2 tablespoons butter, melted, divided
1 cup all-purpose flour
1 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon pepper
3 large eggs
1 cup whole milk
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
2 cups shredded cheddar cheese
2 cups shredded Monterey Jack cheese
1 cup chopped onion
Sliced pimientos, optional

Steps:

  • Brush the bottom and sides of a 13x9-in. baking dish with 1 tablespoon butter; set aside. In a large bowl, combine the flour, baking powder, seasonings, eggs, milk and remaining butter. Stir in the spinach, cheeses and onion. Spread in prepared pan. , Bake, uncovered, at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean and edges are lightly browned. Cut into squares. Garnish with pimientos if desired.

I have been making these for years for my get togethers and I sometimes make these using phyllo dough but puff pastry is really just as good and more convenient --- I sometimes add in roasted garlic into the spinach mixture and also a pinch of cayenne pepper for a bit of heat --- these are so good and make wonderful appetizers!

2 frozen puff pastry sheets (from a 17-ounce package)
3 eggs, slightly beaten
1 tablespoon water
3/4-1 cup crumbled feta cheese
1 (10 ounce) package chopped spinach, thawed and well drained (squeeze out any excess moisture with hands)
1 small onion, finely chopped
3 tablespoons chopped fresh parsley
1/2 teaspoon ground black pepper (or to taste)
1 pinch cayenne pepper (optional and to taste)

Steps:

  • Thaw the puff pastry at room temperature for 40 minutes.
  • Set oven to 400 degrees F.
  • Lightly grease a baking sheet.
  • In a small cup or bowl whisk together 1 egg with water; set aside.
  • In another bowl mix together 2 eggs, feta cheese, spinach, onion, parsley and black pepper.
  • Unfold the pastry sheets on a lightly floured surface.
  • Roll each sheet into a 12-inch square.
  • Cut each into 16 (3-inch) squares (I use a pizza cutter for this!).
  • Place about 1 tablespoon spinach/cheese mixture in the middle of each square.
  • Brush the edges with egg mixture.
  • Fold squares over the filling to form triangles.
  • Crimp edges to seal.
  • Place on a baking sheet, and brush tops with remaining egg mixture.
  • Bake for about 20 minutes or until golden.
  • Best served warm or at room temperature.

A good friend of mine gave me this wonderful recipe. She told me that every time she made these for a party everyone would demand the recipe with their mouths' full! On my end, every time there's some kind of pot-luck around everyone requests that I bring this dish. Prep time does not include defrost time.

20 ounces frozen spinach, chopped
1 lb cheddar cheese, shredded
1 cup all-purpose flour
1 cup skim milk (or whichever milk you have on hand)
2 large eggs
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup shallot, chopped (may also use diced onion)
cooking spray

Steps:

  • Defrost and drain the spinach. Thoroughly squeeze handfuls to remove the liquid. Reserve for another use if desired. The water leftover from this is great for cooking pasta or rice!
  • Preheat oven to 350 degrees.
  • Mix drained spinach with all remaining ingredients except cooking spray.
  • Spray a 9x2x13 baking pan with cooking spray. Bake for 30 - 40 minutes until top is nicely browned. Let cool and cut into squares.
  • My favorite way to have leftover spinach squares is to cut one up into small pieces and use it as omelet filling. Yummy!
  • Cut into 24 squares for hors d'oeuvres.

This recipe is a favorite at every Christmas party. Note: This recipe freezes well. To serve, defrost and reheat at 325 degrees F (165 degrees C) for 12 to 15 minutes.

2 tablespoons butter
3 eggs
1 cup all-purpose flour
1 cup milk
1 teaspoon baking powder
1 pound shredded Cheddar cheese
2 (10 ounce) packages frozen chopped spinach
1 tablespoon minced onion

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place butter or margarine in a 9x13 inch baking dish and melt butter in oven. Remove when melted, approximately 3 minutes.
  • In large mixing bowl, beat eggs well. Mix in flour, milk and baking powder. When the dough is well combined, mix in cheese, spinach, and onion. Spoon mixture into the baking dish with melted butter.
  • Bake for 35 minutes. Let cool 45 minutes then cut into bite-size squares.

1 1/2 cups all-purpose flour (unsifted)
1 1/2 cups finely crushed butter flavored crackers (Ritz crackers are good)
2/3 cup cold butter (butter-flavor Crisco COLD may be used if desired) or 2/3 cup margarine (butter-flavor Crisco COLD may be used if desired)
1/2 cup water
2 cups swiss cheese (or to taste)
1 1/2 cups chopped ham (crumbled) or 1 1/2 cups cooked sausage, diced pepperoni, crumbled cooked bacon (crumbled)
3/4 cup thinly sliced green onion (with tops)
1/4 cup snipped fresh parsley
1 (4 ounce) jar diced pimentos, well drained (can use more if desired)
5 large eggs
1 cup whipping cream (unwhipped)
1 cup half-and-half cream
salt and pepper

Steps:

  • Set oven to 400 degrees.
  • Prepare an ungreased 15 x 10-inch jelly-roll style pan.
  • FOR THE CRUST: In a bowl, combine flour and the crushed cracker crumbs.
  • Cut in butter until the mixture resembles coarse cornmeal.
  • Sprinkle with 1/2 cup water (a tablespoon at a time).
  • Toss with a fork until crumbs are completely moistened.
  • Press mixture into bottom of ungreased pan.
  • Prick crust WELL with a fork; set aside.
  • FILLING: Sprinkle Swiss cheese, ham (or what ever meat you are using), onions, parsley and pimentoes evenly over crust.
  • Beat eggs, cream, half and half, salt and pepper.
  • Pour over filled crust.
  • Bake for 25-30 minutes, or until set (crust may bubble during baking, and need to be pricked with a fork again).
  • Cool 5-10 minutes.
  • Cut into 1-1/2 - 2-inch sqares/pieces.
  • Serve warm.
