½ pound pancetta (Italian bacon), diced
2 cups chopped celery
1 ¾ cups chopped carrots

salt and ground black pepper to taste
1 cup dry white wine
1 ½ cups no-salt crushed tomatoes in puree
2 tablespoons tomato paste
1 teaspoon white sugar
½ cup beef broth
½ cup heavy whipping cream
½ cup whole milk
5 tablespoons butter
¼ cup all-purpose flour
4 cups whole milk
1 bay leaf
½ teaspoon salt
¼ teaspoon freshly grated nutmeg
8 (9x13-inch) fresh lasagna sheets
2 cups finely grated Parmesan cheese, divided

Steps:

  • Heat olive oil and 1 tablespoon butter in a large Dutch oven over medium heat. Add pancetta; cook and stir until browned, about 8 minutes. Add celery, carrots, and onion; cook, stirring occasionally, until very soft, about 15 minutes. Stir in beef and pork. Season with salt and pepper. Cook until evenly browned, about 20 minutes.
  • Pour white wine into the Dutch oven; cook until alcohol evaporates, about 5 minutes. Stir in crushed tomatoes, tomato paste, and sugar. Bring to a simmer; reduce heat to low, cover and simmer Bolognese sauce, stirring occasionally and skimming fat off the surface, about 3 1/2 hours. Stir in beef broth, 1/4 cup at a time, if sauce looks dry.
  • Stir heavy cream and 1/2 cup milk into the Bolognese sauce; mix well. Cover and cook over very low heat until flavors combine, about 30 minutes.
  • Melt 5 tablespoons butter in a large saucepan over medium heat. Stir in flour until a smooth paste forms; cook and stir until paste turns a golden sandy color, about 7 minutes.
  • Increase heat to medium-high and slowly whisk 4 cups milk into the saucepan. Bring to a gentle simmer; reduce heat to medium-low and add bay leaf. Continue simmering, stirring occasionally until bechamel sauce is thick and smooth, about 10 minutes. Season with salt and nutmeg; discard bay leaf.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with butter.
  • Spread 1/4 cup bechamel sauce in the bottom of the baking dish. Cover with 1 lasagna sheet; prick in several places with a paring knife. Spread 1/2 cup bechamel sauce and 1/2 cup Bolognese sauce on top. Sprinkle 1/4 cup Parmesan cheese on top.
  • Repeat layers 7 times with remaining lasagna sheets, bechamel sauce, Bolognese sauce, and Parmesan cheese. Cover lasagna with aluminum foil and place on a rimmed baking sheet.
  • Bake lasagna in the preheated oven until bubbly, about 25 minutes. Remove aluminum foil and continue baking until cheese is browned, about 20 minutes more. Let cool before serving, about 15 minutes.

7 tablespoons unsalted butter
6 tablespoons all-purpose flour
3 1/2 cups milk, heated just until steaming
Pinch of freshly grated nutmeg
1/2 teaspoon coarse salt
Freshly ground pepper

Steps:

  • Melt butter in a heavy-bottom, medium saucepan over medium-low heat. Add flour, whisking constantly. Cook, whisking occasionally, 2 to 3 minutes; do not let roux brown.
  • Whisking constantly, add about 2 tablespoons hot milk to saucepan.
  • Pour half of the remaining hot milk into the saucepan in small increments, whisking the mixture constantly, until a smooth paste forms.
  • Whisk remaining milk into pan; add nutmeg and salt. Cook, stirring with a wooden spoon, making sure to scrape bottom and sides, until sauce is thick and creamy, about 15 minutes; if any lumps form, stir sauce rapidly with a whisk. Season with pepper; remove from heat. Let sauce stand until lukewarm, about 30 minutes, before assembling lasagna.

10 ounces white button mushrooms
2 carrots, cut into 4 pieces
2 stalks celery, cut into 4 pieces

1 6-ounce piece prosciutto, cut into 1-inch pieces
1 tablespoon extra-virgin olive oil
1 pound ground beef chuck
1 pound ground pork
2 cups dry white wine
4 tablespoons unsalted butter
1 large onion, chopped
1 teaspoon chopped fresh rosemary
2 bay leaves
Kosher salt
5 tablespoons tomato paste
1/2 cup cognac or brandy
1 28-ounce can whole San Marzano tomatoes
12 tablespoons unsalted butter
1/2 cup plus 1 tablespoon all-purpose flour
1 1/2 teaspoons grated nutmeg

1 1/2 pounds fresh lasagna sheets
2 tablespoons unsalted butter, softened

Steps:

  • Make the ragu: Soak the porcini mushrooms in 2 cups hot water until soft, about 30 minutes. Drain the porcini, reserving the liquid.
  • Finely chop the porcini and white mushrooms in a food processor; transfer to a bowl. Add the carrots, celery, garlic, parsley and prosciutto to the processor; pulse until finely chopped.
  • Heat the olive oil in a large pot over high heat. Cook the ground beef and pork in batches, breaking them up with a wooden spoon, until browned, 6 to 8 minutes. Transfer the meat to a bowl. Add the wine to the pot, scraping up the browned bits. Add the liquid to the bowl with the meat.
  • Melt the butter in the pot; add the onion, chopped carrot mixture, the rosemary, bay leaves and 2 teaspoons salt. Cook, stirring occasionally, until browned, 12 to 15 minutes. Add the tomato paste and mushrooms and cook, stirring, about 8 minutes.
  • Return the meat mixture to the pot. Add the cognac and scrape up the browned bits. Cook, stirring, until the liquid is absorbed, about 5 minutes. Add 2 cups water and the reserved mushroom soaking liquid. Crush the tomatoes with your hands over the pot and add with their juices. Simmer over medium-low heat, stirring occasionally, until thickened, about 2 hours, 30 minutes. Cool completely.
  • Meanwhile, make the bechamel: Melt the butter in a wide saucepan over medium heat. Add the flour, nutmeg, 2 teaspoons salt and 1/2 teaspoon pepper; cook, whisking, 2 to 3 minutes. Gradually whisk in the milk and cook, whisking, until thickened, 5 to 10 minutes. Reduce the heat to low and cook, whisking, 10 more minutes.
  • Assemble the lasagna: Preheat the oven to 400 degrees F. Bring a few inches of salted water to a boil in a wide saucepan. Fill a large bowl with ice water. Line a baking sheet with a damp kitchen towel. Working in batches, boil the pasta until partially cooked, about 4 minutes, then remove with a skimmer and transfer to the ice water to cool. Remove the pasta sheets, shake off the excess water and arrange in a single layer on the towel. Cover the pasta with another damp towel.
  • Brush the bottom and sides of a deep 11-by-13-inch baking dish with the butter. Spread 1/2 cup ragu in the pan. Cover with a layer of pasta, then sprinkle with 1/3 cup parmesan and 2/3 cup mozzarella. Spread 1 1/2 cups ragu over the cheese and top with 1 cup bechamel. Repeat with 3 more layers each of pasta, parmesan, mozzarella, ragu and bechamel. Top with a layer of pasta, then cover with the remaining bechamel. Sprinkle with the remaining parmesan and mozzarella. Tuck the edges of the pasta into the baking dish with a knife.
  • Place the lasagna on a baking sheet to catch any drips; bake until bubbly and golden, about 40 minutes. Let rest 30 minutes before slicing and serving.

