Browning the rice gives this dish so much more extra flavor --- the garlic amount may be adjusted to taste.

2 cups long-grain white rice
3 tablespoons oil
1/4 cup finely chopped onion
3 large garlic cloves, finely chopped
3 cups hot water
1 cup hot chicken stock (or use 4 cups all water or broth)
1 teaspoon salt
fresh ground black pepper (to taste)

Steps:

  • Place the rice in colander and rinse thoroughly with cold water; drain well and set aside.
  • Heat the oil in a medium saucepan over medium heat.
  • Add in onion and cook for 1 minute.
  • Add in the garlic and cook until the garlic is just lightly browned (do not cook until dark browned).
  • Add in the rice and salt; cook stirring constantly until the rice begins to brown.
  • Slowly and carefully pour in the hot water then then broth stirring gently; bring to a simmer.
  • Reduce heat to low, cover and simmer until the water is absorbed (about 20-25 minutes).
  • Season with pepper if desired.

I tried this recipe a few years ago and remember that I really liked it. I'm not so good at rice...it tends to stick to the pot...but this one was easy and tasty.

2 tablespoons olive oil
2 cups short-grain brown rice, uncooked
6 garlic cloves, minced
1 1/2 cups water
2 (13 3/4 ounce) cans chicken broth
1/2 teaspoon salt
4 tablespoons green onions, thinly sliced

Steps:

  • Heat oil in a large skillet over medium-high heat.
  • Add rice and sauté for 1 minute.
  • Add garlic and sauté for 2 minutes.
  • Stir in water, broth and salt. Bring to a boil.
  • Cover, reduce heat and cook over medium-high heat for 45 minutes or until liquid is absorbed.
  • Spoon into a bowl and fluff with a fork. Top with green onions.

1 cup short grain brown rice or 1 cup white rice
2 cups chicken broth or 2 cups water
3 tablespoons butter
1 cup chopped yellow onion
3 garlic cloves, minced
1/2 cup broken pecans
2 green onions, chopped

Steps:

  • Using chicken broth [or water for Vegetarian], cook the rice according to the package directions.
  • About 15 minutes before the rice is ready, melt the butter in a skillet over medium low heat.
  • Add the chopped onion and saute', stirring often, until the onion is very soft and begins to color, about 10 minutes.
  • Stir in the minced garlic and the pecan meats; saute' over medium heat, stirring, until the nuts and onions are golden and the garlic is tender.
  • After done cooking, let the rice stand, covered, for 5 minutes; spoon rice into a bowl, spoon the onions and pecans on top, and fluff with a fork or a chopstick.
  • Garnish with the green onions.
  • Makes 4 servings.
  • This is also good with other types of nut, such as pine nuts, pistachios, and walnuts, and also made with a mixture of white and wild rice; sliced mushrooms are also a good addition.

If you love brown rice then try this recipe, the rice bakes out perfect all the time! if you are using a highly-salted broth then you may want to reduce the salt slightly, for extra heat add in some cayenne pepper --- I also like to add in a few small bay leaves for added flavor ---- the recipe may be reduced to half, for vegetarian use vegetable broth or water and olive oil in place of butter --- this may also be made without the onion and garlic, see note on bottom.

3 tablespoons butter or 3 tablespoons olive oil
3 cups long grain brown rice
1 medium onion, chopped
2 tablespoons fresh minced garlic (or to taste)
1 teaspoon fresh ground black pepper (or to taste)
5 cups low sodium chicken broth (heat until very hot) or 5 cups water (heat until very hot)
1 1/2 teaspoons seasoning salt (or use white salt)

Steps:

  • Set oven to 375 degrees F.
  • Set oven to second-lowest rack (or middle rack).
  • Grease a Dutch oven (use one that has a tight-fitting lid).

cold water
1/2 teaspoon salt

Steps:

  • *NOTE* for a firm rice (which makes the best Chinese fried rice) use 1-3/4 cups cold water, for medium use 2 cups water less 2 tablespoons, for soft use 2 cups water.
  • Place the uncooked rice in a fine strainer and rinse thoroughly under cold water; drain very well (this is an important step the rice must be rinsed firstly).
  • Place the rice into a 2-quart saucepan then spread out to cover the bottom.
  • Pour the water over the rice, then sprinkle the salt over the top (do not stir) bring to a full boil UNCOVERED on medium-high heat.

A long time family favorite! --- you can substitute the broccoli florets for one 6-ounce package frozen pea pods if desired --- make certain the the cooked ground beef is very well browned and well drained, also make certain to use only *cold* cooked rice, cooking time does not include cooking the rice --- you will love this! :)

1 lb ground beef (or use half ground beef and ground pork)
5 -6 large garlic cloves, chopped (not minced the more garlic, the better!)
1/4 teaspoon ginger powder or 1 teaspoon minced fresh ginger
2 tablespoons oil (not olive oil)
1 red bell pepper, cut into about 1/2-inch pieces
1 1/2 cups small broccoli florets
3 cups cold cooked white rice
3 -4 tablespoons soy sauce
2 teaspoons dark sesame oil
4 green onions, chopped
salt and pepper (optional)

Steps:

  • In a wok or a large skillet brown the ground beef with garlic and ginger over medium heat (about 10 minutes) breaking up into small pieces; drain the fat, then transfer to a bowl.
  • Heat 2 tablespoons oil in the same skillet over medium-high eat until hot.
  • Add in bell pepper and pea pods; cook for 3 minutes or until bell pepper is crisp-tender, stirring occasionally.
  • Stir in the cold cooked rice, soy sauce and sesame oil.
  • Return the cooked ground beef back to the skillet; toss to combine and heat though, then stir in the chopped green onions.
  • Season with salt and pepper and more soy sauce if desired.
