MACARONI AND TUNA CASSEROLE
I realize there are about a thousand tuna casserole recipes on this site, but here is my version. I know the processed Kraft mac 'n cheese powder isn't the healthiest (chemicals), but it sure is cheap, and I actually like it better in tuna casserole than regular shredded cheese. I toss in a bunch of veggies, so I don't feel as guilty... ;-) The added veggies also help stretch the amount of food. I "eyeball" the amount of veggies, but the amounts listed below should be pretty close to what I use.

- Cook macaroni noodles, drain the water and stir in the margarine while noodles are still hot.
- Meanwhile, sauté the onion, bell pepper, celery, and carrot in olive oil over medium-high heat until tender.
- Preheat oven to 425°.
- In a greased, 2-quart casserole dish, mix the noodles and veggies together with the peas, corn, tuna, mayonnaise, milk, and cream soup. Add additional milk if mixture is too thick.
- Bake uncovered in the preheated over for 25 minutes.
- Top with french fried onions during the last 5 or 10 minutes.

EASY MACARONI TUNA CASSEROLE
This dish is super easy. It is also a very hearty delicious bowl of comfort food. The guys in my house loved it. I loved this recipe but I used cream of mushroom soup and added the cheese into the casserole. I also melted butter and added bread crumbs to the top before baking, then sprinkle top lightly with dill seasoning. The resulting casserole was very creamy and flavorful.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish.
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain and return macaroni to pot.
- Stir 1/4 cup butter, 1/4 cup milk, and powdered cheese from envelope into the cooked macaroni. Stir cream of mushroom soup, tuna, and 1/2 cup milk into the macaroni and cheese. Pour macaroni mixture into the prepared baking dish; top with Cheddar cheese and parsley.
- Mix bread crumbs, melted butter, and dill in a small bowl; sprinkle over Cheddar cheese layer.
- Bake in the preheated oven until cheese is melted and bread crumb topping is lightly browned, about 20 minutes.

HOME-STYLE TUNA CASSEROLE
So I bought some Kraft Deluxe Macaroni and Cheese Dinner on sale thinking it would be a comfort food like the regular mac 'n cheese when you don't have time to cook. I conjured up childhood memories of those "special occasions" when Mom let us eat food from a box. When I actually tried it the fake cheese was the most disgusting thing I ever tasted, and I realized your tastebuds grow up too. This recipe does a good job of covering up that boxed food taste, but it's simple enough you don't have to spend all day in the kitchen. I used cream of mushroom soup and doubled the tuna and the vegetable (green beans in place of peas) to get rid of the macaroni and cheese flavor. I did skip the bread crumbs and butter, but I have to say it's pretty impressive for an instant tuna casserole. If you love Kraft Deluxe Macaroni and Cheese Dinner, you should try this. A friend and I made this up in college -- as we did not have much money, nor a proper kitchen. Over the years, I have tweaked it a bit -- now that I DO have a proper kitchen!

- Cook Macaroni and Cheese according to box directions.
- Stir in tuna, cream of mushroom soup, and frozen peas.
- Transfer mixture to baking dish and top with shredded cheese and french fried onions.
- Bake at 375 degrees until cheese is melted, and dish is heated through (approximately 15 minutes).
- Enjoy!
- If you are low on time, or don't want to heat up the oven, you can omit the cheese and french friend onions, and simply warm through on the stovetop.