OLD SCHOOL LASAGNA WITH BOLOGNESE SAUCE

I love lasagna. I sometimes make it my Sunday afternoon project and enjoy it for dinner on a weeknight when I don't have as much free time. It tastes just as delicious (if not better) when it sits in the refrigerator overnight before eating! I also love to make it this time of year because the local tomatoes are at the height of their season. So are basil, spinach and fresh thyme. Lasagna can be as simple or as complicated as your schedule allows. If you're feeling adventurous, you can make Mozzarella cheese at home or your own pasta dough from scratch. My grandmother layers meatballs in the lasagna. To die for!

1 cup olive oil (preferably extra-virgin and organic)
2 medium yellow onions, peeled and chopped
8 cloves fresh garlic, peeled and chopped
Sea salt and freshly ground black pepper
8 sprigs fresh thyme, washed
2 bay leaves, fresh or dried
8 pounds ripe (or even slightly overripe) red tomatoes, washed and chopped
1 1/2 cups tightly-packed fresh basil leaves, washed
8 quarts water
2 tablespoons kosher salt
1 pound lasagna sheets
1 pound shredded mozzarella
1 pound shredded Parmesan
1/4 cup olive oil, plus more as needed
1 1/2 pounds ground beef
Kosher salt and freshly ground black pepper
2 carrots, rough chopped
1 onion, rough chopped
2 ribs celery, rough chopped
1/2 recipe tomato sauce (above)
1/4 cup whole milk

Steps:

  • Preheat the oven to 350 degrees F.
  • Tomato Sauce:
  • In a medium pot, heat the olive oil and add the onions and garlic. Season with salt and pepper, to taste. When it turns light brown, add the thyme, bay leaf and tomatoes. Simmer for 20 minutes, then taste for seasoning. Add more salt and pepper, if desired. Remove and discard the thyme and bay leaves. Stir in the basil leaves and shut off the heat to allow the sauce to "rest."
  • Pasta: Bring the water to a boil over medium heat. Add the salt and the lasagna sheets. Cook for 4 minutes, drain and rinse under cold water. The pasta should still be very firm to the touch. Separate the sheets carefully so they don't stick together.
  • Divide the tomato sauce in half and reserve half for the Bolognese and half for the lasagna.
  • Assemble the lasagna:
  • Spoon a thin layer of the sauce in the bottom of the baking pan. Arrange a layer of pasta sheets over the sauce. Sprinkle some of the mozzarella and Parmesan over the pasta and another thin layer of sauce. Repeat the layering process 2 more times. It is important there be remaining cheese and sauce for the top. Cook's Note: I love to get a corner piece from the pan and pick at the crispy edges of the top layer. When you finish, there should be 4 layers of pasta and 5 layers of filling.
  • Cover the dish tightly with aluminum foil and put it in the center of the oven. Bake for 45 minutes. Raise the temperature of the oven to 450 degrees F and remove the aluminum foil. Bake until the top browns slightly, about 10 to 15 minutes. Remove the pan from the oven and let it cool for 15 minutes or so before serving.
  • Make the Bolognese while the lasagna is baking:
  • In a large wide pot over medium-high heat, add the olive oil. Add the ground beef and cook until brown, about 4 to 5 minutes, stirring with a wooden spoon to break up the pieces. Season with salt and pepper, to taste. Remove the beef from the pot and set aside. Set the pot back over the heat and add a little more olive oil. Add carrots, onion and celery. Cook until browned, about 5 minutes. Add the beef back to the pot, then add the reserved 1/2 recipe of tomato sauce. Cover slightly and simmer for 20 minutes.
  • When done, finish with milk, taste, season and serve, spooned over the lasagna.

1 medium carrot, peeled, coarsely chopped
1 celery stalk, coarsely chopped
2 tablespoons olive oil
1 pound ground beef chuck
1 pound ground pork
4 ounces pancetta (Italian bacon), finely chopped
Kosher salt, freshly ground pepper
1 cup dry white wine
1 cup whole milk
1 14.5-ounce can crushed tomatoes
3 cups low-sodium chicken broth, divided
Fresh pasta dough:
1/2 teaspoons kosher salt
3 cups all-purpose flour, plus more
4 large eggs, room temperature
Béchamel:
5 tablespoons unsalted butter
1/4 cup all-purpose flour
4 cups whole milk, warmed
Pinch of freshly ground nutmeg
Kosher salt
Assembly:
Kosher salt
Unsalted butter, room temperature (for dish)
2 cups finely grated Parmesan

Steps:

