This slow-cooked vegetarian cholent features potatoes, beans, and dried figs; for added texture and richness, we added a vegetarian kishka to the crockpot.

3 yellow onions, chopped
2 large carrots, peeled and chopped
2 large potatoes, chopped
6-8 prunes or dried figs
1⁄2 cup kidney beans
1⁄2 cup white beans
1⁄2 cup pearl barley
1 tablespoon garlic powder
1 tablespoon paprika
1 teaspoon chili powder
1 teaspoon salt
1⁄2 teaspoon pepper
1 vegetarian kishka
3-4 cups water

Steps:

  • 1. Place the onions, carrots, potatoes and prunes/figs in the bottom of the crockpot. 2. Top with the beans and barley. 3. Sprinkle on the garlic powder, paprika, chili powder, salt and pepper, top with the vegetarian kishke, then cover with water. 4. Cover the crockpot and cook on low heat overnight, or for at least 8 hours.

This vegetarian cholent is hearty and delicious with three types of beans, but much lighter than meat cholent recipes. Pair it with cholent kugel.

1/2 cup red beans
1/2 cup white beans
1/2 cup garbanzo beans
2 tablespoons oil
2 large onions (diced)
1/2 cup barley
4 potatoes (peeled and sliced)
2 tablespoons onion soup powder
1 (15-ounce/400-g) can diced tomatoes

Steps:

  • Soak the beans in water overnight.
  • When ready to cook, drain the beans.
  • Heat oil in a skillet. Sauté onions for 5 to 7 minutes until translucent.
  • In a crock pot, mix onions with beans and barley. Add water to cover. Bring to a boil. Lower heat and cook, covered, for 30 minutes.
  • Add potatoes. Cook, covered, on low heat for 30 more minutes.
  • Stir in onion soup mix and tomatoes. Cook, tightly covered, on low heat for several hours or (if you plan to serve it for Sabbath lunch) overnight. Note: Check the cholent's water level occasionally as it cooks. If too much water evaporates, add some water to the cholent.

½ lb. (1¼ cups) kidney beans
½ lb. (1 cups) navy beans
Water
2 medium onions, sliced
2 cloves garlic, minced
½ cup sliced fresh mushrooms
¼ cup vegetable oil
½ cup whole barley
½ teaspoon crushed basil or 1 tsp. fresh basil
½ teaspoon chopped dill weed
Salt, pepper, paprika, & cayenne pepper to taste
2 large carrots, sliced
4 large potatoes, scrubbed and quartered
1 cup dry red wine
2 teaspoons soy sauce
1 Bay leaf
Boiling water or vegetable stock

Steps:

  • If the beans have not been pre-soaked, wash them carefully, discarding any that are broken or discolored. Place in a large pot and cover with water. Bring to a boil. Remove from heat and allow to soak for about 1 hour. In a large, heavy pot sauté the onions, garlic and mushrooms in the oil. Add the beans, barley, herbs and seasonings. Add the carrots, potatoes, the wine, soy sauce and bay leaf. Add boiling water or stock to about 1 inch above the contents. Adjust the seasonings to taste. Cover the pot tightly and allow to simmer slowly in a 225°F oven or over very low heat on top of the stove. Let it cook all night.

This is a very filling and hearty stew. It cooks slowly overnight for a minimum of 10 to 15 hours or more on a very low flame.

3 onions, quartered
4 tablespoons vegetable oil
4 pounds chuck roast, cut into large chunks
1 cup dry kidney beans
1 cup dried pinto beans
1 cup pearl barley
5 large potatoes, peeled and cut into thirds
boiling water to cover
2 (1 ounce) packages dry onion and mushroom soup mix
2 tablespoons garlic powder
salt and pepper to taste

Steps:

  • In a large oven safe pot or roasting pan, saute onions in oil over medium heat.
  • Add meat, and brown well on all sides.
  • Mix in beans; stir continuously until the beans start to shrivel. Stir in the barley. Add potatoes, and add just enough boiling water to cover the meat and potatoes. Mix in dry soup mix and garlic. Season with salt and pepper. Bring to a boil, lower heat, and simmer partially covered for 20 minutes on stove top.
  • Preheat oven to 200 degrees F (95 degrees C).
  • Cover pot tightly, and place in preheated oven. Allow to cook overnight for at least 10 to 15 hours. Check periodically to make sure you have enough liquid to cover; add small amounts of water if needed. Do not stir; stirring will break up the chunks of potatoes.

