This is a simple but delicious recipe for Kulfi (Indian Ice Cream) that I got from my sister-in-law. I have made this several times, and it always gets rave reviews - even the kids love it! For extra flavor, you could add a few drops of rose water or ground pistachios.

1 ¼ cups sweetened condensed milk
1 (16 ounce) container frozen whipped topping, thawed
4 slices white bread, torn into pieces
½ teaspoon ground cardamom

Steps:

  • Combine evaporated milk, condensed milk and whipped topping in a blender and blend in pieces of bread until smooth.
  • Pour mixture into a 9x13 inch baking dish or two plastic ice cube trays, sprinkle with cardamom and freeze for 8 hours or overnight.

I grew up near Little India in California, and I loved the desserts from Indian sweets shops. One of them sold kulfi, a spiced and nutty frozen custard in cone molds. 1 can (14 ounces) sweetened condensed milk
1 cup whole milk
1 cup heavy whipping cream
1/4 cup nonfat dry milk powder
1/2 teaspoon ground cardamom
1/4 teaspoon sea salt
1 pinch saffron threads or 1/4 teaspoon ground turmeric, optional
1/4 cup chopped cashews, toasted
1/4 cup chopped shelled pistachios
1/4 teaspoon almond extract

Steps:

  • In a large heavy saucepan, whisk milks, cream, milk powder, cardamom, sea salt and, if desired, saffron until blended. Cook over low heat until mixture thickens slightly, about 15 minutes, stirring constantly. Do not allow to boil. Remove from heat. Strain through a fine-mesh strainer into a small bowl; cool., Stir in cashews, pistachios and extract. Transfer to six 4-oz. ramekins. Cover and freeze for 8 hours or overnight. If desired, serve with additional nuts.

A wonderful Madhur Jaffrey recipe. You don't need an ice-cream maker for this recipe, but if you do have one, you may use it! There are quite a few recipes posted here which includes cream. Kulfi is not made with cream, it's made with reduced milk. You may use full-cream or semi-skimmed milk. So, it would help to have a wide, heavy based sauce-pan for boiling down the milk, but a heavy non-stick pan would do as well. Please note, the cooking time does not include cooling time and freezing time.

2 liters milk
8 -10 green cardamom pods
4 -5 tablespoons sugar
15 g almonds, blanched and chopped
25 g pistachios, unsalted and chopped

Steps:

  • Pour the milk into a wide, heavy based sauce pan and bring to boil over high heat, stirring constantly.
  • As soon as the milk begins to rise, turn the heat down just to the point to allow the milk to simmer vigorously but without boiling over.
  • Add in the cardamom pods.
  • Leave the milk to boil and stir the sides of the pan constantly to avoid scalding.
  • Whenever a film forms on top of the milk, just stir it in .
  • The milk has to reduce to about a third of the original amount, about 750 ml (1 1/4 pints) which will take about 45 minutes.
  • When the milk has reduced, remove the cardamom pods and discard them.
  • Add in the sugar and almonds, stir and simmer gently for 2-3 minutes.
  • Pour the reduced milk into a bowl (which can be put into the freezer) and let it cool completely.
  • Add half of the chopped pistachios and stir them in .
  • Cover the bowl with an aluminum foil and put it in the freezer.
  • (I do not have an ice-cream maker, but if you do, then you can pour the milk into the machine and get it going).
  • Meanwhile, put 6 small individual cups or a 900ml ( 1 1/2 pints) pudding basin in the freezer.
  • Every 15 minutes or so, remove the ice-cream bowl from the freezer and give the ice-cream a good stir.
  • As the ice-cream begins to freeze, it will become harder to stir but when it becomes almost impossible to stir, take out the cups or pudding basin from the freezer and divide the ice-cream between the cups or empty it into the pudding basin.
  • Sprinkle the remaining pistachios over the top and cover with aluminum foil sealing them well on the edges.
  • Return them back to the freezer to let the ice-cream harden (for at least 4 hours).
  • If it's in individual cups, then remove the cups from the freezer 10-15 minutes before you want to serve it to soften slightly.
  • If it's made in the pudding basin, you can put it in the fridge 20-30 minutes before serving.
  • Remove the ice-cream from the pudding basin by running a sharp knife around the edges of the ice-cream and slip it onto a serving plate (it should slip off easily, if it doesn't then dip the bowl in hot water and try again).
  • Cut into 6 slabs and serve.
  • Enjoy!