  • Up to two days ahead
  • Make the Bolognese sauce Pulse onion, carrot, and celery in a food processor until finely chopped.
  • Heat olive oil in a large heavy pot over medium heat. Add ground beef, ground pork, pancetta, and vegetables; cook, breaking up ground meat with a spoon, until moisture is almost completely evaporated and meat is well browned, 25-30 minutes; season with salt and pepper.
  • Add wine to pot and bring to a boil, scraping up browned bits from bottom of pot, about 2 minutes. Add milk; bring to a boil, reduce heat, and simmer until moisture is almost completely evaporated, 8-10 minutes. Add tomatoes and 2 cups broth; bring to a boil, reduce heat, and simmer, adding water by 1/2-cupfuls if sauce looks dry, until flavors meld and sauce thickens, 2 1/2-3 hours.
  • Let sauce cool, then cover and chill at least 12 hours or up to 2 days. (Letting the sauce sit will give it a deeper, richer flavor.)
  • Up to one day ahead
  • Make the fresh pasta dough Whisk salt and 3 cups flour in a large bowl, make a well in the center, and crack eggs into well. Mix eggs with a fork, then slowly mix in flour until a shaggy dough forms. Turn out dough onto a lightly floured surface and knead, dusting lightly with flour if sticky, until smooth, about 5 minutes (it will be fairly stiff). Wrap in plastic; let sit until dough holds an indentation when pressed, 1-2 hours.
  • Chill dough if you are not rolling it out right away. Bring to room temperature before rolling out, about 1 hour.
  • Make the noodles Set pasta maker to thickest setting; dust lightly with flour. Divide dough into 4 pieces. Working with 1 piece at a time and keeping remaining dough wrapped in plastic as you work, flatten dough into a narrow rectangle (no wider than mouth of machine); pass through rollers . Fold dough as needed to fit and run through again. Repeat without folding, adjusting machine to thinner settings after every pass and dusting with flour if sticky, until pasta sheet is 1/16" thick (setting 8 on most machines). Place pasta sheets on a lightly floured surface and cut crosswise into 16 8"-long noodles.
  • If making noodles ahead, stack on a baking sheet with a piece of parchment paper between each layer. Cover with plastic wrap; chill.
  • Make the béchamel Heat butter in a medium saucepan over medium heat until foaming. Add flour and cook, whisking constantly, 1 minute. Whisk in warm milk, 1/2-cupful at a time. Bring sauce to a boil, reduce heat, and simmer, whisking often, until the consistency of cream, 8-10 minutes; add nutmeg and season with salt. Remove from heat, transfer to a medium bowl, and press plastic wrap directly onto surface; let cool slightly. Chill if not using right away.
  • Day of
  • Reheat the sauces Combine Bolognese sauce and remaining 1 cup broth in a large saucepan over medium heat, and heat until sauce is warmed through.
  • Meanwhile, if you made the béchamel ahead of time, heat in a medium saucepan over low heat just until warmed through (you don't want to let it boil).
  • Cook the noodles Working in batches, cook fresh lasagna noodles in a large pot of boiling salted water until just softened, about 10 seconds. Remove carefully with tongs and transfer to a large bowl of ice water; let cool. Drain noodles and stack on a baking sheet, with paper towels between each layer, making sure noodles don't touch (they'll stick together).
  • Assemble the lasagna Preheat oven to 350°F. Coat a 13x9" baking dish with butter.
  • Spread 1/4 cup béchamel in the prepared baking dish. Top with a layer of noodles, spread over a scant 3/4 cup Bolognese sauce, then 1/2 cup béchamel, and top with 1/4 cup Parmesan. Repeat process 7 more times, starting with noodles and ending with Parmesan, for a total of 8 layers. Place baking dish on a rimmed baking sheet and bake lasagna until bubbling and beginning to brown on top, 50-60 minutes. Let lasagna sit 45 minutes before serving.
  • Lasagna can be assembled 12 hours ahead. Cover and chill. Let sit at room temperature 2 hours before baking. Cook, covered with foil until the last 20 minutes, then finish cooking uncovered.

TRADITIONAL LASAGNA BOLOGNESE

In this hearty lasagna, an herbed ricotta mixture and Bolognese sauce, thick with ground sirloin and veal, are layered with noodles and baked. This lasagna was designed for a deep-dish baking pan. You can use a standard nine-by-thirteen-inch baking pan, but you will have extra sauce.

Bolognese Sauce for Traditional Lasagna Bolognese
3 pounds fresh ricotta cheese
3 large egg yolks
1 cup grated Parmesan cheese
1 tablespoon plus 1 1/2 teaspoons coarse salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
Pinch of ground cayenne pepper
2 tablespoons extra-virgin olive oil
1 pound uncooked lasagna noodles
1 pound fresh mozzarella cheese, sliced into 1/4-inch rounds

Steps:

  • Bring sauce to room temperature. In a large bowl, whisk together ricotta, egg yolks, Parmesan, 1 1/2 teaspoons salt, black pepper, nutmeg, and cayenne pepper. Chill filling until ready to assemble lasagna.
  • Preheat oven to 400 degrees. Butter an 11-by-14-by-3-inch lasagna baking pan. Bring a large pot of water to a boil. Add olive oil and remaining tablespoon of salt. One at a time, add lasagna noodles; cook until very al dente, 2 to 3 minutes less than the manufacturer's instructions. Remove noodles with tongs; drain in a colander.
  • Spread about 3 cups of sauce on the bottom of the prepared baking dish. Place a single layer of lasagna noodles over the sauce, overlapping them slightly. Spread about 2 cups sauce over the noodles and about half the ricotta filling mixture over the sauce.
  • Top with a layer of lasagna noodles, again slightly overlapping them. Repeat with more sauce and remaining ricotta filling mixture. Top with a final layer of lasagna noodles. Spread a layer of sauce over the noodles, and finish with a layer of sliced mozzarella rounds.
  • Bake until the sauce is bubbling and the cheese is melted, at least 1 hour. Cover with aluminum foil if the cheese starts to brown too early. Let the lasagna stand 10 to 15 minutes before serving.

