SADDLE OF LAMB STUFFED WITH RATATOUILLE



Saddle of lamb stuffed with ratatouille image

Lamb and ratatouille were made for each other, and this is the dish to make when autumn vegetables are at their peak

5 tbsp olive oil
1 large onion , chopped
2 red peppers , deseeded and diced
1 small aubergine , diced
1 large courgette , diced
250g cherry tomato , halved
4 garlic cloves , crushed
1 bunch basil , shredded
1 tbsp tomato purée
pinch sugar
1 tsp white wine vinegar
about 2.4kg whole or 1.5kg boned saddle of lamb
a few salad leaves , to serve
olive oil , to serve

Steps:

  • First make the ratatouille. Heat 3 tbsp olive oil in a large frying pan. Add the onion, peppers, aubergine and courgette. Season with salt and pepper, then sizzle for 10 mins, tossing occasionally. Add the tomatoes, garlic, basil and tomato purée, plus a drop more oil if the pan is dry. Sprinkle over the sugar, add the vinegar and continue to cook for 5 mins more. Tip into a bowl and leave to cool slightly.
  • Open out the saddle of lamb and remove the 2 small, loose fillets of meat. Make a cut into each fillet, but do not completely cut them in two. Open them up and flatten them out, then set aside.
  • Place the saddle on a board, skin-side down, and season with salt and pepper. Spoon about one-quarter of the ratatouille down the gap in the centre between the main fillets of meat, then lay the 2 flattened smaller fillets over the ratatouille.
  • Lift one of the flaps up and over the meat and ratatouille, then repeat with the other flap to make a neatly packaged joint. Place the joint, flap-side down, on the board ready to be tied.
  • Using a good 3m length of butcher's string, tie the meat around the width twice. Secure with a knot but do not trim. Use the long piece of string to make a loop, then pull it over the lamb like a lasso. Pull to secure, but not too tightly. Repeat 6 times at even intervals along the joint. Flip the joint over and weave the string through the loops on the bottom of the joint. Tie the string and trim with scissors. You are now ready to roast your lamb.
  • Heat oven to 240C/220C fan/gas 9. Put the lamb in a roasting dish and drizzle with oil. Season generously, then roast, undisturbed, for 20 mins. Lower oven to 200C/180C fan/gas 6 and continue to roast for 40 mins. Remove the lamb and leave to rest for 30 mins.
  • Cut off the string, pour the roasting juices into a bowl, then remove the lamb to a board. Spoon off all the fat and, if needed, reheat the juices in a pan. If the remaining ratatouille is cold, reheat in the microwave. Dress the salad in a drizzle more oil and plate up.
  • Neatly carve the lamb into slices about 3cm thick. Carefully lift the slices and place onto warmed plates. Use a couple of tablespoons to shape 2 quenelles of ratatouille and place them next to the lamb. Pile a few dressed salad leaves between the lamb and ratatouille. Serve straight away with the roasting juices on the side.

Roasted Leg of Spring Lamb with Roasted Garlic and Rosemary Juice and Portobello and Eggplant Ratatouille image

2 portobellos, stemmed and halved
2 Asian eggplant, halved lengthwise
1 zucchini, halved lengthwise
1 yellow squash, halved lengthwise
1 red onion, peeled and sliced into 3 parts width wise
1 red pepper, stemmed, seeded, and quartered
1 jalapeno, seeded and halved lengthwise
1 pint basket cherry tomatoes, halved
1/4 cup olive oil
4 cloves garlic, minced
1 tablespoon rosemary, minced
1 tablespoon basil, minced
Salt and pepper
4 heads garlic, roasted; paper skin removed and cored
2 tablespoons olive oil
2 tablespoons minced fresh rosemary
Salt and pepper, to taste
1/2 cup juice from ratatouille
2 tablespoons garlic, minced
2 teaspoons minced fresh rosemary
1/2 teaspoon salt
1/2 teaspoon crushed black pepper
1 tablespoon olive oil
1 (6 pound) leg of lamb, hip bone removed

Steps:

  • Portobello and Eggplant Ratatouille: Place the portobellos, eggplant, zucchini, yellow squash, onion, pepper, jalapeno and cherry tomatoes in a large bowl. Add olive oil and toss. Season with salt and pepper. Spread the vegetables in a single layer over grill. Grill over medium heat for 4 minutes. Turn and cook 4 more minutes. Starting with the tomatoes, remove all the vegetables from the grill. Place the vegetables on a cutting board and chop coarsely. Add garlic, rosemary, basil and salt and pepper to taste. Allow to sit 1/2 hour. After 1/2 hour drain 1/2 cup of the juice from the vegetables and save for the Roasted Garlic and Rosemary Juice.;
  • Roasted Garlic and Rosemary Juice: Puree the garlic, rosemary, olive oil and ratatouille juice in a blender. Season with salt and pepper.;
  • Roasted Leg of Lamb: Combine garlic, rosemary, salt and pepper in a bowl, or mortar, and crush together. Add oil and rub the mixture over the lamb vigorously, forcing the mixture into the meat. Skewer the lamb and place on a spit. Roast the lamb 1 1/2 hours over medium heat. Remove from heat and allow to sit for 10 minutes. Take the bone out and slice the leg into 1/4-inch slices. Arrange slices into a circle around the outside of a platter. Place the ratatouille in the center and drizzle juice around the lamb.