True rabdi is simply milk that has been brought to a boil and then simmered until most of the water evaporates, and it is thick and creamy. Mixed with sugar, nuts such as almonds and pistachios, and flavorings, rabdi is a dessert in itself. It is also used to make other Indian desserts. Rabdi is incredible when served as a sauce over grilled, stewed or poached fruits - try it with pineapples, apples, pears, mangos, peaches and nectarines. When frozen, it transforms into Kulfi (Indian ice cream.) To make flavored kulfi, start with the recipe for Traditional Thickened Milk Pudding, which is more time-consuming but more authentic, then choose any of the following flavors. Freeze as directed in Quick and Easy Indian Ice Cream. This green-tinted kulfi is one of the most popular. The ground pistachios add to the overall taste and the chopped ones, a delicate punch.

1/3 gallon whole milk
1/4 cup sugar, or to taste
1/2 teaspoon ground green cardamom seeds
1/4 cup ground pistachios
1 to 2 drops green food coloring, optional
1/4 cup blanched pistachios, coarsely chopped

Steps:

  • To make the pudding: Place the milk in a large, heavy wok or skillet and bring to a boil over high heat. Continue to boil, stirring, 2 to 3 minutes. Reduce the heat to medium-low and simmer, stirring and scraping the bottom and sides of the wok often, until the milk is reduced by at least 3/4, about 45 minutes. You should be left with about 2 cups of condensed milk. (It should have a few lumps.)
  • Mix in the sugar, cardamom seeds, ground pistachios and food coloring, if using, and cook, stirring, until the sugar melts and thins down the pudding, and then the pudding thickens again, 5 to 7 minutes.
  • Transfer to traditional kulfi molds or disposable 5 1/2-ounce plastic souffle cups. Cover and place in the freezer until completely frozen, at least 4 hours.
  • To serve, dip each mold in hot water about 10 seconds, run a knife around the inside of the mold and transfer immediately to a dessert plate. Serve whole or cut into smaller pieces, garnish with chopped pistachios, and serve.

QUICK MANGO KULFI

Traditional kulfi is made by boiling milk to reduce it, and to concentrate the milk solids, then freezing the base with flavorings such as fruit pulp, spices or nuts. Though kulfi is often compared to ice cream, it's nothing like it: Kulfi isn't churned. The protein and sugar create a rich, dense texture that is slightly crystalline and quick to melt. This recipe for instant mango kulfi takes short cuts, using canned sweetened condensed milk and heavy cream. It's a recipe that has no fixed season, that takes no time to mix up and that comes straight from my mother. She made it all year long when I was growing up, to hold us over in the lonely gaps between trips to see family in India. It's inauthentic - and delicious.

1¼ cups heavy cream
5 tablespoons sugar
4 ounces pistachios, finely ground
A pinch of saffron threads

Steps:

  • Pour the evaporated milk, cream, and sugar into a saucepan and bring the mixture to a gentle boil, stirring it fairly frequently to ensure it doesn't stick to the bottom of the pan.
  • When it starts to boil, turn the heat down, add the ground pistachios and saffron, and simmer for around 5 minutes.
  • Transfer to a bowl and leave to cool down, then put in the fridge. When it is cold, pour into kulfi molds or a freezable container, cover and freeze for 2 to 3 hours.
  • To remove the kulfis from their molds, dip them into hot water for a second, turn them upside down over a plate, and give them a sharp tap on the top.
  • Serve with a sprinkling of chopped pistachios.