1 cup freshly grated parmesan cheese
2 tablespoons butter
6 slices bacon, diced
1/4 lb cooked ham, diced
1/2 lb ground veal (or 1/4 pound of each) or 1/2 lb ground pork (or 1/4 pound of each)
1 1/2 cups chopped onions
1/2 cup finely chopped carrot
1/4 cup thinly sliced celery
3 garlic cloves, minced
1 pinch of dried clove
3 tablespoons tomato paste
1 cup dry white wine
4 cups chicken stock
1 1/2 teaspoons salt
1/4 teaspoon black pepper
1/2 cup heavy cream
1/4 cup chopped parsley
4 1/2 cups whole milk

Steps:

  • For Bolognese Sauce: In large pot heat butter over medium-high heat.
  • Add bacon and ham and saute until carmelized and light brown, about 10 minutes.
  • Add ground meats and cook over high heat until well browned and stirring constantly, about 20 minutes.
  • Add the onions, carrots, celery and mushrooms and cook until soft, about 5 minutes.
  • Add garlic, cloves and nutmeg to the pan and cook for 2 minutes.
  • Add wine and cook till almost evaporated.
  • Add stock, simmer over medium-high heat about 45 minutes or until sauce is thickened and flavorful.
  • Season to taste with salt and pepper.
  • Stir in the creamand parsley and adjust seasoning if necessary.

  • Bechamel Sauce:In saucepan, melt butter over low heat and stir in flour, stirring constantly until smooth, about 2 minutes.
  • Slowly whisk in milk to blend together.
  • Set over high heat and quickly bring to a boil for 1 minute, stirring constantly.
  • Allow to cook for 5 minutes or so until floury taste is gone.
  • Remove from heat and add salt and nutmeg to taste.
  • To assemble:Preheat oven to 350.
  • Butter a large rectangular baking dish.
  • Spoon 1/2 cup of meat sauce onto the bottom of the dish.
  • Cover with 1 layer of cooked lasagna noodles.
  • Top with 1 layer of meat sauce, completely covering noodles, then add a light dusting of cheese.
  • Repeat layering in orders given until all have been used, ending with a topping of bechamel sauce and cheese.

1 cup finely grated Parmigiano-Reggiano
4 cups whole milk
1 bay leaf, preferably fresh
3 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 tablespoon kosher salt
1/2 teaspoon ground nutmeg
4 cloves garlic
2 stalks celery, roughly chopped
2 medium yellow onions, roughly chopped
1 medium carrot, roughly chopped
1/4 cup extra-virgin olive oil
4 tablespoons unsalted butter
4 ounces mortadella, ground or finely chopped
4 ounces pancetta, ground or finely chopped
2 tablespoons kosher or sea salt
1 teaspoon ground black pepper
1 teaspoon ground nutmeg
1 1/4 pounds ground beef, at room temperature
1 1/4 pounds ground pork, at room temperature

Cover with a fresh pasta sheet, about 1 cup of the Ragu and about 1/2 cup more of the Besciamella. Lightly cover the surface with some of the grated cheese. Repeat this layering process until all of the pasta is used. Bake the lasagna uncovered, rotating once halfway through, 40 to 45 minutes. Allow to cool 1 hour, cut and serve.
  • Warm the milk and bay leaf over medium-high heat until just below a boil. Melt the butter over medium heat in another saucepot. When the butter is fully melted and begins to bubble rapidly, add the flour and whisk until fully incorporated. Continue to cook over medium heat until a smooth, blond-colored paste is formed, 4 to 5 minutes. Add about half of the scalded milk to the butter and flour paste, whisking constantly. Once it is fully incorporated, add the thickened milk mixture back into the remainder of the scalding milk, whisking continuously to avoid lumps. Reduce the heat to medium-low and cook until the sauce comes to gentle boil and is fully thickened. Season with the salt and nutmeg, whisk to combine and strain through a fine mesh strainer. Cover the surface of the besciamella with plastic wrap to prevent a skin from forming and allow to cool to room temperature.
  • Place the garlic, celery, onions and carrots in a food processor and process until very finely chopped. Add the oil and butter to a heavy-bottomed pot over medium heat. When the butter is melted, add the mortadella and pancetta and cook until the fat renders and the meats begin to brown slightly. Add the finely chopped vegetables, sprinkle with half of the salt, pepper and nutmeg and cook until softened and most of the liquid has evaporated.
  • Add the ground beef and pork, breaking apart as much as possible. Sprinkle with the remaining salt, pepper and nutmeg and cook, stirring frequently, until the meat looks fully cooked and begins to brown lightly on the bottom, about 30 minutes. Deglaze with the white wine and allow the liquid to reduce by half. Add the broth, cream and tomato puree. Bring to a simmer and reduce the heat to maintain a gentle simmer. Let the ragu cook 3 to 4 hours, stirring occasionally. Taste for seasoning and adjust, if necessary. Allow to cool, ideally overnight, to allow the flavors to develop.

But the effort required on the front end pays off greatly, especially since the dish can be prepared in advance. Start with this vegan Bolognese, and half your work is done. The rest comes together easily: Stir together a parsleyed ricotta filling, boil your noodles, assemble your lasagna and bake until bubbly and browned. Rich, creamy and deeply satisfying, this lasagna happens to be vegetarian, but your guests will hardly know the difference.

Unsalted butter, for greasing the pan
1 pound ricotta (about 2 cups)
1/3 cup finely chopped parsley, plus more for garnish
1/4 cup heavy cream or half-and-half
1 large egg, beaten
Pinch of ground nutmeg
3 cups shredded mozzarella (about 12 ounces)
Kosher salt and black pepper
1 pound (dried) lasagna noodles (about 20 sheets)
Olive oil, for drizzling
6 cups vegan Bolognese
1 cup finely grated vegetarian Parmesan (optional)

Steps:

