I was trying to come up with a homemade BBQ sauce for my wife since she doesn't like traditional BBQ. This is what I came up with. You could add this sauce to any kind of pork ribs.

1 cup soy sauce
¾ cup dark brown sugar
2 tablespoons minced garlic
1 tablespoon rice wine vinegar
1 tablespoon chile-garlic sauce (such as Sriracha®)
1 teaspoon grated fresh ginger
1 teaspoon Asian (toasted) sesame oil
1 ½ teaspoons ground black pepper
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Stir soy sauce, brown sugar, garlic, rice wine vinegar, chile-garlic sauce, ginger, sesame oil, and black pepper together in a saucepan; bring to a boil.
  • Whisk cornstarch and water together in a small bowl until the cornstarch dissolves; pour into boiling soy sauce mixture. Reduce heat to medium-low and cook until the sauce is thick, 3 to 5 minutes.

4 tablespoons olive oil, divided
2 garlic cloves, minced
1 1/2 teaspoons minced serrano chilies, with seeds
1/3 cup soy sauce
1/4 cup dark brown sugar, packed
3 tablespoons rice vinegar
3 tablespoons water
1 tablespoon sesame oil
8 baby bok choy, halved lengthwise
4 medium Japanese eggplants, halved lengthwise
4 (6 ounce) halibut fillets
2 green onions, thinly sliced

Steps:

  • Heat one tbsp olive oil in heavy small saucepan over medium heat. Add garlic and chili; sauté until fragrant and lightly golden, about 3 minutes.
  • Add soy sauce, brown sugar, vinegar, and 3 tbsp water and bring to a boil, stirring until sugar dissolves.
  • Reduce heat to medium and simmer until reduced to 3/4 cup.
  • Remove bbq sauce from heat, and whisk in sesame oil. Transfer 1/4 cup bbq sauce to small bowl and reserve for serving.
  • Prepare bbq (or grill) to medium heat. Combine bok choy and eggplant in a large bowl. Drizzle with 2 tbsp olive oil and toss to coat. Sprinkle with salt and pepper.
  • Drizzle remaining oil over fish and sprinkle with salt and pepper.
  • Grill veggies and fish, turning occasionally and basting with the sauce until veggies are tender and slightly charred, and fish is just opaque in center (about 10 minutes for veggies, and 7 for fish).
  • Transfer all to plates and sprinkle with green onions and drizzle with remaining bbq sauce.

KOREAN MINI MEATLOAF WITH KOREAN BBQ SAUCE

You can make this as a big regular meatloaf just bake for 45 minutes.

MEATLOAF
1/2 lb ground beef
1/2 c panko bread crumbs
1/2 Tbsp each gochujang, soy sauce, and sesame seeds.
3 clove garlic minced
2 tsp fresh grated ginger
1/2 tsp sesame oil
1 egg
KOREAN BBQ SAUCE
1 Tbsp sesame oil
2 Tbsp cornstarch
1/2 c each soy sauce and rice vinegar
1 c brown sugar
1 tsp gochujang
4 clove garlic minced
1 tsp fresh grated ginger
1 tsp sesame seeds
GARNISH
fresh cilantro chopped

Steps:

  • 1. Preheat oven 350 degrees. Mix all the ingredients together for the meatloaf. Place in a sprayed mini meatloaf pan.
  • 2. Whisk the sesame oil and cornstarch together in a sauce pan until well incorporated. Place over medium high heat. Add the soy sauce, rice vinegar, brown sugar, garlic, Gochujang and ginger. Cook until thickened. Stir in the sesame seeds.
  • 3. Place the BBQ sauce on top of the meatloafs and bake for 20 to 25 minutes. Garnish with cilantro

BRYANNA'S KOREAN BBQ SAUCE

This recipe comes directly out of Bryanna Clark Grogan's "20 Minutes to Dinner". It is fabulous on seitan, tofu, or TVP!

1/2 cup soy sauce
1/4 cup water
2 green onions, chopped
3 tablespoons sugar
2 tablespoons sesame seeds, toasted
2 tablespoons cornstarch
2 cloves garlic, peeled
1/4 teaspoon black pepper

Steps:

  • Mix all ingredients in a blender, or add scallions after blending for more color and texture.
  • The sauce can be used right away as a marinade for TVP or tofu, or can be simmered over low heat in a small saucepan until it thickens and used later for stirfries or marinades.
  • It will keep at least a week.
  • I have had great success simmering this sauce in partially rehydrated TVP chunks (I had to add more water to the sauce while simmering) and tofu.
  • Once the sauce coats and absorbs into whatever protein source you choose to use, you can lay the chunks out on a cookie sheet and broil them until slightly charred, or about 5-10 minutes.
  • Enjoy!

3 cup(s) soy sauce
3 cup(s) brown sugar
1 1/4 cup(s) water divided
1 cup(s) shaoxing wine or dry sherry
1/2 cup(s) gochujang sauce
1/2 cup(s) honey
1/3 cup(s) rice vinegar
1/4 cup(s) minced garlic
1/4 cup(s) grated ginger
4 - green onions minced
1 - ripe pear peeled and cored and grated on box grater
1 teaspoon(s) korean chili pepper powder or red pepper flakes
3 tablespoon(s) clear jel canning starch

Steps:

  • Mix the clear gel with 1/4 cup of water and set aside. In a large stock pot. Add the remaining ingredients and bring to a boil. Cook for 5 minutes. Add the clear gel while whisking to thicken the BBQ sauce.
  • Place in jars and place in a water bath for 15 minutes. Makes about 4 pints

2 tablespoons toasted sesame seeds, plus more for sprinkling
4 large garlic cloves, pressed
3/4-1 cup soy sauce
2 tablespoons sherry wine
3 tablespoons honey
2 tablespoons sesame oil
2 tablespoons water
2 teaspoons fresh ginger, finely grated
1/2 cup chopped scallion, plus more green tips for sprinkling (green and white parts, mixed)
2 teaspoons red chili pepper flakes

Steps:

  • Grind the sesame seeds in a coffee grinder until fine.
  • Place the ground sesame seeds in a medium bowl and add the garlic, soy, sherry, honey, sesame oil, water, ginger, scallions, and red chili flakes, stir until thoroughly combined.
  • Use this sauce to marinate short ribs, steaks, chicken or fish! Grill or broil and baste with sauce.
