noodles flat. To me they boil quicker and less chance of tearing being flat in a pan. Just 5 or so minutes and they are done. Then remove them to a sheet of parchment paper to cool. About 24 noodles. If you want you can always boil in a large pot of water if you prefer the traditional method.
  • Cheese -- Mix the grated fontina, parmesan and ricotta. Make sure to reserve 1 cup the fontina and 1/2 parmesan for the top layer. Add in a pinch of salt, pepper to taste and the fresh parsley.
  • Chicken -- To a medium saucepan, add the olive oil and bring to medium heat. Add the onions and mushrooms and cook on medium heat until lightly browned about 5-7 minutes. Then add in the shredded chicken and fresh spinach, thyme and chicken broth and cook until everything is well combined. Just add a little salt and pepper to taste. Just simmer until the broth reduces.
  • Bechemel -- 4 / 4/ 4/ -- my basic recipe. Melt 4 tablespoons of butter in a medium pot, then add 4 teaspoons of flour and combine, mix well to make a roux and cook just a couple of minutes to get the flour taste out. Then add in 2 cups heavy cream and 2 cups milk and bring to a medium heat to let it thicken, add a pinch of nutmeg.
  • Make the Lasagna -- Lay out a noodle, spread with the cheese mixture and then top with the chicken spinach mixture, then another noodle, more cheese and another layer of chicken mixture, then roll.
  • In a 13x9 casserole dish add about 1 cup of the bechemel sauce and then place the lasagna rolls, seam side down. Now top with the remaining sauce. Top with the extra fontina and parmesan cheese. Cover and bake 35 minutes at 375, then remove the foil and cook 10 more minutes until bubbly and golden brown. Make sure to let it rest 10 minutes covered before serving.
  • Note: I like to use a 13x9, you want to make sure that the pan is not too big and the rolls fit in the pan nicely side by side, this way the sauce tops the rolls and makes a nice crust. You can also make these in individual ramiken or serving dishes, 2 rolls per person. It makes a great way to serve them for a dinner party.

Found this in a supermarket checkout cookbook years ago and it's still a family favorite. One important step is getting the water removed from the spinach as much as possible; after I drain it and squeeze as much out by hand I wrap it in a 4 layer pad of paper towels and squeeze it some more. Save the paper towels and use them later to dry off the noodles so they don't slide all over, this makes it a lot easier to spread the filling. I have listed 2% cheese and 1/3 less fat cream cheese but it started out being made with the full deal, we don't notice any decrease in flavor (I've also made it without the egg a time or two when I ran out and it tastes the same and holds together OK). I also think the filling makes a good spinach dip if you leave out the egg. Cook time includes the 5 minute stand time.

Steps:

  • Preheat oven to 350°.
  • Place a sheet of wax paper on a flat surface. Arrange the noodles on top of each other, over-lapping 1-inch.
  • Combine all the filling ingredients except the mozzarella, mix well. Spread over the noodles, top with the mozzarella cheese and roll up jelly-roll fashion.
  • Place in a 9"X13" baking dish seam side down.
  • In a small bowl combine the topping ingredients, pour over the roll and top with remaining Parmesan cheese.
  • Bake at 350° for 30 minutes.
  • Let stand for 5 minutes before slicing.

1 small onion, chopped
1/2 cup chopped celery
1/2 cup chopped carrot

4 ounces sun-dried tomatoes, not oil packed
1/3 cup dry white wine
1 teaspoon fennel seed
1 1/2 teaspoons dried basil
salt and pepper

2 cups cream-style cottage cheese
1 egg

Steps:

