1 to large garlic clove (minced)

¾ teaspoon black pepper
¾ cup extra virgin olive oil

  • Put the lemon juice, oregano, garlic, salt and pepper in a bowl. Whisk to combine.
  • While you are whisking vigorously, slowly drizzle in the extra virgin olive oil.

Steps:

  • Combine all the ingredients in a blender. Blend on high for a few seconds until the sauce becomes thick and creamy.
  • Add to your favorite fish, vegetable or chicken dish as a seasoning.

¼ cup lemon juice
1 teaspoon dried oregano
1 pinch salt
1 pinch pepper

Steps:

  • In a small jar with a tight-fitting lid, combine the olive oil, lemon juice, oregano, salt and pepper. Seal, and shake until well blended. Use to brush onto chicken or fish when cooking, and set aside some for serving with the meal. Shake or stir before using, as the oil will separate.

1/2 cup extra virgin olive oil
1/4 cup fresh lemon juice (only fresh!)
1 generous teaspoon Dijon mustard (or similar mustard)
1 generous teaspoon finely-minced fresh parsley (optional)
1/2 teaspoon dried Mediterranean oregano
salt and pepper, to taste

Steps:

  • Whisk together all the ingredients in a small bowl until sauce is lightly emulsified. Serve over your favourite fish that has been simply-prepared.