A great ice cream dessert from Pakistan, very easy to make and totally irresistible! I freeze it in a square glass dish overnight. Put the dish out for five minutes before serving. Make squares and serve. Another option is to freeze it in individual disposable cups. When ready to serve, put the cups under warm running water and take out kulfi.

When it comes to dessert for the holidays, I like to dare to be a little bit different. We're going to do a frozen kulfi, which is a frozen Indian dessert similar to a frozen custard or ice-cream. Then, we're topping it off with a rich pecan caramel sauce for a festive holiday dessert that's similar to a pecan pie sundae.

1/4 pound unsalted butter
2 cups heavy cream
8 Egg yolks, large
1/4 cup Sweetened condensed milk
1/4 cup Water
1 cup sugar
1 cup heavy cream
1 cup dark brown sugar
Pinch of salt
1 cup Pecan pieces, toasted

Steps:

  • Place butter in a pan over medium/high heat until melted and brown in color, about 5 minutes. The solids are separating out hitting the pan and caramelizing. This is what flavors the liquid. As it starts to brown it will smell like caramel and the bubbling that you hear from the butter will begin to lessen. Strain the brown butter into another saucepan, reserving the brown bits. To that same saucepan, add the heavy cream and simmer over a low heat just until the cream picks up the brown butter flavors, 2 minutes. Transfer cream to a bowl and refrigerate until ice cold, 2 hours.
  • When the whipped cream is ice cold, pour it into the bowl of a mixer and beat until it holds a soft peak, 2 minutes. Place back in the refrigerator and continue making the kulfi.
  • Place egg yolks and sweetened condensed milk into the mixer and whip on medium speed to get to a ribbon stage. Meanwhile, make the caramel by adding water and sugar to a small saucepan over medium heat. Leave the mixture alone as it cooks until the sugar melts and just starts to caramelize. You'll know when it's done when the bubbles on top begin to turn brown, about 5-6 minutes. At the same time, the yolks and sweetened condensed milk are still mixing and when they're lighter, fluffier and hold their form, they'll be ready for the sugar/caramel mixture. When the mixture is on, slowly pour the hot caramel into the beating egg yolks. It's important to do this very slowly so the caramel doesn't harden as it goes into the mixture. As the caramel goes in, it slowly cooks the egg yolks. When all of the caramel's been added, turn the mixer to high and continue beating until the bowl is cool to the touch, another 5-8 minutes.
  • When the bowl is cool to the touch, the meringue is ready. Fold the chilled whipped cream into the meringue by turning the bowl and using your hand at the same time with a spatula. This will keep the air in the whipped cream. Place the kulfi mixture into a bowl and freeze, 1 hour.
  • For the pecan caramel sauce - Go back to the pot that has the brown butter and turn the heat to medium. Add the heavy cream, brown sugar and salt. Stir and continue cooking until the brown sugar melts and the butter and heavy cream are all combined. Add the pecans, turn the heat down and let the mixture simmer until it thickens a little, 2 minutes. To serve, place a few scoops of kulfi into a bowl, top with a spoonful of pecan caramel sauce and crumbled shortbread cookies (optional).

14 oz can sweetened condensed milk
1 c heavy cream
1/2 c pistachio nuts, chopped
2 tsp cardamom, ground
1/4 tsp saffron
2 tsp sugar

Steps:

  • 1. Chop up the pistachio nuts until they are in little bits, not too finely though or the finished kulfi will lose some of the wanted course texture.
  • 2. Then place into a saucepan and add the other ingredients, carefully bring to the boil, as milk and cream boils at a lower temperature and will rise quickly in the saucepan.
  • 3. While the mixture is simmering, stir slowly for about 1 minute until the ingredients are well blended in.
  • 4. Allow to cool then whisk the mixture or use a hand blender to make the mixture even smoother, then pour the mixture into popsicle mould's, special kulfi mould's, brioche (French bread) mould's or even half coconut shells and freeze for 6 hours.
  • 5. Before you serve the kulfi, dip the mould into warm water for several seconds so that the ice-cream is easier to remove and garnish with fine ground pistachios.
  • 6. Of course kulfi can be made with fruits blended in as well and a popular choice is to use mangoes, add small to medium sized chunks of mango to the mixture after its taken off the heat and fold in, then freeze as normal.