2 green zucchini, diced
2 yellow zucchini, diced
2 Japanese eggplants, diced
2 yellow bell peppers, diced
2 red bell peppers, diced
Olive oil
2 tablespoons chopped garlic
1 brown onion, diced
2 tomatoes, peeled, seeded and diced
1/4 to 1/2 cup tomato paste
3 (6 rib) lamb racks, fat trimmed, skin removed
2 cups lamb stock
2 tablespoons butter
2 tablespoons chopped fresh tarragon
2 tablespoons chopped parsley
2 tablespoons chopped basil

Steps:

  • Preheat oven to 500 degrees F.
  • Separately, saute the green zucchini, yellow zucchini, eggplant, yellow bell peppers and red bell peppers, in a hot pan with olive oil for 2 minutes, mixing often. Combine the vegetables in a bowl. Heat a large saucepot. Sweat the garlic and onions in olive oil. Add tomatoes and tomato paste and cook for 3 minutes over moderate heat. Add the rest of the pre-cooked vegetables and mix. Season with salt and pepper to taste, and cook for about 10 minutes on low heat, or until just a slight crunch remains in the vegetables. Keep warm.
  • Heat a large saute pan. Season the lamb racks with salt and pepper. Add olive oil to the hot pan and sear the lamb racks on each side for 1 1/2 minutes. Transfer lamb to a roasting pan and place in the oven. Cooking time is 10 minutes for rare, 13 for medium rare, 16 for medium and 20 minutes for well done.
  • Remove lamb and let rest for at least 10 minutes, but no longer than 15 minutes. While lamb is cooking, heat stock to a boil and add 2 tablespoons butter. Whisk until butter has disappeared. Add tarragon.
  • Heat 6 plates. Reheat ratatouille. Add 3 tablespoons olive oil and chopped basil and parsley. In the center of the plates, put a nice sized spoon of ratatouille. Slice the lamb and arrange 3 lamb chops around the vegetables and circle with the sauce.

LAMB AND RATATOUILLE KEBABS

1 pound lean lamb, cut into 1-inch cubes
3 tablespoons olive oil
2 tablespoons red wine vinegar
3 large garlic cloves, pressed
1 teaspoon dried rosemary, crumbled
1 teaspoon dried thyme, crumbled
1 teaspoon dried basil, crumbled
1/4 teaspoon cayenne pepper
2 small zucchini, cut into 3/4-inch-thick slices
2 small Japanese eggplants, cut into 3/4-inch-thick slices
1 small red or green bell pepper, cut into 1-inch pieces
8 cherry tomatoes
6-inch-long bamboo skewers
Additional olive oil

Steps:

  • Combine first 8 ingredients in glass baking dish. Marinate 2 hours at room temperature or up to 8 hours in refrigerator.
  • Drain lamb, reserving marinade. Add vegetables to marinade and toss well. Thread lamb on skewers, alternating with vegetables. Prepare barbecue or preheat broiler. Brush kebabs with additional olive oil. Season with salt and pepper. Grill or broil until lamb is slightly charred on outside and pink on inside and vegetables are tender, turning occasionally, about 5 minutes.

SEARED DIJON LAMB LOIN WITH ASIAN 'RATATOUILLE' GARLIC-MINT TAPENADE



Seared Dijon Lamb Loin with Asian 'Ratatouille' Garlic-Mint Tapenade image

1/2 cup red wine
1/2 cup canola oil
1 tablespoon minced garlic
1/4 cup naturally brewed soy sauce
3 racks of lamb, off the bone, each loin cut into 4 petit filets
Freshly cracked black pepper
Asian Ratatouille, recipe follows
Garlic-Mint Tapenade, recipe follows
5 Thai basil leaves, cut into chiffonade, for garnish
Extra-virgin olive oil, for garnish
Olive oil, to cook
1 medium onion, medium dice
6 cloves garlic, thinly sliced
1/2 tablespoon rinsed and minced fermented black beans
2 Japanese eggplants, medium dice (or 1 medium regular eggplant)
1 large tomato, medium dice
1 medium zucchini, medium dice
10 Thai basil leaves, cut into chiffonade
1 lemon, juiced
Salt and black pepper
5 cloves garlic, peeled
10 Nicoise black olives, pitted
10 mint leaves, minced (it will turn brown)
1 tablespoon extra-virgin olive oil
Pinch salt

Steps:

  • Mix Dijon, wine, oil, garlic, and soy. Marinate the lamb filets for 1 hour.
  • Coat a large saute pan on high heat with oil. Season the lamb filets with pepper (salt is optional since it has been in the soy marinade) and pan sear both sides until brown, about 6 minutes total.
  • Let rest for 3 to 5 minutes.
  • On a large plate, place a small mound of ratatouille in the middle. Surround with 3 filets of lamb, topped with Garlic-Mint Tapenade. Garnish with basil leaves and drizzle with a little extra-virgin olive oil.
  • Wine: Big, Bordeaux blend, 2nd growth
  • In a large saute pan or wok, coat lightly with olive oil and saute the onions, garlic, and fermented beans for 1 minute. Add the eggplant and saute 2 minutes. Add the tomatoes and zucchini and season with salt and pepper. Reduce heat and simmer until soft, about 15 to 20 minutes. Add basil and lemon juice just before serving.
  • In a mortar and pestle, mash the garlic and olives. Add the mint, oil, and salt.

2 tablespoons butter
2-1/2 cups water
3 medium tomatoes, peeled, seeded and chopped
1 medium zucchini, sliced
1-1/2 cups sliced fresh mushrooms
1 small onion, chopped
6 green onions, sliced
3 garlic cloves, minced
2 tablespoons olive oil
1 pound cooked lamb or beef, cut into thin strips

Steps:

  • Set rice seasoning packet aside. In a large skillet, saute the rice mix in butter until browned. Stir in water and contents of seasoning packet; bring to a boil. Reduce heat; cover and simmer for 15 minutes. , Meanwhile, in another skillet, saute vegetables in oil until crisp-tender. Add lamb and vegetables to the rice. Cover and simmer for 5-10 minutes or until the meat is no longer pink and rice is tender.
