This goes back years and has remained a family favorite --- you may adjust the amounts to suit your taste and the recipe may be doubled :)

1 1/2 cups chicken broth (I use a garlic flavored broth for this) or 1 1/2 cups water (I use a garlic flavored broth for this)
1 cup uncooked couscous
1/2-1 teaspoon dried oregano
2 plum tomatoes, chopped
1 -2 cup diced peeled cucumber
1/2 cup crumbled feta cheese
1/2 cup small ripe olives, halved
1 small red onion, finely chopped
1 (15 ounce) can chickpeas, well drained (garbonzo beans)
1/4 cup water
3 tablespoons lemon juice
2 -3 tablespoons olive oil
1 teaspoon fresh ground black pepper (or to taste)
salt (to taste)

Steps:

  • Bring the 1-1/2 cups chicken broth to a boil in a medium saucepan; stir in the couscous and oregano, remove from heat; cover, and let stand 5 minutes.
  • Fluff with a fork.
  • Combine the couscous with tomatoes and the next 5 ingredients (tomatoes through chickpeas) in a bowl; set aside.
  • Combine 1/4 cup water with the remaining ingredients; stir well with a whisk.
  • Pour over the couscous mixture, tossing gently to coat.
  • Season with black pepper and salt.

1 cup water
1 cup couscous
⅔ cup chopped kalamata olives, liquid reserved
⅔ cup diced red bell pepper
½ cup diced sun-dried tomatoes, oil reserved
1 (4 ounce) package crumbled feta cheese
1 tablespoon dried parsley, or to taste

Steps:

  • Bring water to a boil in a saucepan. Remove from the heat, and stir in couscous. Cover and let stand for 10 minutes, then fluff with a fork. Set aside to cool slightly.
  • Mix olives, red bell pepper, sun-dried tomatoes, and couscous together in a bowl. Stir about 1 tablespoon liquid from olives and 1 tablespoon oil from sun-dried tomatoes into the couscous mixture until moistened. Add more oil as needed. Fold in feta cheese; sprinkle with parsley.

2 pieces sun-dried tomatoes, finely chopped
1/4 cup onion, finely chopped (divided)
1 cup water
1 cup couscous (dry)
1/4 teaspoon salt
5 jumbo black olives
1/2 cup feta cheese, crumbled
1 tablespoon fresh basil, chopped
2 tablespoons greek salad dressing with feta
1 small garlic clove, minced

Steps:

  • Add the tomatoes, half of the onion and the water to a small bowl and heat in the microwave until boiling. Add the salt and couscous, stir and cover for 5 minutes.
  • Fluff couscous with a fork then add remaining onion, black olives, feta, basil, Greek salad dressing, and garlic.

¼ cup chicken broth
½ cup water
1 teaspoon minced garlic
½ cup pearl (Israeli) couscous
¼ cup chopped sun-dried tomatoes
¼ cup sliced Kalamata olives
2 tablespoons crumbled feta cheese
1 cup canned garbanzo beans, rinsed and drained
1 teaspoon dried oregano
½ teaspoon ground black pepper
1 tablespoon white wine vinegar
1 ½ teaspoons lemon juice

Steps:

  • Pour the chicken broth and water into a saucepan, stir in the garlic, and bring to a boil. Stir in the couscous, cover the pan, and remove from heat. Allow the couscous to stand until all the water has been absorbed, about 5 minutes; fluff with a fork. Allow the couscous to cool to warm temperature.
  • In a large serving bowl, lightly toss the couscous, sun-dried tomatoes, olives, feta cheese, and garbanzo beans. Mix the oregano, black pepper, white wine vinegar, and lemon juice in a small bowl, and pour over the couscous mixture. Toss again to serve.

KITTENCAL'S TZATZIKI (GREEK CUCUMBER AND YOGURT SALAD)



Kittencal's Tzatziki (Greek Cucumber and Yogurt Salad) image

This is worth making it is so delicious! Greek yogurt is richer and thicker then regular yogurt and is the best used for this recipe, if you cannot find Greek yogurt just use 4 cups regular full-fat plain yogurt and drain it in the fridge through a triple thickness of cheesecloth for 8 hours or overnight, if you are using Greek yogurt you will not have to strain it, once you try Greek yogurt you will never go back to regular yogurt again! Plan ahead this needs to chill for a minimum of 2 hours, you won't be able to keep your spoon out of the bowl LOL! Make certain to drain the cucumber very well for this. Serve this anyway or with anything you want to, it is great on pita. Prep time is only if you are using the Greek yogurt if you are straining the yogurt prep time will be more.

3 cups Greek yogurt (yiaourti sakoulas)
2 lbs cucumbers (about 3 medium, peeled and chopped finely)
3 teaspoons minced fresh garlic (if you like a strong garlic taste add in more!)
1/2 teaspoon salt
1/4 cup chopped of fresh mint
fresh ground black pepper (to taste)

Steps:

  • Put the finely chopped cucumbers in a sieve and press out as much excess liquid as possible.
  • In a large bowl mix the minced garlic with the salt into a paste.
  • Add in the Greek yogurt (or strained yogurt) with garlic/salt paste, add to the drained cucumbers, mint, olive oil, more salt and pepper to taste.
  • Cover and chill for a minimum of 2 hours before serving (you won't be able to keep you spoon out of the bowl lol!).