  • For the marinara sauce, heat the olive in oil in a large sauce pan; saute the onion, celery, carrot and garlic in hot oil for 15 minutes over medium heat, stirring occasionally.
  • Stir in the dried tomatoes, canned tomatoes, wine, fennel seeds and dried basil; reduce heat to simmer and cook uncovered until slightly reduced; approximately 20 to 30 minutes.
  • Process in batches in blender until mixture is chopped but not smooth, keep warm while assembling the other ingredients.
  • For the lasagna, place the cottage cheese, egg, nutmeg, parsley flakes and salt/pepper to taste in small mixer bowl, mix until curds begin to break down and mixture is combined well; stir in 1/4 cup of the grated Asiago cheese.
  • To assemble the lasagna, spray a 13x9 inch pan with non-stick cooking spray, place 1/2 cup sauce in bottom of pan, top with 3 cooked and lightly towel dried lasagna noodles, top with 1/2 of the cottage cheese mixture, 1/3 of the sauce, half the mozzarella cheese, half of the spinach and sprinkle generously with a third portion of the grated Asiago cheese, repeat layer 1 time.
  • End with a layer of noodles topped off with remaining sauce and grated cheese.
  • Cover with foil and bake in a preheated oven at 375°F for 30 to 45 minutes; let stand 10 minutes before serving.
  • This can be assembled ahead and refrigerated until ready to cook; if refrigerated please allow an additional 15 to 20 minutes for the lasagna to cook through.

Steps:

  • Heat oven to 375°F.
  • Cook noodles as directed on package, omitting salt. Drain.
  • Mix next 5 ingredients. Spread 1/3 cup chicken mixture onto each noodle. Roll up tightly; place, seam-sides down, in 9-inch square baking dish sprayed with cooking spray. Pour pasta sauce over roll-ups; sprinkle with mozzarella.

1 lb fresh spinach
1 lb fresh mushrooms, chopped coarsely
1 cup onion, chopped
1 garlic clove, minced
2 tablespoons olive oil
3 cups ricotta cheese
1 2/3 cups parmesan cheese
1 egg
1/2 teaspoon salt
1/2 teaspoon black pepper
3/4 teaspoon dried basil
3/4 teaspoon dried oregano
16 lasagna noodles
4 1/2 cups mozzarella cheese, shredded
1 cup marinara sauce
parmesan cheese (garnish)

Steps:

  • Steam spinach until tender then press out excess moisture and chop coarsely. Mix mushrooms, onions and garlic and saute over medium-high heat until onions are tender. Drain excess liquid and cool.
  • Mix ricotta cheese, 2/3 cup parmesan, egg, salt, pepper, basil and oregano in large bowl. Add cooled spinach and mushroom-onion mixture and mix on low speed until just blended.
  • Cook lasagna according to package directions then rinse under cool water and drain thoroughly. Place four lasagna strips in bottom of lightly oiled 9x13" pan, overlapping slightly. Top with 2 cups spinach filling. Sprinkle with 1 1/2 cups shredded cheese and 1/3 cup parmesan. Repeat layering two more times and top with remaining four lasagna strips. Spread 1 cup of marinara sauce over top (make sure all noodles have sauce on them so they don't dry out) and cover tightly with foil.
  • Preheat oven to 350F and bake, covered, for 1 hour. Turn oven off and allow lasagna to sit for at least 30 minutes before removing from oven. Allow 10 minutes wait time before cutting. Top with extra Parmesan cheese. (Can be refrigerated for up to a day in advance of baking, if desired.).

Steps:

  • Combine chicken, pasta sauce, water and oregano; set aside. Mix cream cheese, 1-1/2 cups shredded cheese, milk and seasoning until well blended. Stir in spinach.
  • Spoon 1 cup chicken mixture into slow cooker sprayed with cooking spray; top with layers of half each of the noodles and cream cheese mixture. Cover with 2 cups chicken mixture. Top with remaining noodles, cream cheese mixture and chicken mixture. Cover with lid.

2 cups milk
1 egg
1 (15 ounce) container ricotta cheese
6 uncooked lasagna noodles
1 (10 ounce) package frozen chopped spinach, thawed and well drained
2 cups cubed cooked chicken or 2 cups turkey
2 cups shredded cheddar cheese (about 8 ounces)

Steps:

  • Stir the soup and milk in a small bowl until smooth. Stir the egg and ricotta in a medium bowl.
  • Spread 1 cup soup mixture in a 3-quart shallow baking dish. Top with 3 uncooked lasagna noodles, ricotta mixture, spinach, chicken, 1 cup Cheddar cheese and 1 cup soup mixture. Top with remaining uncooked lasagna noodles and remaining soup mixture. Cover the baking dish.