Don't be put off by the amount of cooking time (I've quoted the longest time). It is well worth the wait and develops the flavour better with the long cooking. This recipe is adapted slightly from the original which was found at Just Slow Cooking.com.

1 1/2 cups dried large lima beans
1 tablespoon vegetable oil
2 garlic cloves, minced
2 medium onions, thinly sliced
3 stalks celery, thinly sliced
2 large potatoes or 4 small potatoes, peeled and quartered
2 carrots, peeled and thinly sliced
1 bay leaf, crushed
1 1/2-2 tablespoons vegetarian chicken soup mix or 5 vegetable bouillon cubes
1 tablespoon paprika (I find using half smoked bittersweet paprika and half regular paprika adds depth to the final flavou)
4 cups hot water
salt
fresh ground pepper

Steps:

  • Soak the beans overnight, then drain.
  • Or, follow package directions for quick soaking.
  • In a large skillet, heat the oil and saute the garlic, onions and celery until tender.
  • Put in slow cooker.
  • Add the potatoes, carrots, beans, bay leaf and paprika.
  • Dissolve the soup mix in 1 cup of the hot water and add to the vegetables with the remaining 3 cups of water.
  • Add salt and pepper to taste.
  • Cover tightly and cook on low 18-24 hours.
  • Taste and adjust seasonings, if necessary.
  • Makes four very generous servings.

1 cup dried garbanzo beans
1 cup dried navy beans
4 medium potatoes, peeled, left whole
1 large onion, cut into quarters
4 peeled garlic cloves
1 cup wheat berries or 1 cup rice
1/4 cup olive oil
2 tablespoons tamari soy sauce
porcini mushroom
1/2 cup raisins or 1/2 cup another dried fruit
2 tablespoons honey or 30 ml honey
1/2 teaspoon cardamom
1/2 teaspoon cumin
1/2 teaspoon turmeric
1/2 teaspoon sweet paprika
1/2 teaspoon cinnamon
4 raw eggs, in their shells (optional)

Steps:

  • Layer surface of pot with chickpeas and navy beans. Over that, place the potatoes, left whole, in the pot. If using eggs, place them among the potatoes. Add onion quarters, garlic and then the kamut or other grain selected. Drizzle oil, tamari sauce, mushrooms, raisins, honey, and each of the spices.
  • Cover with water to top of pot.
  • Crockpot: cook for 8-10 hours set at High. Oven: Bake covered at 250 degrees F (120 C) for 8 - 10 hours.

The overnight Jewish stew, cholent, is typically started on Friday afternoon and allowed to cook overnight to be eaten at noon on the Sabbath. It is a flavorful, comforting slurry of beef short ribs, beans, potatoes, onions, honey and smoked paprika. This version is made in a slow cooker so those observing Sabbath need not tend to it.

2 medium potatoes, peeled and cut into 1 1/2-inch chunks
1 medium onion, peeled and cut into 1 1/2-inch chunks
1/2 to 1 pound boneless beef short ribs, cut in 1 1/2-inch chunks
Pepper, to taste
3/4 cup pearl barley
1/3 cup dried kidney beans
1/3 cup dried navy beans
1/3 cup dried cranberry beans
3 cups chicken or beef broth
2 tablespoons honey or molasses
2 tablespoons smoked paprika
Salt to taste

Steps:

  • Line the bottom of a slow cooker with the potatoes, the onion and then the short ribs, sprinkling the meat with pepper to taste.
  • Scatter the barley and the beans on top, then pour on the broth and the honey or molasses. Sprinkle with the paprika and salt to taste. Add enough water to cover all the ingredients. Cook on low for 12 to 15 hours, stirring occasionally (except during Shabbat, for those who observe it), adding more water if necessary. The longer the cholent cooks, the better it will be.