  • Bring a large pot of water to a boil for the noodles. Heat oven to 375 degrees. Grease a 9-by-13-inch baking dish with butter. Set aside.
  • While the water comes to a boil, prepare the ricotta filling: In a large bowl, stir together the ricotta, 1/3 cup parsley, cream, beaten egg and nutmeg. Fold in 2 cups mozzarella. Season with salt and pepper; set aside.
  • Once the water comes to a boil, season it generously with salt, then cook the noodles just until slightly softened, about 6 minutes. (The noodles shouldn't be fully cooked so they hold up after baking.) Transfer the cooked noodles to a colander and rinse immediately under cold water. Drizzle with oil immediately and toss to coat to prevent sticking.
  • Assemble the lasagna: Spoon about 1 cup sauce into the prepared baking dish and spread into an even layer. Top with one layer of lasagna noodles, trimming the noodles as needed. (They can overlap slightly, but should be trimmed if the overlap is significant.) Dollop a heaping 3/4 cup ricotta mixture on top of the noodles, and spread in an even layer. Pour 1 cup sauce on top, and spread in an even layer. Repeat with 3 more layers of noodles, ricotta and sauce. Top with one final layer of noodles, then a final layer of sauce. Sprinkle evenly with the remaining mozzarella, then the Parmesan.
  • Cover the lasagna tightly with aluminum foil and bake until warmed through and bubbling, about 30 minutes. Remove foil and broil on the top rack until browned in spots, about 3 minutes.
  • Sprinkle with finely chopped parsley, then let cool about 10 minutes before serving.

5 cups crushed tomatoes with added puree (from two 28-ounce cans)
1 cup chopped fresh basil, divided
2 tablespoons chopped fresh oregano
1 15-ounce container whole-milk ricotta cheese
3 cups (packed) coarsely grated whole- milk mozzarella cheese (12 ounces)
1 1/4 cups freshly grated Parmesan cheese, divided
16 6 1/2 x 3 1/4-inch no-boil lasagna noodles

Steps:

  • Heat oil in large nonstick skillet over medium-high heat. Add onions, carrot, and fennel seeds; sauté 5 minutes. Add sausage and garlic; sauté until sausage is cooked through, breaking into pieces, 8 to 10 minutes. Add wine; boil 1 minute. Add tomatoes, 1/2 cup basil, and oregano. Bring to boil. Reduce heat; simmer until sauce thickens, about 10 minutes. Season with salt and pepper.
  • Combine ricotta, mozzarella, 1 cup Parmesan, and 1/2 cup basil in medium bowl; stir to blend. Season with pepper. DO AHEAD: Sauce and cheese mixture can be made 1 day ahead. Cover separately; chill.
  • Place noodles in large bowl; cover with hot water. Soak until pliable, separating occasionally, about 30 minutes. Drain well.
  • Preheat oven to 375°F. Spread 1 cup sauce over bottom of 13 x 9 x 2-inch glass baking dish. Cover with 4 noodles, arranging crosswise. 28 ounces whole tomatoes

2 tablespoons flat-leaf parsley, finely chopped
2 cups whole milk
3 garlic cloves, peeled
1 bay leaf
1/2 cup unsalted butter
1/2 cup all-purpose flour
1/4 teaspoon fresh grated nutmeg

1 lb buffalo mozzarella, torn in pieces
1/4 cup grated parmesan cheese

Steps:

  • Make the Bolognese. Put onion, carrot, celery, garlic, and sage in a food processor and process until you have a smooth vegetable pulp. Coat a large, heavy pot with oil and set over medium heat. Add vegetable pulp and saute until fragrant and some of the moisture has evaporated, about 5 minutes. Push the vegetable mixture to one side of the pan. Season ground beef and pork with salt and pepper and add to pan. Stir and break up meat until it is brown, then dust with the flour before adding wine, tomatoes, milk, and cinnamon. Bring to a boil, then reduce heat and simmer about 1 1/2 hours, uincovered, until sauce is thick. Add parmesan and parsley and season with salt and pepper if needed. Set aside while you make the bechamel.
  • To make the bechamel, set a large saucepan over medium heat. Add milk, garlic, and bay leaf and bring to a simmer to infuse milk with herbs. set a large saucepan over medium low heat. Add butter and melt, then sprinkle with flourwhile stirring with a wooden spoon. Once flourhas been combined with butter, grab a whisk and gradually pour in the herb infused milk, passing it through a sieve to strain out the aromatics. As the sauce thickens, continue to whisk over low heat, then add nutmeg. Season with salt and pepper and set aside to cool slightly.
  • Preheat oven to 350°F To assemble the lasagna, cut fresh pasta to fit pan if needed. Coat the bottom of a 13x9 pan with a thin layer of bechamel. Top with a layer of lasagna noodles. Top noodles with a layer each of bechamel, bolognese, and mozzarella pieces. Continue with layers until you have three complete layers, finishing with mozzarella.Sshower the top of the lasagna with parmesan and parsley. Bake, uncovered, on a tray ( to catch drippings) in the center of the over for 1 hour. If the top starts to brown tent with foil. Let the lasagna stand for 30 minutes before cutting.

Make ahead and refrigerate or freeze until ready to use. First is a Sugo di carne (tomato sauce), then a Balsamella sauce (Italian white sauce). Update 4/2010: Due to 2 comments I'm suggesting you use 3-4 T flour to thicken sauce but not too thick that it won't pour easily on top, if too thick, add a little milk a tablespoons at a time. Steps:

  • TOMATO SAUCE.
  • Place oil and butter in a saucepan, and turn the heat to medium.
  • When the butter starts foaming, add the diced onion, carrot, celery, and garlic.
  • Sauté and stir until the onion is soft and translucent.
  • This is the time to add the ground meat if using.
  • Stir with a wooden spoon, and break the meat into small bits. Cook until the meat is fully browned.
  • Add the wine, salt and pepper (to taste). Turn the heat to high, and let the wine evaporate. (Posting of 1/4 cup wine would not register correctly when entering recipe).
  • Add the tomato, nutmeg, and milk (milk helps cut down on acidity). When the sauce starts boiling, turn the heat to low.
  • Cover the saucepan and simmer slowly for about 1 hour, stirring occasionally.
  • WHITE SAUCE.
  • Place butter in a saucepan and turn the heat to low. When the butter is melted, remove the saucepan from the stove.
  • Add the flour, stirring continuously until golden.
  • Add the milk a little at a time. Put the saucepan back on the stove and slowly stir with a wooden spoon, until the sauce starts boiling and becomes thicker.
  • Turn heat off. Add salt to taste, and stir in the 1 oz. grated parmigiano cheese and pinch of nutmeg.
  • PASTA.
  • Begin cooking lasagna pasta in salted water as directed on package. Prepare al dente. To stop the cooking process, run cold water over drained pasta.
  • While pasta is cooking, begin.
  • PREHEAT oven to 350 degrees.
  • Grease heavily a large 13x9 baking dish.
  • Spread 2-3 Tbs. of tomato sauce over the bottom of the baking dish.
  • Place one layer of pasta over sauce in dish.
  • Spread with tomato sauce but not so thick you can't see pasta showing thru.
  • Spread with Balsamella white sauce. Try to pour as evenly as possible but don't blend. Not all tomato sauce should be covered.
  • Top with 2 ozs grated parmigiano reggiano cheese.
  • Repeat two times.
  • Top layer will be a beautiful marble of white sauce over the tomato sauce.
  • Bake for about 25 - 30 minutes. Doneness is when you fork the lasagna, it will pull out easily from the pasta.
  • Serve hot.