PISTACHIO & ROSE WATER KULFI

200g pistachios , plus extra to serve
250g golden caster sugar
2 tsp cornflour
600ml whole milk
600ml evaporated milk
4-5 tbsp rosewater
handful cherries , or any berries that are in season, to serve

Steps:

  • Pulse the pistachios and sugar in a mixer until fine - be careful not to overmix or the pistachios will become oily. Mix the cornflour with 1 tbsp of the whole milk to make a smooth paste.
  • Pour the remaining milk and the evaporated milk into a saucepan and bring to the boil. Add the pistachio powder, rose water and cornflour paste, and simmer for 5 mins until the mixture has thickened and coats the back of a spoon (it will continue to thicken as it cools).
  • Pour into a bowl and cover the surface with cling film so a skin doesn't form. Leave to cool, then chill in the fridge until cold before churning in your ice cream machine following the manufacturer's instructions. If you don't have an ice cream machine, transfer to a freezer- proof container, pop in the freezer for 4 hrs or until frozen and stir every hour to break up any ice crystals.
  • Take out of the freezer 20 mins before slicing or scooping to serve. Sprinkle with crushed pistachios and scatter over the cherries or berries.

14 ounces sweetened condensed milk, - 14 oz
12 ounces evaporated milk, - 12 oz

1 teaspoon sugar, - 1 tsp

  • With a mortar and pestle, grind together Sugar and Saffron.
  • In a large mixing bowl, combine Sweetened Condensed Milk, Evaporated Milk, Heavy Whipping Cream and Cool Whip.
  • Using an electric hand blender (or by hand), gently mix all ingredients together.
  • Add in Saffron and Sugar mixture and Nuts. 4. Mix well.
  • Pour mixture into small dixie style plastic cups. Cover cups with foil and insert a wooden popsicle stick into the center.
  • Freeze Kulfi for at least 4 - 6 hours, preferably overnight.

Kulfi is usually made from milk that has been boiled for several hours. This sneaky version is made with condensed milk, so all the hard work has been done for you.

450g tin condensed milk
2 tbsp rosewater
50g very finely chopped pistachio , plus roughly chopped pistachios to serve
284ml tub double cream
3 small, ripe mangoes

Steps:

  • Squeeze the condensed milk into a bowl and beat in the rosewater and pistachios. Lightly whip the cream until it holds its shape, then fold into the pistachio mixture.
  • Pour into 6 small ramekins or pyramid moulds. Freeze, then cover with cling film.
  • To serve: Slice each mango on either side of the stone to make 6 halves, but don't peel. Score a criss-cross into the flesh, but don't slice through the skin. You can do this several hrs ahead. Cook on the barbecue flesh-side down until starting to caramelise. Leave as it is or turn inside out to make the segments stand proud. Serve with the kulfi scattered with the pistachios (and a squeeze of lime, if you like).

1 tablespoon hot water
1 cup heavy cream, cold
½ cup sweetened condensed milk, chilled
½ cup mango purée, canned

  • Add the saffron to a small bowl. Pour the hot water over the threads and soak for 5 minutes.
  • Add the heavy cream to a large bowl. Beat with an electric hand mixer on high speed until soft peaks form, 3-5 minutes.
  • Gently fold the sweetened condensed milk into the whipped cream with a rubber spatula. Fold in the mango purée, then the ground cardamom and bloomed saffron with its soaking liquid, until incorporated.

Steps:

  • Blend all ingredients in blender.
  • Pour evenly among 17 ice cream pop molds and insert sticks.
  • Freeze at least 4 hours.
  • Betcha can't eat just one, I couldn't.

You don't need an ice cream freezer to make this, Ice cream vendors in India, have always made this without ice cream freezers. This does have to be made a day ahead. This is really good, and simple to make.

