KITTENCAL'S EASY NO-FAIL MAKE ANYTIME TURKEY GRAVY
I have been using this recipe for many years, my family loves this gravy and I have served it to dinner guests over the holidays and always receive rave reviews! --- you don't need to make this gravy using all pan drippings, if you do not have 4 cups of drippings you may mix with chicken broth to make the 4 cups, or it may be made with only chicken broth, please see note on the bottom of the recipe--- this may be made slightly ahead and kept uncovered on top of the stove until ready to serve, just whisk before using If you have any left over this gravy freezes very well or you may reduce all ingredients down to half and for a thinner gravy reduce flour by 1 tablespoon --- also see my recipe#314890 for more of my recipes visit www.kittencalskitchen.com

Steps:
- Drain the pan drippings for the roasted turkey through a fine strainer.
- Let sit and then remove any fat from the top of the drippings.
- Add in chicken broth or water to make 4 cups if necessary.
- In a medium saucepan, melt margarine or butter.
- Add in lots of black pepper.
- Add in 1/2 cup flour plus 3 tablespoons; constantly whisk for about 3 minutes over low heat.
- Slowly add in the 4 cups turkey broth/drippings; whisk constantly over medium-low heat until bubbly and thickened (about 3 minutes).
- Use right away or keep warm over lowest heat setting, whisk again before serving.
- **OPTIONS** to make this gravy using all chicken broth prepare as directed using 4 cups low sodium chicken broth and 1 tablespoon chicken boullion powder ---- or you may add in low sodium chicken broth omitting bouillon powder to pan drippings to make up 4 cups.
BASIC GRAVY (W/O PAN DRIPPINGS)
I adapted this recipe from THE JOY OF COOKING and have been making it for more years than I care to remember. It's fast and easy.... fast and easy enough to be able to make a 2nd batch in the middle of dinner b/c folks scarfed up the first batch! NOTE: I'm not sure how 1-2 TEAspoons of Worcestershire got changed to 1-2 TABLEspoons.... which is way too much! I've changed the recipe back to 1-2 TEAspoons of Worcestershire.

Steps:
- Melt butter in saucepan over medium heat.
- Whisk in flour til well blended.
- Slowly add broth, whisking continually.
- Add Worcestershire sauce, garlic powder, and pepper.
- Cook over medicum heat til thickened, stirring from time to time.
- Keep an eye on the saucepan, the thickening process goes quickly.
NO-FAT GRAVY
This is a very easy and quick NO FAT gravy to make. No fuss and you do not have to worry about the gravy going lumpy. I developed this recipe almost 20 years ago using my homemade chicken broth or vegetable broth.

Steps:
- In a large frying pan, add broth, mushrooms and liquid and bring to boil.
- Add pepper, garlic powder, chicken soup base, soy sauce and Worcestershire sauce, stir to blend.
- While still at boil, add potato flakes stirring constantly until gravy thickens to a desired consistency.
- Use additional instant potato flakes if gravy is too thin.
- If gravy gets too thick, add small amounts of water.
- Adjust seasonings to taste.
- If you desire a brown color, add a few drops of (Bovril, beef concentrate).
- This gravy is excellent with roasts or chicken.

BASIC FAT FREE GRAVY
Several years ago, DH was in the hospital with a heart condition and was placed on a fat restricted diet. This recipe was provided by the hospital and I have used it since to make wonderful gravy, especially at Thanksgiving and Christmas. Browning the flour is the key to rich fat-free gravy

Steps:
- Heat a heavy skillet over low heat.
- Add flour and cook, stirring occasionally until light brown.
- Before using meat drippings, remove the fat by placing in a seperator or quick chill in freezer for about 30 to 60 minutes and skim visible fat from top.
- Put 1/2 of defatted drippings/broth in a jar, add the browned flour.
- Cover tightly and shake until mixture is smooth.
- Pour into a saucepan, add remaining liquid.
- Bring to a simmer and cook for a few minutes, stirring constantly until desired consistency.
- Season to taste with salt and pepper.
- If desired add a few drops of Kitchen Bouquet until desired color.
- Please Note: The cooking time allows for the quick chill method on the broth.
EASY HEALTHY CREAMY GRAVY(NO FAT)
Great, easy way to make a delicious gravy without the fat from drippings, add more cornstarch to cold milk depending on the thickness that you like it.

- Heat broth, worcestershire, and onion soup mix to a boil Mix 2 tbs cornstarch with cold milk and add to the boiling broth and stir well.
- Bring mixture to a boil and let boil for additional 1-2 minutes until it thickens.
- Season to taste with pepper and serve.