3 tablespoons unsalted butter
3 tablespoons extra-virgin olive oil
2 onions, cut into 1/4-inch dice
3 stalks celery, cut into 1/4-inch dice
3 carrots, cut into 1/4-inch dice
2 pounds ground sirloin
2 pounds ground veal
1 quart whole milk
2 cups dry red wine
1 quart Homemade Beef Stock, or two 14 1/2-ounce cans
1 cup tomato paste
1 1/2 teaspoons coarse salt
3/4 teaspoon freshly ground pepper

Steps:

  • In a large cast-iron or enamel pot, heat butter and olive oil over medium heat.
  • Add onions, and cook until they begin to soften, about 5 minutes. Add celery and carrots, and cook until the vegetables are tender, 8 to 10 minutes. Add ground sirloin and veal, and cook, stirring occasionally, until the meat is no longer pink. Add milk, and cook at a gentle simmer, skimming fat from surface, until the liquid has reduced by half, about 50 minutes.
  • Add wine, and simmer until liquid is reduced by half again, about 40 minutes.
  • Add beef stock, tomato paste, salt, and pepper; simmer gently until sauce thickens, 40 to 45 minutes. If using for lasagna, set aside to cool slightly before assembling. The sauce can be stored in an airtight container in the refrigerator for up to 3 days, or in the freezer for 2 months.

TEN-LAYER LASAGNA BOLOGNESE

From the Emilia Romagna region of Italy, this lasagna has cured many poor spirits here stateside. Delicious as the original may be, my multi layered version, packed with veggies, addresses each area carefully to yield a dish you enjoy guilt free.

3/4 tablespoon extra-virgin olive oil, plus more for greasing
8 ounces ground beef (80/20)
Kosher salt and freshly ground black pepper
20 basil leaves, torn into bite-size pieces
1 1/2 cups marinara sauce, such as Pomi
1 quart whole milk
1 tablespoon arrowroot
1/8 teaspoon freshly grated nutmeg
2 to 3 small zucchini, cut lengthwise into 1/8-inch-thick strips on a mandoline
6 ounces Parmigiano Reggiano
4 ounces no-boil lasagna sheets, such as Delallo's

Steps:

  • Preheat the oven to 375 degrees F.
  • Meanwhile, heat the oil in a large saucepan over medium-high heat. Sprinkle the ground beef with salt and pepper and add to the pan once the oil is smoking. Brown the beef on one side, about 2 minutes, then break it up with a spoon. Add the basil and then the marinara sauce. Bring the sauce to a simmer and cook until it is slightly thicker, about 1 minute. Set aside.
  • Add 1 tablespoon of the milk to a small bowl and mix with the arrowroot. Add the remaining milk to a small saucepot and bring to a simmer over high heat. Add the arrowroot mixture and whisk until thickened, about 30 seconds. Turn off the heat, add the nutmeg and whisk to combine. Season with salt and pepper and set aside.
  • Grease an 8-by-8-inch baking dish with oil. Spoon a little bit of Bolognese red sauce and a little bit of the white sauce on the bottom of the pan. Add a layer of the zucchini slices and grate the Parmigiano directly over the top to cover. Add a single layer, or 2 sheets of lasagna noodles - you can cut the noodles and use the trim if they don't fit perfectly. Repeat the layers until the dish is filled to the brim, making 10 layers. Sprinkle the top with any remaining Parmigiano. Place the pan in the oven and bake until golden brown and bubbly, about 40 minutes.
  • Remove from the oven, let stand for at least 5 minutes and then cut and serve.

LASAGNA WITH PESTO BECHAMEL AND TURKEY BOLOGNESE

A light and lively pasta dish which my twin sister and I who share a passion for cooking developed. It takes a bit of prep work but is well worth the effort. Leftovers if there are any can be very successfully frozen. We developed this recipe using a basic lasagna recipe taught to us by our old family friend from Bologna and lightened it up a bit and added a bit of zip.

1 lb ground turkey
1 stalk celery
1 stalk carrot
1 large onion
2 cloves garlic
olive oil
1/2 cup white wine
1 can tomato paste

3 cloves garlic
1/3 cup fresh parsley, chopped
1 cup olive oil
3/8 cup butter
1/3 cup flour
3 cups skim milk
1 package Barilla lasagna
parmesan cheese

Steps:

  • Bolognese Pasta Sauce: In food processor or blender, puree onion, celery, carrot, and garlic.
  • Cover bottom of heavy saucepan with olive oil, saute veggies in hot oil approximately 15 min.
  • Add turkey and saute until done; season with S&P.
  • Pour in white wine and deglaze until wine evaporates; pour in can of paste and stir in 4 cans of water.
  • Add fresh parsley and simmer partially covered until thickened, approximately 1 hour.
  • Pesto: Place all ingredients in blender or food processor and puree until smooth.
  • Set aside.
  • Bechamel: Melt butter in small saucepan, stir in flour and cook 5 minutes until mixture just starts to color.
  • Pour in milk, S&P, and stir until thickened, approximately 10 minutes.
  • Stir 1 cup pesto sauce into Bechamel.
  • Assemble lasagna: (the secret is to apply thin layers of sauce), in a baking dish approximately 11 X 13 place: 1st layer: Bolognese sauce, 2nd layer: lasagna sheets, 3rd layer: Bechamel/pesto sauce, 4th layer: Bolognese sauce, 5th layer: parmesan cheese, Repeat layers 2 through 5 until baking pan is filled.
  • Bake at 375 degrees for approximately 50 to 60 minutes covered with aluminum foil.
  • NOTES: An option would be to layer with spinach, broccoli, zucchini, cauliflower, or any single or combination of vegetables along with the Bolognese meat sauce or a simple marinara sauce.