2 (15 ounce) jars alfredo sauce
25 ounces frozen cheese ravioli
10 ounces frozen spinach
8 ounces mushrooms, cleaned & sliced
1 1/2 lbs boneless skinless chicken breasts
2 cups shredded mozzarella cheese
1/2 cup white wine, divided
1/2 cup shredded parmesan cheese
1/2 tablespoon Italian herb seasoning (optional)
1/2 teaspoon garlic powder (optional)

Steps:

  • Dice chicken into bite size pieces, sprinkle evenly with salt pepper, garlic powder & Italian herbs, to taste.
  • Grease a 5-6 quart oval slowcooker.
  • Spread 1/2 jar of Alfredo sauce in the bottom.
  • Layer in, 1/3 each of the ravioli, mushrooms, spinach, chicken, and mozzarella. Cover with 1/2 jar Alfredo sauce.
  • Repeat layers twice more.
  • Add 1/4 cup white wine (or water) to each jar, cap and shake well to get all the sauce loosened and then pour each over the top of the casserole.
  • Cook on low 3-5 hours. Topping with parmesan in the last 30-60 minutes.

Oh man! This recipe came from not having quite enough of one type of meat. So "improvise" is what I say! This is rich, creamy and good enough for company. I've tried to trim it down a bit by using low fat cheeses & 1% milk. There's still some calories but I promise you that you will love this!

9-12 lasagna noodles, cooked
20 oz pkg ground turkey
4 chicken tenderloins
3 Tbsp olive oil, extra virgin
1 tsp garlic powder
1 tsp onion powder
1 tsp nutmeg, ground
1 tsp red pepper flakes
1 tsp sweet basil, dried
1 1/2 tsp oregano, dried
1 small onion, diced
2 clove garlic, minced
1/2 stick butter, unsalted
1/4 c all purpose flour
1 c milk, 1%
1 can(s) mushrooms, canned, diced
1 c parmesan cheese, grated (divided)
3-4 pinch salt and pepper
1 jar(s) artichoke hearts, drained & chopped
CHEESE FILLING
8 oz cottage cheese
2 large eggs
1 c mozzarella cheese, low-fat
6 oz spinach, frozen, thawed & squeezed
1/2 tsp each of garlic powder, onion powder, nutmeg & red pepper flakes
1 clove garlic, minced
3-4 pinch salt and pepper
1 pkg provolone cheese, slices (use 5-6 on 1st two layers)
TOPPING
1 1/2 c shredded cheese (garlic parsley, cheddar & parmesan)

Steps:

  • 1. Fill large stock pot 3/4 full of cold water & add about 1 tablespoon of salt. Bring to a boil then reduce to a simmer and add lasagna noodles. Cook according to package directions until al dente.
  • 2. In large skillet add olive oil and brown ground turkey and finely chopped chicken for 3-5 minutes.
  • 3. Approximately halfway through browning (3-5 minutes) add the following seasonings: Garlic & Onion Powder, nutmeg, red pepper flakes, dried basil & oregano.
  • 4. Add 1/2 stick butter and diced onion allow to saute until onion is partially cooked about 3 minutes then sprinkle all ingredients with flour and stir. Let the flour cook off for a few minutes it will have a paste like appearance and begin to slightly brown.
  • 5. Now slowly wisk in milk while simmering gently. You may need a bit more but 1 cup is close. Simmering for a few minutes will thicken slightly then add parmesan cheese to thicken more. It should resemble slightly thicker jarred alfredo sauce.
  • 6. Add minced garlic, drained & chopped artichokes & mushrooms to the meat & sauce mixture and simmer for a few minutes. Remove this from the heat and let cool while assembling the cheese filling.
  • 7. In a large mixing bowl scramble 2 eggs then add and combine the remaining ingredients for the cheese filling. *be sure you squeeze the moisture out of the thawed spinach
  • 8. For the assembly spray a large 9x13 casserole dish with non-stick cooking spray. Spread a few tablespoons of the meat & sauce mixture across the bottom to prevent the noodles from sticking.
  • 9. Layer 3 noodles, 1/3 meat & sauce mixture, 1/2 cheese filling, 6 provelone cheese slices then noodles, 1/3 meat, remaining 1/2 cheese filling & 6 more provelone cheese slices last layer will be meat & sauce topped with shredded cheeses of your choice **I tried Garlic Parsley, Cheddar & Parmesean Cheeses this time and it was so good!
  • 10. Cover with foil and bake at 350 degrees for 30-40 minutes removing foil the last 10 minutes to melt cheese well. Remove from oven & let stand for 10-15 minutes to set. Serve with mixed greens & garlic bread.

