1 cup tomatoes
3 green onions, sliced
16 ounces refried beans
1 package taco seasoning
1 cup sour cream
1 cup guacamole
1 cup salsa
1 cup lettuce
1 cup Mexican blend cheese

Steps:

  • Mix the taco seasoning with the sour cream and set aside.
  • Refried beans, sour cream/taco seasoning mix, guacamole, salsa, lettuce, and cheese.
  • Top with optional toppings as desired: olives, tomatoes, and green onions.

This recipe comes from my friend Ann in Maryland. I have made this many times, and it's always devoured! It's not necessarily "quick and easy," because I hand-chop the olives and make my own guacamole, but the extra effort makes a big difference. Ann's original recipe did not call for jalapeno and cilantro, but I love it! She isn't an olive lover, so she omits those. Really a great dip that can be fiddled with to suit individual tastes!

20 ounces can vegetarian refried beans
2 large very ripe avocados
1 tablespoon lime juice
1 cup sour cream
1 cup mayonnaise
1 (1 1/2 ounce) packet taco seasoning
2 cups finely-grated sharp cheddar cheese
1 cup pitted kalamata olive, chopped
1 pint grape tomatoes, chopped and wept between paper towels
1 bunch green onion, chopped
1 jalapeno pepper (optional)
3/4 cup cilantro, minced

Steps:

  • Mix taco seasoning with sour cream and mayonnaise, and let sit for at least an hour.
  • Mash avocados with lime juice.
  • On a large serving platter, spread beans approximately 1/2" thick, using a spatula. Carefully top with avocado mixture, spreading to almost cover the bean layer. Top with sour cream mixture.
  • Finish with a layer of cheese, olives, tomato, green onions, and cilantro.
  • Refrigerate until ready to serve. Serve with tortilla chips or scoops.

1 (5 1/4 ounce) can whole green chilies, drained
cooking spray
1/2 lb lean ground beef
1 cup chopped onion
2 teaspoons chili powder
1/2 teaspoon cumin
1/4 teaspoon salt
2 garlic cloves, minced
1 (10 ounce) can diced tomatoes and green chilies, such as Ro-tel brand, undrained
2 cups frozen whole kernel corn, thawed
1 (16 ounce) can fat-free refried beans
1 1/2 cups shredded cheese
1 cup chopped tomato
1/2 cup chopped green onion

Steps:

  • preheat oven to 375°F.
  • Cut green chilies into half lengthwise. Arrange in single layer in an 8 square baking dish coated with cooking spray.
  • Spray large nonstick skillet with cooking spray, heat over med-high heat. Brown beef.
  • Add onion, chili powder, cumin, salt, and garlic, saute 5 minutes.
  • Add Ro-Tel, cook 5 minutes or until liquid evaporates.
  • Spoon beef mixture over chilies.
  • Top with corn.
  • Carefully spread beans over corn.
  • Sprinkle cheese over beans.
  • Bake 30 minutes.
  • Let stand 5 minutes.
  • Top with chopped tomato and green onion.
  • Serve.