Pinch freshly grated nutmeg
Coarse salt and freshly ground pepper
1 cup milk
Coarse salt
1 tablespoon olive oil

Steps:

  • Make the Meat Sauce: Heat olive oil in a large saucepan over medium-high heat. Add carrot, celery, and onion, and cook for 2 minutes. Add beef and pork, and cook, stirring occasionally, until meat is nicely browned, 15 to 20 minutes. Add tomatoes, tomato paste, and 1/4 cup water. Season with salt and pepper. Cook, covered, over low heat, stirring occasionally, for 1 hour. Remove from heat, and set aside.
  • Make the Lasagna Dough: In a food processor, combine flour, eggs, oil, and salt. Process until it forms a soft, but not sticky dough. If dough is sticky, it may be necessary to add a little more flour. Wrap dough with plastic wrap, and let rest for 30 minutes.
  • Make the Bechamel Sauce: In a small saucepan, combine butter and flour. Stir in nutmeg, and season with salt and pepper. Place over medium heat and stir in milk. Bring to a boil. Reduce heat to medium-low, and continue cooking until the mixture begins to thicken, about 2 minutes. Remove from heat, and set aside.
  • To assemble: Bring a large pot of salted water to a boil. Using a pasta machine, roll dough into long sheets as thin as possible. Let sheets dry for a few minutes. Then cut them into sections, each about 13 inches long. Add oil and lasagna sheets to boiling water. Cook, stirring gently to prevent them from sticking to one another, for about 2 minutes. Drain, and rinse under cold running water. Lay sheets out on a clean kitchen towel, and set aside until ready to use. Be sure not to let them stand for more than 30 minutes.
  • Preheat the oven to 350 degrees. Lightly butter a 13-by-9-inch baking dish. Spoon a little of the meat sauce into the bottom of the prepared baking dish, and spread to coat. Then, layer with lasagna sheets, one-sixth of the bechamel sauce, one-sixth of the meat sauce, and a little Parmesan. Repeat the layers five more times. Top with remaining Parmesan and pieces of butter. Bake until cheese begins to turn golden brown, 30 to 45 minutes. Serve warm.

  • Roll the pasta dough into thin wide sheets, and briefly cook them.
  • In separate saucepans, warm the besciamella and the Bolognese slightly, so they are loose and spreadable but not hot.
  • If you are going to bake the pasticciata right away, arrange a rack in the middle of the oven and preheat it to 375°.
  • Making the Base Layers:
  • Coat the bottom and sides of the dish thinly with 1/3 cup besciamella.
  • Spread 1/3 cup Bolognese on the bottom, over the besciamella.
  • Following the illustrations, drape pasta sheets the length of the pan so that they cover the bottom of the dish completely and extend over the short sides of the pan by 6 inches or so.
  • Spread 1/3 cup besciamella over the pasta.
  • Spread 1/3 cup Bolognese over the besciamella.
  • Drape pasta sheets perpendicular to the first, across the width of the pan, with the ends of the sheets extending over the sides of the pan by 6 inches or so. Pasta sheets should now completely hide the sides of the pan.
  • Making The Filling Layers:
  • Spread 2/3 cup besciamella over the pasta. Sprinkle 1/4 cup grated cheese all over. Spread 1 cup Bolognese in a thick layer. Cover with a third of the Muenster or mozzarella, shredded or in slices.
  • Fit another layer of pasta on top, covering only the inside of the pan now, cutting sheets if necessary to fit. Create another thick filling layer with 2/3 cup besciamella, 1/4 cup grated cheese, 1 cup Bolognese, and another third of shredded cheese.
  • Make another layer of pasta sheets, cut to fit, and top with a final filling layer (2/3 cup besciamella, 1/4 cup grated cheese, 1 cup Bolognese, and the last third of the shredded cheese).
  • Arrange another layer of pasta over the filling, cut to fit.
  • Making the Topping Layers:
  • Spread 1/3 cup besciamella over the pasta, and sprinkle 2 tablespoons grated cheese all over.
  • Repeat with a final layer of pasta, then besciamella, and then grated cheese.
  • Fold all the overhanging flaps of pasta onto the top of the pasticciata.
  • If they don't meet and cover the top, cut a piece of pasta to fit, or use all the remaining pasta here.
  • Spread the rest of the besciamella and Bolognese on, and sprinkle 2 tablespoons grated cheese all over.
  • Tenting The Dish And Baking:
  • If you want, you can bake the pasticciata later, or the next day, covering it with plastic wrap and refrigerating it in the meantime.
  • Before putting it in the oven, tear a long sheet of foil to form a tent over the pan. This will give the insides time to cook before the top browns. Arch the foil so it doesn't touch the pasticciata anywhere, and crimp it against the rim and outsides of the pan so it stays in place and has formed a good seal. With the tip of a sharp knife, poke five or six small holes in the foil to vent steam.
  • Set the pan on a baking sheet, put it in the oven, and bake for about 45 minutes, or until bubbling juices indicate that it's cooking all the way through-peek under the foil to check. Take the pan (on the baking sheet) out of the oven to remove the foil tent.
  • Loosen foil at the sides and lift it up carefully, so it doesn't touch the sticky top of the pasticciata. Return the pan to the oven, and bake for another 20 minutes or so, until the top is deeply colored and crisp.
  • Let the pasticciata sit uncovered for 20 minutes to settle before cutting it in squares and serving.