To save some time the meat sauce may be made up to a day ahead if desired, try to use extra-lean ground beef for this it will make a difference in flavor, small penne pasta may be replaced for the ziti, but I do recommend using the ziti, adjust the chili flakes to suit heat level, or you may omit if desired --- also see my recipe#66596

1 lb uncooked ziti pasta
1/4 cup melted butter
1/3 cup grated parmesan cheese
1 pinch nutmeg
1/2 teaspoon seasoning salt or 1/2 teaspoon white salt
1 teaspoon ground black pepper
3 large eggs, beaten
2 tablespoons olive oil
1 tablespoon butter
1 medium onion, chopped
1 -2 teaspoon crushed red pepper flakes (or to taste)
2 tablespoons fresh minced garlic
1 1/2 lbs extra lean ground beef
1/3 cup tomato paste
1/2 cup dry red wine
1 cup beef broth
1 1/2 teaspoons seasoning salt
1 teaspoon ground black pepper
1/2 cup butter
1/2 cup all-purpose flour
1 pinch cayenne pepper
3 cups 18% table cream or 3 cups half-and-half cream
1/8 teaspoon nutmeg
1 large egg, slightly beaten
1/2 teaspoon seasoning salt (or to taste) or 1/2 teaspoon white salt (or to taste)
ground black pepper (to taste)
1 cup grated parmesan cheese

Steps:

  • Set oven to 350 degrees F.
  • Grease a 13 x 9-inch baking dish.
  • In a large pot cook the pasta in boiling water with 1 tablespoons salt until al dente; drain and return the cooked pasta to the pot.
  • To the pasta add in 1/4 cup melted butter, 1/3 cup Parmesan cheese, pinch nutmeg, 1/2 teaspoon salt and 1 teaspoon ground black pepper; mix until combined then allow to cool slightly.
  • Add in eggs and mix well; set aside.
  • For the meat sauce; heat olive oil and butter in a skillet over medium heat; add in onion and crushed chili flakes, cook for about 4 minutes.
  • Add in garlic and cook for 2 minutes.
  • Add in extra lean ground beef; cook breaking up the meat with a spoon or fork until browned.
  • Add in tomato paste, wine, beef broth, salt and pepper; mix well, then cover and simmer over low heat for about 45-50 minutes, stirring occasionally.
  • Meanwhile while the meat sauce is cooking prepare the bechamel sauce; melt butter in a heavy saucepan over medium heat; stir in flour and cayenne pepper; cook stirring for about 2 minutes.
  • Add in cream and nutmeg; bring to a boil whisking/stirring constantly then cook for about 1 minute.
  • Cool for about 10 minutes before whisking in the egg.
  • Season with salt and black pepper.
  • Remove about 1/2 cup bechamel sauce and mix into to the already cooked ground beef mixture.
  • Preheat oven to 350 degrees F.
  • TO ASSEMBLE; spoon HALF of the ziti mixture into the bottom of the baking dish.
  • Top the ziti mixture with ALL of the meat sauce, then top with remaining ziti mixture.
  • Pour ALL the bechamel sauce over the ziti mixture then spread out with a spoon to cover.
  • Top with about 1 cup grated Parmesan cheese (can use more or less).
  • Bake for about 50-60 minutes or until golden brown.
  • Allow to rest for about 20 minutes before slicing.

KITTENCAL'S GREEK LAMB AND FETA MEATBALLS (KEFTEDAKIA)

These are a huge favorite with my family, there a wonderful change from regular beef meatballs, plan ahead the mixture needs to chill for 24 hours before shaping into balls :)

1 lb ground lamb
1/2 teaspoon seasoning salt or 1/2 teaspoon white salt
1/2 teaspoon fresh ground black pepper (or to taste)
1 -2 tablespoon fresh minced garlic
1/3 cup fresh minced parsley (can use a little more)
1 pinch dried oregano (rubbed between fingers to release the flavors)
1 small onion, finely chopped
1/2 cup crumbled feta cheese
1/2 cup chopped pitted green olives
2 eggs, slightly beaten
1 teaspoon white vinegar
1 tablespoon olive oil

Steps:

  • In a large bowl, mix together, all ingredients including the 1 tablespoon of olive oil.
  • Cover and refrigerate for 24 hours or up to 48 hours.
  • Shape into 16 meatballs, and place on a baking sheet.
  • Set oven to 350 degrees F.
  • Bake for about for 20-25 minutes or until meat is cooked.

1 cup olive oil (can reduce to 3/4 cup)
1 extra large lemon, juice of (can use 2 lemons ( make certain that the lemon is at room temperature before squeezing)
2 -4 teaspoons dried oregano (start with 2 teaspoons)
3 teaspoons fresh minced garlic (about 2 medium cloves)
1 teaspoon dried basil
2 tablespoons red wine vinegar
1/2 teaspoon salt (or to taste)
1 teaspoon sugar
1/2 teaspoon fresh ground black pepper (or to taste)
1 large romaine lettuce, chopped (or use 2 small)
2 -3 plum tomatoes, cut in wedges (use Roma tomatoes)
1 English cucumber (peeled, seeded and chopped)
1 red onion, cut in slices
1 green bell pepper (seeded and cut into rings or sliced) (optional)
1/2 lb feta cheese, crumbled (or to taste)
1 cup kalamata olive

Steps:

  • For the dressing; in a processor or use a wire whisk process/whisk the olive oil with lemon juice, 2 teaspoons dried oregano, garlic, dried, basil, red wine vinegar, salt and sugar until smooth (add in more oregano and lemon juice if needed).
  • Season with black pepper.
  • Chill in fridge for a couple of hours before using to blend flavors.
  • Place the salad ingredients in a large bowl.
  • Pour dressing over; toss to combine.
  • If desired allow the salad to sit at room temperature for 20 minutes before serving, or you can refrigerate for 1 hour (tossing a few time during sitting time).
