This is a Lithuanian Ethnic dish. The main ingredient is potatoes. The recipe comes from my fathers grandmother and has been a family favorite for more than 75 years. Serve hot as a main dish with either sour cream or applesauce.

¾ pound salt pork, diced
1 onion, coarsely chopped
5 pounds potatoes, peeled and cubed
3 onions, coarsely chopped
6 eggs
1 cup all-purpose flour
2 tablespoons olive oil
ground black pepper to taste

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Oil a 12x15 inch pan with olive oil.
  • Place salt pork in a large, deep skillet over medium heat. Cook until evenly brown, stirring occasionally. Stir in 1 chopped onion, and continue cooking until onion is tender and lightly browned; set aside.
  • Meanwhile, in a large bowl, combine potatoes and remaining chopped onions. Fill the bowl of a food processor with the mixture, and 1 egg. Process until smooth, then transfer to a large bowl. Repeat until all has been processed. Season with pepper. Stir in the salt pork mixture. Blend in flour gradually to absorb some moisture, but err on the side of less flour.
  • Bake in the preheated oven for 25 minutes. Reduce heat to 350 degrees F (175 degrees C), and continue baking for 1 hour, or until top is evenly browned.

This comfort food favorite has been passed down in my family. I remember getting so excited every time my grandfather would make it for us! Although I loved the way my grandfather made it, I've added a few flavorful ingredients of my own. You'll love the bacon, potatoes, sun-dried tomatoes, and bella mushrooms in a potato bake covered with melted Cheddar cheese. Even extra tasty when served with sour cream! This dish is an excellent side dish at dinner or a wonderful addition to a brunch!

1 teaspoon butter
2 large onions, chopped
1 cup sliced baby portobello mushrooms
½ (12 ounce) package bacon
1 (12 fluid ounce) can evaporated milk
6 eggs
5 pounds Idaho potatoes, shredded
1 cup chopped sun-dried tomatoes
salt and ground black pepper to taste
2 cups shredded Cheddar cheese, divided
¼ cup sour cream, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13-inch casserole dish.
  • Heat butter in a skillet over medium heat; cook and stir onions and mushrooms until softened and tender, about 10 minutes.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels, reserving 1 tablespoon bacon grease. Crumble bacon.
  • Beat milk, eggs, and reserved 1 tablespoon bacon grease together in a bowl; fold in potatoes until evenly mixed. Stir onion-mushroom mixture and sun-dried tomatoes into potato mixture; season with salt and pepper. Pour potato mixture, including all the liquid, into the prepared casserole dish. Sprinkle bacon and 1 1/2 cup Cheddar cheese over potato mixture.
  • Bake in the preheated oven until potatoes are tender and cheese is melted, about 55 minutes. Sprinkle remaining 1/2 cup Cheddar cheese over potato mixture and continue baking until melted, about 5 minutes more. Serve with sour cream.

4 lb. white potatoes
1 med. onion
1/2 lb. bacon (optional)
6 eggs
1 (5 oz.) can evaporated milk
1 c. reg. milk
Salt and pepper to taste

Steps:

  • Peel and grate fine the potatoes and onions. Cut bacon into small pieces and fry until crisp. Pour both fat over the potatoes-onion mixture. Beat eggs and add to potatoes. Add the evaporated milk and the regular milk, then the salt and pepper. Stir well. Pour mixture into a greased pan. (The potato mixture should be no less than 2 1/2 inches in pan.) Bake at 450 degrees for 15 minutes then lower heat to 375 degrees and bake an additional 45 minutes or until crispy brown and firm. (The mixture will puff up as it bakes.) Cut into squares or wedges to serve and top with sour cream.