I got this recipe from our local paper. Others say it's Emeril's recipe, but it didn't say so in the paper. Either way, it's not mine, but I tried it and it rocked. It isn't like the lasagna you normally make, as it doesn't have Ricotta or Mozzerella. But trust it, it's different and it's awesome. It actually tastes more authentic than the cheesy style lasagna. Also, original recipe called for Spinach Pasta (homemade), but I substited Barilla brand (ready to bake) shells. If you don't know how to make a bechamel, I'll post a recipe and attempt to link it.

2 tablespoons butter
24 ounces flat lasagna noodles
8 cups bolognese sauce
4 cups bechamel sauce
2 cups parmigiano-reggiano cheese

Steps:

  • Grease a ceramic 9 x 13 casserole dish with butter and set aside (this is so that the noodles don't stick to the bottom, and it works better than putting sauce down, and tastes great, too).
  • Boil lasagna shells until al dente (look at directions on package), unless you're using the ready to bake type.
  • Arrange pasta into single layer in pan, cutting and patching to fit as needed.
  • Carefully top with a thin layer of bolognese (about 1 1/2 cups). Sprinkle liberally with parmiggiano cheese.
  • Arrange another layer of pasta on top, covering with bechamel (about 1 1/3 cup) and sprinkle again with parmiggiano cheese.
  • Repeat layers until you have at least 3 layers of bolognese and bechamel, then finish with another cup of the reserved bolognese, and finally top with parmigianno.
  • Bake at 350 degrees until hot and bubbly, about 50 minutes.
  • Let rest about 15 minutes before serving.
  • Serve with any remaining bolognese on the side.

This is an authentic tasting "ragu" sauce that is super rich and super flavorful. The bolognese portion of this recipe can be served over any thick pasta, as well as, be the primary component of this lasagna. I happen to LOVE this lasagna and have been tweaking it for years. I'm not a fan of ricotta cheese based lasagna's and as you'll see from this recipe...this is coupled with a beschemel type sauce rather than ricotta or cottage cheese. You can spice this one up further (I sure do!) with crushed red peppers in your sauce. You can also tone it down with mild italian sausage or turkey italian sausage. The Bolognese sauce can be made up to 3 days in advance and warmed up to make for the lasagna. This lasagna is also best baked right after assembling or the pasta will absorb the sauces and dry out. 2 tablespoons butter
1 tablespoon olive oil
1 onion, finely chopped
2 carrots, finely chopped
2 celery ribs, finely chopped
4 garlic cloves, finely chopped
3 links hot Italian sausage or 3 links hot Italian turkey sausage
1 lb lean ground beef
4 ounces ground lean pork (can be omitted to use all ground beef)
1/2 cup dry white wine
28 ounces crushed plum tomatoes
3 -4 cups beef stock
1/4 cup heavy cream (or 1/2 & 1/2)
12 no-boil lasagna noodles
3/4 cup fresh parmesan cheese
1/4 cup butter
1/2 cup all-purpose flour
3 3/4 cups milk, heated
salt
pepper

Steps:

  • First make the Bolognese Sauce:.
  • Brown and drain grease from the ground beef, ground pork and sausage in a large saute pan. Break up all lumps with spoon.
  • Add in 2 T butter and 1 T olive oil and saute the onions, garlic, carrots and celery until softened. Add salt and pepper to taste.
  • Add the wine and stir and then simmer for 5 minutes, or until reduced.
  • Add the tomatoes and 1 cup of beef stock and bring to a boil. Stir the sauce well, then lower heat and half cover pan with lid and simmer gently for 2 hours. Stir occasionally during this time and add more stock as it becomes absorbed.
  • Pour the cream into the sauce, stir well to mix, then simmer without lid for 30 minutes, stirring frequently.
  • AT THIS STAGE -- YOU CAN SERVE THIS OVER THICK PASTA. FOR LASAGNA BOLOGNESE -- CONTINUE WITH RECIPE.
  • Preheat oven to 375. If the bolognese sauce is cold, reheat it. Stir in enough stock to make it runny, if necessary.
  • Make the white sauce by melting 1/4 cup butter in a medium saucepan. Add the flour and cook, stirring for 1-2 minutes. Add the hot milk a little at a time, whisking vigorously after each addition. Bring to a boil and cook, stirring until the sauce is smooth and thick. Add salt and pepper to taste, whisk well, then remove from heat.
  • Spread 1/3 of Bolognese sauce over the bottom of a 9x13 baking dish.
  • Cover the Bolognese sauce in the base of the dish with 1/4 white sauce, followed by 4 sheets of lasagna. Repeat the layers twice more, then cover the top layer of lasagna with the remaining white sauce and sprinkle the grated Parmesan over the top.
  • Bake for 40-45 minutes or until the pasta feels tender when pierced with a fork. Let stand for 20 minutes before serving.

1 pound lasagna noodles
3 3/4 cups ragu
2 1/3 cups bechamel
1 1/12 cups grated Parmigiano-Reggiano cheese
Freshly ground pepper
Olive oil, for drizzling

Steps:

  • To cook pasta, add salt and 1 pound lasagna noodles (cook fresh noodles in batches of four) to a large pot of boiling water. Cook, stirring occasionally, until barely tender, 1 to 2 minutes for fresh or 6 to 8 minutes for dried. With tongs, transfer noodles to a bowl of very cold water to stop the cooking. Separate any that are stuck together. Lay noodles flat on baking sheets lined with clean kitchen towels; pat dry.
  • Preheat oven to 425 degrees, with rack in top third. Butter a 9-by-13-by-2-inch ceramic or glass baking dish; cover bottom with a layer of noodles. They should fit snugly but not overlap. Trim to fit dish.
  • Spread 1 1/4 cups ragu over noodles. Drop 2/3 cup bechamel in dollops over ragu. Gently spread bechamel with a rubber spatula. Sprinkle with 1/4 cup grated Parmigiano-Reggiano cheese. Repeat these layers three times.
  • Top with a layer of noodles. Spread 1/3 cup bechamel on top; sprinkle with 1/3 cup cheese. Season with freshly ground pepper, and drizzle with olive oil. Bake until the lasagna is golden brown and bubbling, about 25 minutes. Let stand 10 minutes before cutting with a serrated knife.