1 cup 1% milk
1/2 cup (2 oz.) parmesan cheese
1/3 cup chopped onion
1/2 tsp salt
1/4 tsp pepper
1/8 tsp ground nutmeg
Cooking spray
9 uncooked lasagna noodles
1 cup shredded part skim mozzarella

Steps:

  • Combine first 10 ingredients in large bowl and stir well.
  • Coat crock-pot with olive oil cooking spray and place 3 uncooked lasagna noodles in bottom of cooker. Break noodles as necessary to fit. Spread 1/3 spinach mixture over noodles; sprinkle with 1/3 cup mozzarella. Layer 3 more noodles, half REMAINING spinach mixture, and 1/3 cup mozzarella. Top with remaining noodles and spinach. 1/2 c chopped onion
2 medium cloves garlic, minced
1 jar(s) 26-oz jar marinara sauce, divided
1 pkg cottage cheese
1 pkg 10-oz pkg frozen, chopped spinach, thawed and squeezed
1 1/2 c sliced mushrooms
l pkg 12-oz pkg shredded mozzarella, divided
1/2 c grated parmesan cheese, divided
2 medium eggs, beaten
9 lasagna noodles, cooked (or no bake)
oil for sauteeing meat and onions. butter or oil for sauteeing mushrooms

Steps:

  • 1. Brown beef, onion and garlic in a skillet over medium heat, drain well. In a separate skillet, saute mushrooms until the moisture has cooked out and mushrooms are fully cooked. Add to beef mixture. Add marinara sauce, stir to combine, and set aside.
  • 2. In a large bowl, combine cottage cheese, spinach, 2 cups mozzarella cheese, 1/4 cup parmesan cheese and eggs.
  • 3. In an ungreased 9 x 13 inch baking pan, layer one cup sauce mixture, 3 lasagna noodles, and 1/2 cup cottage cheese mixture. Repeat layers once more.

2 (3.53-oz.) pouches Chicken of the Sea® Premium Shrimp Pouch
1 (8-oz.) container refrigerated roasted garlic Alfredo sauce
1/4 cup pesto sauce
8 lasagna noodles, cooked according to package directions

Steps:

  • Preheat oven to 350 degrees F. In a medium bowl combine, spinach, ricotta cheese, 3/4 cup cheese blend, basil and egg. Fold in one pouch of Chicken of the Sea® Shrimp; set aside spinach mixture. In saucepan, combine Alfredo sauce and pesto sauce; add remaining shrimp. Pour 1/3 of the sauce into a greased 11x7x2-inch baking dish; set aside. Spread filling over each noodle. 4 tbsp (1/2 stick) butter
4 tbsp all purpose-flour
3 c milk
Salt & pepper
Freshly grated nutmeg
1½ c grated parmigiano-reggiano
2 tbsp EVOO
1 garlic clove, cracked away from its skin
1 bunch of green chard, stems removed, leaves coarsely chopped
2 pounds spinach, stems removed, leaves coarsely chopped
1 box no-boil lasagna noodles

Steps:

  • 1. Preheat the oven to 375° f 2. Melt the butter in a medium pot over medium heat. Sprinkle the flour over the melted butter, whisk to combine, and cook for about 1 minute. Slowly whisk the milk into the butter-flour mixture, season with Salt, pepper and nutmeg, and cook for a couple of minutes to thicken. Stir in half the parmigiano (about ¾ c). Set the sauce aside. 3. Heat the EVOO in a large cast-iron skillet over medium-high. Toss in the cracked clove of garlic and cook for a minute or two to release its aroma and flavor. Add the chard and cook, turning occasionally to wilt down, 2 minutes. Add the spinach a few handfuls at a time, wilting each batch before adding more. Season the greens with salt and pepper. 4. Break the pasta into large pieces. Toss them into The pan with the greens and give them a good stir to incorporate them. Pour the sauce into the skillet, stirring again to incorporate everything evenly. Smooth the top down and sprinkle in the remaining ¾ c parmigiano into the skillet. Cover the skillet with foil, transfer to the oven, and bake the lasagna for 30 minutes. Remove the foil from the pan and let it finish cooking uncovered for about 15 more mins to brown the cheese.