3 (14 ounce) cans evaporated milk
3 egg whites, whisked until peaks form
5 cups confectioners' sugar
1 teaspoon ground cardamom
1 tablespoon rose water
1 1/2 cups pistachios, chopped
1/2 cup golden raisin
3/4 cup sliced almonds
2 tablespoons candied cherries, halved

Steps:

  • Remove labels from cans of evaporated milk and put the cans in pan with tight fitting lid. Fill the pan with water to reach three quarters up the cans.Bring to a boil, cover and simmer for 20 minutes. When cool, remove and chill cans in fridge 24 hours.
  • Open cans and empty milk into a large, chilled bowl. Whisk until it doubles in quantity, then fold in whisked egg whites and confectioners' sugar.
  • Gently fold in remaining ingredients, seal the bowl with plastic wrap and leave in freezer 1 hour.
  • Remove the ice cream from freezer,and mix well with a fork. Transfer to a freezer container and return to the freezer for a final setting. Remove from freezer 10 minutes before serving in scoops.

Although chocolate is not an authentic ingredient, it makes the ice cream even more of a treat." Passive cooking time is the freezing time.

2 liters whole milk (3.5 pints)
12 cardamom pods
85 g golden caster sugar, light brown is ok (3 oz)
100 g bittersweet chocolate or 100 g semisweet chocolate, good quality (3.5 oz)
10 g blanched almonds, chopped (1/4 oz)
25 g unsalted shelled pistachios, chopped (1 oz)

Steps:

  • Heat milk and cardamom pods together in a large, heavy saucepan; bring to boil, then simmer vigorously until liquid is reduced to 1/3 of original amount.
  • Strain the liquid into a heat-proof bowl, discarding the cardamom, then stir in the sugar and chocolate until melted.
  • Add the almonds and half of the pistachios, then leave to cool.
  • Pour mixture into a large freezer-proof container, cover and freeze for at least 2 hours (or until firm), stirring every 30mins.
  • Pack the kulfi into 6 yogurt pots or any freezer-proof molds/cups, cover with clingfilm and freeze for 8 hours, or until completely solid.
  • To serve, dip the base of the molds briefly into hot water, then unmold kulfi onto dessert plates.
  • Sprinkle with remaining pistachios and serve immediately.

This creamy and delicious frozen peach treat is loaded with pistachios and sweet cardamom spice.

1 cup heavy cream
12 ounces evaporated milk
1/4 cup sugar
1/4 teaspoon ground cardamom
2 pinches salt
3 peaches, pitted and chopped
1/4 cup chopped toasted pistachios

Steps:

  • Bring the heavy cream and evaporated milk to a simmer in a medium saucepan. Cook, stirring often, until thick enough to coat the back of a spoon, about 15 minutes. Stir in the sugar, cardamom and salt. Let cool completely.
  • Puree the cream mixture in a blender with the peaches; strain through a fine-mesh sieve into a bowl.
  • Divide among ten 3-ounce paper cups, then sprinkle with the pistachios. Freeze until slightly frozen, then insert a wooden stick into each. Freeze until solid and firm.

Easy Kulfi (Ice Cream Without an Ice Cream Freezer!) image

Someone was asking about kulfi on the boards awhile back; I got interested and made some myself! Found this online. It's easy and it tastes great--and the best part is that NO ice cream freezer is needed! (prep time is freezing time). It's also very cheap---I could imagine any college kid with a fridge/freezer in his dorm could make this as well! Enjoy!

1 (14 ounce) can fat-free evaporated milk
1 cup light cream (I used half and half here)
1 (14 ounce) can low fat sweetened condensed milk
other flavoring (I sprinkled in some cinnamon, but I would imagine that chocolate or something else would work here.)

Steps:

  • In a large bowl, stir together well the evaporated milk, condensed milk, cream, and optional other flavor.
  • Pour into popsicle molds, Indian stainless steel kulfi molds, or even a small bowl.
  • Freeze overnight.
  • Remove from the molds by resting their bottoms very briefly in warm to hot water (if you do this for too long you'll have a gooey mess!).
