These Southwestern Chicken Packets are an easy and delicious no-fuss dinner recipe you can cook with a fire (while camping), on a grill, or in an oven.

Number Of Ingredients 10

1 cup frozen corn
1 (15oz) can black beans, drained and rinsed
1 tsp taco seasoning
2 chicken breasts or 4 chicken tenders
salt and pepper to taste
1/2 cup salsa or pico de gallo
1 cup shredded pepper jack cheese
cilantro, to garnish
sour cream, optional
avocado, mashed, optional

Steps:

  • Pull off 4 sheets of heavy-duty tin foil (8-10 inches) and layer to create 2 packets. Lightly mist with cooking spray.
  • Stir together the corn, black beans, and taco seasoning. Divide between the 2 foil packets. Season the chicken with salt and pepper. Place 1 chicken breast or 2 chicken tenders in each packet. Top the chicken with salsa and shredded cheese.
  • Bring the two longer edges of the foil together above the food. Fold the edges down twice, creating the top seal. Press the side edges together and fold, creating a secure packet.
  • Cook on hot coals, a gas grill, or in a 375 degree oven for 30 to 45 minutes until chicken is cooked through. (*See notes for cooking with coals or a grill.)
  • Top with fresh cilantro, sour cream, and avocado before serving.

Our southwestern chicken foil packet recipe seals in flavor, is easy to make and is easy to handle!

Number Of Ingredients 10

1 cup corn kernels (fresh or frozen or canned )
1 cup salsa (fresh, hot or medium or mild, drained of excess moisture)
1 14.5 oz can black beans (drained and rinsed)
4 heavy-duty aluminum foil (18" x 12" long sheets )
4 sprigs cilantro
4 boneless, skinless chicken breasts
salt and pepper
4 tsp taco seasoning
1 cup Mexican cheese blend (shredded )
4 lime wedges

Steps:

  • Preheat outdoor grill to medium-high heat or preheat oven to 350 degrees. In a large bowl, stir together corn, salsa and beans until evenly combined.
  • Place four 18" x 12" pieces of heavy foil on counter and spray each with cooking spray. Divide the veggie mixture evenly among the packets and place one cilantro sprig on top.
  • Season both sides of chicken breasts with salt and pepper and approximately 1 tsp taco seasoning per breast. Place seasoned chicken on top of veggies.
  • Fold long sides of foil up and over chicken and bring edges together. Roll the foil together, moving downward until 1"-2" from top of chicken. Fold both short ends together to seal the packet, but make sure to leave enough space inside the packet for steam expansion.
  • Place packets directly on grill or on a baking sheet in the oven. Grill 15-20 minutes or bake 30-35 minutes in the oven, until the center is no longer pink. Cooking times may vary depending upon thickness of chicken breasts.
  • Remove from grill or oven and carefully open packets to allow steam to escape. Sprinkle an equal amount of cheese on top of each piece of chicken, close foil and allow it to sit 2 minutes or until cheese has melted. Serve with a lime wedge for squeezing and enjoy!

3 4 oz chicken breasts, boneless skinless
1 cup quick brown rice (or white)
1 cup water
2 tablespoons taco seasoning (1 packet, see note below)
1/3 cup salsa
1/2 cup mozzarella or cheddar cheese
1 cup bell pepper (sliced into thin strips)
1/4 cup onion (sliced into thin strips)
1/2 cup black beans
1 tablespoon olive oil
1 lime cut into wedges (optional)

Steps:

  • Pre-heat oven to 400F. Line a baking sheet with 3 sheets of foil (about 6-8 inches) and set aside.
  • Combine the brown rice, water and 2 tablespoons taco seasoning in a medium bowl and soak for 5 minutes. DIvide rice (and it's water) into 3 sheets of foil.
  • Pound chicken with a meat tenderizer or a rolling-pin until they are even. Seasoning each chicken breast generously with the reaming taco seasoning. Place the chicken on the rice. Top each chicken with a few tablespoons of salsa and a sprinkle of cheese. Add the veggies and beans on the sides of the chicken. Drizzle each packet with olive oil and fold the sides of the foil over the chicken, covering completely; seal the packets closed.
  • Bake for 30-35 minutes, or until chicken's internal temperature reaches 165F. Remove from oven and carefully open up the foils; put the packets under the broiler for 3 to 4 minutes. Squeeze fresh lime juice on each packet, garnish with cilantro and sour-cream if desired and serve.

2 cups Minute brown rice, uncooked
1 3/4 cups warm water
1 lb boneless skinless chicken breast half (4)
1/4 cup reduced-fat ranch dressing (Kraft Light Done Right Reduced-Fat Ranch Dressing)
1 1/2 teaspoons chili powder
1/2 cup sharp cheddar cheese, shredded

Steps:

  • Preheat oven to 400 degrees.
  • Combine rice and water; let stand 5 minutes.
  • Soon rice evenly onto center of each of 4 large sheets of heavy-duty aluminum foil. Top with 1 chicken breast half; sprinkle with chili powder. Drizzle evenly with dressing and top with cheese.
  • Make packets by folding top and sides of aluminum foil to seal. Place in a single layer on a baking pan.
  • Bake 25 to 30 minutes or until chicken is cooked through.

If you want dinner on the table in about 20 minutes and no clean up, this low fat Southwestern-style chicken in foil is the answer. When you seal the food in the packs, be sure to leave some space for air to circulate inside. Be careful when unsealing the packs after cooking, as the escaping steam will be very hot.

4 sheets aluminum foil, wrap (12X18)
4 boneless skinless chicken breasts
1 cup chunky salsa
1 cup black beans or 1 cup dark red kidney beans
1 cup frozen sweetcorn

Steps:

  • Preheat oven to 450 degrees.
  • Rinse chicken breasts and pat dry. Place one chicken breast in the middle of each sheet of foil wrap or parchment paper. Spoon one fourth of the salsa, black beans and sweetcorn on each of the four chicken breasts.
  • Seal each pack by bringing up sides and folding the top edge over twice. Seal the edges in the same way, leaving enough room for heat to circulate inside.
  • Place packs on a cookie sheet and cook for 20 minutes. Unseal packs carefully.
