This is an easy yet tasty recipe for zucchini, I make it often especially when I have my summer's crop ready, I find that a good quality Italian dressing will really make the difference, you can slice the zucchini in slices lengthwise also if desired, pick a large thick zucchini for this --- servings is only estimated.

1 large zucchini (washed, scrubbed and left unpeeled)
1/4 cup Italian salad dressing (can use a little more)
2 tablespoons olive oil
1 garlic clove, finely minced
fresh ground black pepper (to taste)
kosher salt (to taste) or table salt (to taste)

Steps:

  • Slice the zucchini into 1/2 to 3/4-inch slices (or as desired).
  • In a large bowl whisk together the salad dressing with olive oil and minced garlic.
  • Place the zucchini slices in the bowl and toss to coat.
  • Place on a plate, then sprinkle with freshly ground black pepper.
  • Allow to sit at room temperature for 10 minutes.
  • Place onto a hot grill.
  • Grill for about 4-5 minutes or until nice grill marks appear and the slices are slightly limp.
  • Remove to a plate then sprinkle lightly with kosher or table salt.

6 slices Italian bread (about 1-inch thick)
1 large garlic clove, slightly crushed, peeled
2 tablespoons olive oil
6 slices prosciutto or 6 slices smoked ham
8 ounces smoked mozzarella cheese, sliced 1/2-inch thick

Steps:

  • Heat broiler.
  • Arrange bread on baking sheet lined with aluminum foil. Toast 4-6 inches from heat, turning once, until light golden.
  • Rub one side of bread with garlic, then drizzle with oil. Arrange prosciutto slices on brad, trimming as needed. Top with cheese.
  • Broil or grill until cheese is bubbly and starting to brown, about 2 minutes. Transfer to serving platter and serve at once.

You may adjust all amounts to suit taste, I like to use seasoned salt for this but white salt will do fine -- to kick this up a notch, in a small saucepan or microwave melt 1/2 cup butter, mix in 1 tablespoon mustard, 1 teaspoon Worcestershire sauce, 1/4 teaspoon lemon pepper and 2-3 teaspoons horseradish, brush on the corn then wrap in foil and grill as stated :)

1/2 cup butter, very soft (can use less)
seasoning salt (to taste) or white salt (to taste)
fresh ground black pepper (optional and to taste)
6 ears fresh corn (shucked and silks removed)
6 pieces heavy-duty aluminum foil (each piece about 13x12-inches)

Steps:

  • Place each corn on top of one piece the heavy-duty foil.
  • Brush each ear generously with soft butter.
  • Season lightly with seasoned salt or white salt and black pepper.
  • Wrap the corn then seal the foil loosely but leave room for expansion, then cut a very small hole in the foil to allow steam to escape.
  • Grill over medium coals for about 15-20 minutes (the larger ears may take a little longer).
  • Unwrap very carefully and serve.
  • Delicious!

Makes a great Super Bowl or anytime sandwich, the amounts are only a guideline you may adjust to taste --- for ease I have listed store-bought garlic bread you may make your own using an unsliced loaf of French or Italian bread I make this using my recipe#105726

1 (15 ounce) store bought garlic bread (wrapped in foil)
4 ounces sliced deli turkey
4 ounces sliced deli all-beef salami
4 ounces sliced deli bologna
1 small green bell pepper, seeded and thinly sliced
1 small onion, thinly sliced
fresh ground black pepper
6 slices mozzarella cheese (large slices) or 6 slices provolone cheese (large slices)

Steps:

  • Heat oven to 400 degrees F.
  • Remove garlic bread from the foil wrapping and separate the halves.
  • On the bottom half layer turkey, bologna, salami, green pepper, onions.
  • Sprinkle black pepper over the onions and peppers, then place the cheese slices on top; top with remaining bread half.
  • Place the loaf back into the wrapping and seal (or you may re-wrap with a new large piece of foil).
  • Bake for 20 minutes or until hot and the cheese melts (if you want to crisp up the bread slightly then open up the foil wrapping then return to oven to toast the bread).
  • Using a serrated knife cut loaf into 6 pieces or as desired.

KITTENCAL'S MARINATED GRILLED FLANK STEAK

Plan ahead the steak needs to be marinated for 24 hours --- THIS IS IMPORTANT allow the beef to sit out on the counter until almost room temperature this is a most critical step to relaxe the meat fibers to create the most tender steak, this might take about 3 hours so start this well in advance ---remember to carve the cooked steak at a 35-45 degree angle to insure tender meat :)

2 lbs flank steaks
McCormick's Montreal Brand steak seasoning (to taste, or freshly ground coarse black pepper)
salt (to taste, I use seasoned salt if using black pepper)
2/3 cup vegetable oil
1/3 cup soy sauce
1/4 cup red wine vinegar
3 -4 tablespoons honey (can use 3-4 tablespoons real maple syrup, DO NOT substitute brown sugar)
3 tablespoons Worcestershire sauce
1/4 teaspoon ground ginger
2 -3 tablespoons coarsley chopped fresh garlic
2 green onions, coarsley chopped

Steps:

  • In a bowl combine all marinade ingredients until well combined.
  • Score the surface of the uncooked steak about 1/4-inch deep across the grain.
  • Place the marinade into a large heavy resealable plastic bag then add in the beef.
  • Seal bag and toss meat to coat with the marinade.
  • Place the bag into a large bowl.
  • Refrigerate for 24 hours (tossing the bag a couple of times during the refrigeration time).
  • Remove beef from the marinade and allow all the marinade to drip off scraping off the chopped garlic pieces and green onions from the meat.
  • Place on a large plate (I use a jelly-roll pan) and allow to sit out on the counter until almost room temperature, this might take about 3 or more hours.
  • Preheat grill to high heat.
  • Place on grill and season with steak seasoning or fresh ground black pepper and a little salt.
  • Grill the meat about 5-6 minutes per side for rare doneness (turning ONLY one time, do not overcook the meat as it will cook a little more after removing from the grill).
  • Remove to a plate/s and allow to sit for 10 minutes before slicing.
  • Slice the meat across the grain.

1 baguette
2 tablespoons olive oil
1 tablespoon sea salt
1 tablespoon fresh ground black pepper
1 tablespoon dried rosemary

Steps:

  • Cut the bread into about 12 slices, about 3/4 of an inch thick.
  • Lightly coat both sides of the bread with olive oil.
  • To your liking sprinkle sea salt, pepper and rosemary on one side of the bread slices. Lightly press down on the spices to help them stick, then flip the slices over and sprinkle the spices on the other side.
  • Grill over medium high heat about 5 minutes on each side, until the bread is toasty and light grill marks appear.
  • This bread is excellent for bruschetta or dips or just to eat plain! So good! :).

If you are in a hurry and want a great marinade for chicken this is it! marinade for about 6-8 hours, no longer than 8 hours as the vinegar will start to "cook" the chicken.... I find that Kraft Italian is the best for this and by the sounds of it this marinade works on beef too so you might want to give that a try!

1 (475 ml) bottle kraft Italian salad dressing (not low-fat)
1 tablespoon Dijon mustard (optional but good to add in I always do)
1/4 cup vegetable oil or 1/4 cup olive oil
3 tablespoons fresh minced garlic (or to taste, the more the better I say!)
1/2 teaspoon black pepper

Steps:

  • In a large bowl mix all ingredients together until well blended.
  • Add in chicken pieces, cover and refrigerate for 6-8 hours.
  • When ready to grill, remove the chicken from the marinade and pat dry with paper towels.

This marinade will produce the most tender and not to mention the best tasting steak and it's enough for up to four steaks about 1-1/2-inches thick --- just remember to bring the steaks to almost room temperature before grilling this will relax the meat fibers and make for a more tender juicy steak --- the amounts may be doubled but keep the garlic at the same amount, for best results it is recommended to not substitute any ingredients, do not add any salt to the marinade and do not salt the meat until ready to grill --- this marinade may be used for any cut of steaks.

2 tablespoons Worcestershire sauce

This recipe goes back years, the mayo is the secret to this recipe it's what locks in all the moisture in the fish, you can also use large thick salmon fillets in place of the steaks, I like to use Atlantic salmon fillets, but any salmon will do fine, this can easily be doubled, adjust the salt and pepper amount to taste, these also may be made on the grill placed on a pan

2 salmon steaks (about 1-inch thick)
2 tablespoons lemon juice (can reduce to 1 tablespoon)
1/4 cup melted butter
1/4 cup mayonnaise
1 -2 teaspoon Worcestershire sauce, to taste
1/4 teaspoon salt (or to taste, I use about 1/2 teaspoon seasoned salt)
1/2 teaspoon fresh ground black pepper (or to taste, I usually use lemon pepper)

1/3 cup olive oil (or use a mixture of half each melted butter and olive oil)
kosher salt
fresh ground black pepper
garlic powder (optional)

Steps:

  • Slice the French bread diagonally into about 3/4-inch slices or as thick as desired.
  • Brush both sides of each slice with olive oil or melted butter.
